that as a former firefighter, -
0:31 - 0:34I can tell your that this is not
a very good smoke detector. -
0:34 - 0:36(Laughter)

0:36 - 0:40And in all seriousness,
when you go home tonight, -
0:40 - 0:43it'd be nice if everybody
would check their smoke detectors -
0:43 - 0:45to make sure that you have
a working smoke detector. -
0:45 - 0:49Working smoke detectors save lives.

0:53 - 0:57My name is Rip Esselstyn,
and I'm a former professional triathlete, -
0:58 - 1:02and a former firefighter
for the Austin Fire Department. -
1:02 - 1:07And for the last 23 years,
I have eaten a plant-based diet -
1:07 - 1:13to fuel me as an athlete,
as a firefighter, and as a man. -
1:14 - 1:18And I can not tell you over the years
how many people have told me, -
1:18 - 1:21"That is just way too insane.
-
1:21 - 1:24That's way too radical,
I could never do that." -
1:24 - 1:26What I want to talk to you today,
-
1:26 - 1:32is about why it's really the standard
American diet that is so radical, -
1:32 - 1:35and why eating a plant-based diet
-
1:35 - 1:38has a potential to be
absolutely revolutionary, -
1:38 - 1:43and why it can revolutionize your health,
and this whole country's health. -
1:45 - 1:48If you are eating
the Standard American Diet, -
1:48 - 1:52you'll more than likely die
the standard American death, -
1:52 - 1:56and acquire the standard
American diseases, okay? -
1:56 - 1:58Let's talk for a second
-
1:58 - 2:02about why the standard American diet
is such an abomination. -
2:04 - 2:07Sixty-three percent of America's calories
-
2:07 - 2:12are coming from refined
and processed foods -
2:12 - 2:15that are nothing but empty calories
-
2:15 - 2:21that do nothing to enhance
your health and only hurt it, 63%! -
2:22 - 2:26Twenty-five percent are coming
from animal-based products, -
2:26 - 2:29like meat, dairy, eggs,
-
2:29 - 2:34that have all the building
blocks that create disease. -
2:34 - 2:39We have animal fat, animal
cholesterol, and animal protein. -
2:40 - 2:45And we have 12% that are coming
from plant-based foods, -
2:45 - 2:49wonderful plant-based foods,
and believe it or not, -
2:49 - 2:53half of that 12% is coming
from french fries. -
2:53 - 2:55(Laughter)

2:55 - 2:58So really ...
-
3:00 - 3:03Really, only 6% of America's calories
-
3:03 - 3:08are coming from fruits, vegetables,
whole grains, beans, nuts and seeds. -
3:08 - 3:12So we really are a country
that is incredibly plant-weak, -
3:12 - 3:14and it is my mission, it is my goal,
-
3:14 - 3:19it is my crusade to get America
to become more plant-strong. -
3:19 - 3:21Okay?
-
3:24 - 3:29Last year, there were five diseases
-
3:29 - 3:32that were responsible for 75%
-
3:32 - 3:36of America's 2.3 trillion
dollar health care cost. -
3:38 - 3:42And every one of these diseases
-
3:42 - 3:46is either preventable, or reversible
by eating a plant-based diet. -
3:46 - 3:50And the research is irrefutable.
-
3:51 - 3:55Heart disease, number one killer
of Americans, this is radical. -
3:55 - 3:58What is radical is that
one out of two of you -
3:58 - 4:00will die of heart disease.
-
4:00 - 4:02Those are the facts.
-
4:02 - 4:05What is radical is that 50% of the time,
-
4:05 - 4:09the first sign
of a heart disease is what? -
4:09 - 4:11Instant death!
-
4:11 - 4:13It's true.
-
4:13 - 4:18What is radical
is that 50 million Americans -
4:18 - 4:20are taking a statin
cholesterol lowering drug, -
4:20 - 4:24and the only subgroup
that benefits marginally -
4:24 - 4:26are those people who've had
a prior heart attack. -
4:26 - 4:31For everybody else taking a statin,
the benefits are about 1%. -
4:32 - 4:35Big pharma has messed
with the numbers so much -
4:35 - 4:39that everybody thinks
they are being helped 30, 40, 50%. -
4:39 - 4:40The reality is 1%.
-
4:40 - 4:44You're just as well off
eating a placebo sugar pill. -
4:44 - 4:48What is radical is that bypass
surgery, open heart surgery, -
4:48 - 4:52where we basically cut our sternum,
-
4:52 - 4:57take a vein from our leg
and graft it around the blockage, -
4:57 - 5:00or when we put a balloon up in there,
it's called a angioplasty, -
5:00 - 5:02and spread it open,
-
5:02 - 5:04or when we put a metal cage
in there called a stent - -
5:04 - 5:07which President Clinton just had
another one - and open that up, -
5:07 - 5:10the thing about these
procedures, believe it or not, -
5:10 - 5:13is they do little
to nothing to extend life -
5:13 - 5:16or protect you from another heart attack.
-
5:16 - 5:21That is because these types
of blockages here are stable. -
5:21 - 5:24Believe it or not,
90% of the hearth attacks -
5:24 - 5:25occur when a little juvenile plaque,
-
5:25 - 5:28almost like a little pimple
on the inside of the artery, -
5:28 - 5:31ruptures, a blood clot ensues,
-
5:31 - 5:34and now there is no blood
getting to the heart. -
5:34 - 5:38So all these procedures, and all these
pills that Americans are taking -
5:38 - 5:40are really doing almost nothing
-
5:40 - 5:44to protect us from the
number one killer of Americans. -
5:44 - 5:49However, the research
is absolutely clear, -
5:49 - 5:52that if we decide to play big,
-
5:52 - 5:57if we decide to go plant-strong,
we can absolutely eradicate this disease. -
5:57 - 6:00The number one killer of Americans,
we can eradicate it. -
6:00 - 6:04And I'm intimately acquainted
with the 25 years of research -
6:04 - 6:07at the Cleveland Clinic,
-
6:07 - 6:11were they have shown that you can prevent,
halt and reverse heart disease, -
6:11 - 6:15because that researcher
has been my father. -
6:19 - 6:23So really, you can die with arteries
that look as clean as this one. -
6:23 - 6:25They don't have to get all blocked up.
-
6:26 - 6:30What is radical is that cancer
-
6:30 - 6:35is projected to surpass heart disease
as the number one killer of Americans. -
6:35 - 6:39What is radical to me, is that cancer ...
-
6:49 - 6:53... is that cancer is a war
that we've been fighting since 1972, -
6:53 - 6:56when Richard Nixon
declared war on cancer. -
6:56 - 6:58And to me, it's almost
like we've been pile driving -
6:58 - 7:02all this money, all this research
into trying to find an answer to cancer. -
7:02 - 7:06We've been walking for the cure,
running and shopping for the cure, -
7:06 - 7:08we've been flying for the cure,
-
7:08 - 7:11and the thing is
we know what the cure is. -
7:11 - 7:13It's about eating for the cure.
-
7:13 - 7:17If you eat for prevention,
you're not going to get -
7:17 - 7:20the two major cancers
that are bringing America down: -
7:20 - 7:23breast cancer and prostate cancer.
-
7:23 - 7:26And the research
is absolutely clear on this. -
7:26 - 7:29Dr Dean Ornish at the University
of California at San Francisco -
7:29 - 7:33has shown that you can slow down,
-
7:33 - 7:36stop and even reverse
prostate cancer and breast cancer. -
7:36 - 7:40And he has also shown that you can
actually change your gene expression, -
7:40 - 7:43that you can turn off
cancer promoting genes, -
7:43 - 7:46and you can turn on
cancer preventing ones. -
7:48 - 7:53What is radical is that type 2 diabetes,
-
7:53 - 7:58which used to be called adult-onset
diabetes, has become a pandemic. -
7:58 - 8:00One in three children
born after the year 2000 -
8:00 - 8:03will come down with type 2 diabetes,
-
8:03 - 8:07and this is a springboard
to heart disease, to amputation, -
8:07 - 8:11to kidney failure,
and a host of other ailments. -
8:12 - 8:17And once again, this is a disease
that never has to occur. -
8:17 - 8:21Dr Neal Barnard

8:21 - 8:24at George Washington University
-
8:24 - 8:30has shown that type 2 diabetes
can be reversed by a plant-strong diet. -
8:30 - 8:33Eat big, go plant-strong.
-
8:34 - 8:37And of course, everybody knows about
the obesity epidemic in America right now. -
8:38 - 8:42Almost 70% of America is overweight,
almost 34% of America is obese, -
8:42 - 8:45and this is a tragedy because once again,
-
8:45 - 8:50this is the springboard to heart disease,
to Alzheimer's, major cancers. -
8:52 - 8:57I joined the Austin Fire Department
in 1997, and I was convinced -
8:57 - 9:00that every shift, I'd be making
a big old burner like this one here. -
9:01 - 9:05The reality is, over 80% of our calls,
and this isn't just in Austin, -
9:05 - 9:08this is in San Francisco,
in Chicago, New York, -
9:08 - 9:10over 80% of our calls,
-
9:10 - 9:14we are responding to
and fighting Western disease. -
9:14 - 9:17So we get to see up-close and front
-
9:17 - 9:20the destruction that is being caused
by the fork and the knife, -
9:20 - 9:23and it is absolutely disheartening.
-
9:24 - 9:28Here is a quick video to show

eats for breakfast. -
9:31 - 9:34(Video) RE: Ah, ah, ah! And eggs.

9:34 - 9:36"And eggs, moon eggs!"

9:36 - 9:40RE: So, how are we having
the eggs today? Sunny-side up? -
9:40 - 9:44VV: No, I'm going to flip them,
I don't know, I guess I just fry them. -
9:44 - 9:46RE: And is this just like sausage?
-
9:46 - 9:48VV: Yes, pork sausage.
-
9:48 - 9:50RE: And then what do we got here?
-
9:50 - 9:52VV: Croissant rolls, baby!
-
9:52 - 9:54RE: Croissant rolls. And this?
-
9:54 - 9:56VV: Somebody made that
while we were gone. -
9:56 - 9:59RE: I got you. Alright.

10:00 - 10:03And here's a little fun.
-
10:03 - 10:06We got chips, oatmeal creme pies.
-
10:07 - 10:11We got granola bars, Nutty bars.
-
10:12 - 10:19We got Big Texas,
Skittles, Starburst, M&M's. -
10:20 - 10:23We got Oreos,
-
10:23 - 10:28and this is Butter Lovers popcorn.
-
10:30 - 10:33We got Monster Drinks down here,
-
10:33 - 10:36and then, what do we got? Oh yeah!
-
10:37 - 10:39(On stage): You get the picture!
-
10:39 - 10:41And it gets worse for lunch
and even worse for dinner. -
10:41 - 10:44And it's probably very similar
in every house in America. -
10:44 - 10:47This is Station 2, it's a hop skip
and a jump from here. -
10:47 - 10:50This is were I spent the last eight years
of my career as a firefighter, -
10:50 - 10:54and we are an island of health
in a sea of fast food restaurants. -
10:54 - 10:59We've got McDonald's, Wendy's,
Papa John's, Domino's and Pizza Hut. -
10:59 - 11:01Right next door, we used
to have a Burt's Barbecue, -
11:01 - 11:04It burned down about three
years ago, and they are blaming -
11:04 - 11:06the vegetarian firehouse
for not putting it out. -
11:06 - 11:08(Laughter)
-
11:08 - 11:13But we were not
always an island of health. -
11:13 - 11:19What happened is - those
numbers are a little funny - -
11:19 - 11:22in 2003, we had a bet to see
who had the lowest cholesterol. -
11:22 - 11:29The results came back, and J.R.'s
cholesterol was 344 at the age of 33. -
11:29 - 11:33and so, in an act of solidarity
to save J.R.'s life, -
11:33 - 11:37we as a group, started eating
plant-strong the very next shift. -
11:37 - 11:40Within a month, he had
his cholesterol rechecked, -
11:40 - 11:44and it had gone from 344 to 196.
-
11:44 - 11:47We got a flood of media attention.
-
11:47 - 11:51The word got out about
what we were doing at Station 2, -
11:51 - 11:54the charming dissonance
of a bunch of Texas male firefighters -
11:54 - 11:57eating this plant-based vegetarian diet.
-
11:57 - 12:03... New York Times, NPR,
Austin American Statesman ... -
12:04 - 12:07So, I got solicited
by literary agents to write a book, -
12:07 - 12:09and all of the sudden
I realized that as a firefighter, -
12:09 - 12:12not a doctor, not a nutritionist,
but as a firefighter, -
12:12 - 12:15I could reach a segment of America
-
12:15 - 12:19that would never otherwise hear
this message about eating more plants. -
12:19 - 12:24So I almost felt an obligation
to go ahead and write this book, -
12:24 - 12:30and teach people the absolute,
undeniable connection -
12:30 - 12:32between what we put in our mouths,
-
12:32 - 12:36and your ability to have
a perfect weight, ideal health, -
12:36 - 12:40and be bullet proof
to chronic Western disease. -
12:42 - 12:45And really, it's all...
-
12:50 - 12:53Really, it's all about the food.
-
12:53 - 12:56It's all about the food,
it's all about the food. -
12:57 - 12:59Here for example
-
13:01 - 13:03is red meat.
-
13:03 - 13:07Just about everybody knows red meat
probably isn't the best thing for them. -
13:07 - 13:13But how many people know that chicken
has just as much cholesterol as red meat, -
13:13 - 13:16and it also has acidic
producing animal protein, -
13:16 - 13:19which leaches calcium from the bones,
-
13:19 - 13:23is an incredible tumor and cancer
promoter and inflames the arteries. -
13:23 - 13:24And what about fish?
-
13:24 - 13:27Everybody thinks that fish
is healthy these days, right? -
13:27 - 13:28Omega-3 fatty acids!
-
13:28 - 13:31In reality, if you get a piece of fish,
-
13:31 - 13:34that is not tainted with mercury
and PCPs and dioxins, -
13:34 - 13:37you still get a piece of flesh
which has the animal protein, -
13:37 - 13:40the animal cholesterol,
and the animal fat. -
13:40 - 13:42And then eggs, what about eggs?
-
13:42 - 13:45There're only two things wrong with eggs,
the yolk and the white. -
13:45 - 13:46(Laughter)
-
13:46 - 13:49The yolk has over 200 mg
of dietary cholesterol, -
13:49 - 13:53and the white is a concentrated
form of what? Animal protein. -
13:54 - 14:00And dairy is just milk, flesh
in a liquid, cream or solid form. -
14:00 - 14:05It has the same amounts of animal protein,
animal cholesterol, and animal fat. -
14:05 - 14:09Now these foods here, these are the ones
that are going to give us back our lives. -
14:09 - 14:12The fruits, the vegetables,
the whole grains, -
14:12 - 14:14the beans, they have
all the phytochemicals, -
14:14 - 14:19all the antioxidants,
over 100,000 micro-nutrients -
14:19 - 14:21that are just jonesing
to go to work for you -
14:21 - 14:26and protect you from heart disease,
diabetes, obesity, Alzheimer's, -
14:27 - 14:29all these diseases.

14:31 - 14:35And before I forget, what about olive oil?
-
14:35 - 14:37It's heart healthy, right?
-
14:38 - 14:39No, it's not.
-
14:39 - 14:43Extracted oils are the most concentrated
source of calories on the planet, -
14:43 - 14:46at 120 calories per tablespoon,
-
14:46 - 14:50and they have more empty calories
than either white sugar, or white flour. -
14:50 - 14:56And as you'll see here,
it's 15% artery clogging saturated fat, -
14:56 - 15:02and there's absolutely
zero nutrients to speak of. -
15:02 - 15:04And that's olive oil, okay?
-
15:07 - 15:13Now, the results can be revolutionary
when you eat plant-strong. -
15:13 - 15:17And these are just some of the results
that can revolutionize your health. -
15:18 - 15:21This individual here as you can see,
16 pounds in 28 days, -
15:21 - 15:25cholesterol dropped 45%,
-
15:25 - 15:30and his LDL which is
the lethal, dropped 55%. -
15:31 - 15:35This gentlemen here looks like
he's lost 15 years of his life, -
15:35 - 15:37he looks 15 years younger.

15:38 - 15:42The slide is a little cut off at the top,
but it's pretty amazing what he did. -
15:42 - 15:43He also dropped his triglycerides,
-
15:43 - 15:48which is the amount of fat
in your blood, by threefold. -
15:48 - 15:52And then Tim here
lost 33 pounds in 28 days. -
15:52 - 15:55His cholesterol got down to 93,
-
15:55 - 15:58basically the equivalent
of a rural Chinese person. -
15:58 - 15:59(Laughter)

16:00 - 16:05And Tim wrote in one of his food logs,
-
16:05 - 16:10"For dessert, watermelon," and then
in parenthesis "the whole thing." -
16:10 - 16:11(Laughter)

16:11 - 16:13And the beautiful thing
is that by eating foods -
16:13 - 16:16that are low in calories
and high in nutrients, -
16:16 - 16:18you get to eat all you want,
as opposed to foods -
16:18 - 16:21that are high in calories
and low in nutrients. -
16:21 - 16:24This is one of my heroes,
Sir Winston Churchill, -
16:24 - 16:26and he has a quote
that I love, and it goes, -
16:26 - 16:28"America always gets it right,
-
16:28 - 16:30but only after they have
tried everything else." -
16:30 - 16:32(Laughter)

16:32 - 16:35I think it's fare to say
that we as a country -
16:35 - 16:39have tried everything else, and now
it's time to get it right, alright? -
16:39 - 16:41It's time to play big.

16:41 - 16:44We all have a skin in this game.
-
16:44 - 16:48And the answer to this
healthcare crisis that we have -
16:48 - 16:50is not about a pill,
not about a procedure, -
16:50 - 16:54not about more legislation,
not about rejiggering the numbers. -
16:54 - 16:58It's about everybody stepping up
and looking in the mirror, -
16:58 - 17:00and deepening their personal
commitment to their health. -
17:00 - 17:04And we can turn this ship around,
we absolutely can. -
17:04 - 17:07And that right there is my TED wish!
