    My name is Rip Esselstyn,
    and I'm a former professional triathlete,

    and a former firefighter
    for the Austin Fire Department.

    And for the last 23 years,
    I have eaten a plant-based diet
  • 1:07 - 1:13
    to fuel me as an athlete,
    as a firefighter, and as a man.

    And I can not tell you over the years
    how many people have told me,
  • 1:18 - 1:21
    "That is just way too insane.
  • 1:21 - 1:24
    That's way too radical,
    I could never do that."
  • 1:24 - 1:26
    What I want to talk to you today,
  • 1:26 - 1:32
    is about why it's really the standard
    American diet that is so radical,
  • 1:32 - 1:35
    and why eating a plant-based diet
  • 1:35 - 1:38
    has a potential to be
    absolutely revolutionary,
  • 1:38 - 1:43
    and why it can revolutionize your health,
    and this whole country's health.
  • 1:45 - 1:48
    If you are eating
    the Standard American Diet,
  • 1:48 - 1:52
    you'll more than likely die
    the standard American death,
  • 1:52 - 1:56
    and acquire the standard
    American diseases, okay?
  • 1:56 - 1:58
    Let's talk for a second
  • 1:58 - 2:02
    about why the standard American diet
    is such an abomination.
  • 2:04 - 2:07
    Sixty-three percent of America's calories
  • 2:07 - 2:12
    are coming from refined
    and processed foods
  • 2:12 - 2:15
    that are nothing but empty calories
  • 2:15 - 2:21
    that do nothing to enhance
    your health and only hurt it, 63%!
  • 2:22 - 2:26
    Twenty-five percent are coming
    from animal-based products,
  • 2:26 - 2:29
    like meat, dairy, eggs,
  • 2:29 - 2:34
    that have all the building
    blocks that create disease.
  • 2:34 - 2:39
    We have animal fat, animal
    cholesterol, and animal protein.
  • 2:40 - 2:45
    And we have 12% that are coming
    from plant-based foods,
  • 2:45 - 2:49
    wonderful plant-based foods,
    and believe it or not,

    half of that 12% is coming
    from french fries.

    So really ...

    Really, only 6% of America's calories
  • 3:03 - 3:08
    are coming from fruits, vegetables,
    whole grains, beans, nuts and seeds.

    So we really are a country
    that is incredibly plant-weak,

    and it is my mission, it is my goal,
  • 3:14 - 3:19
    it is my crusade to get America
    to become more plant-strong.

    Okay?

    Last year, there were five diseases
  • 3:29 - 3:32
    that were responsible for 75%
  • 3:32 - 3:36
    of America's 2.3 trillion
    dollar health care cost.
  • 3:38 - 3:42
    And every one of these diseases
  • 3:42 - 3:46
    is either preventable, or reversible
    by eating a plant-based diet.
  • 3:46 - 3:50
    And the research is irrefutable.
  • 3:51 - 3:55
    Heart disease, number one killer
    of Americans, this is radical.
  • 3:55 - 3:58
    What is radical is that
    one out of two of you
  • 3:58 - 4:00
    will die of heart disease.
  • 4:00 - 4:02
    Those are the facts.

    What is radical is that 50% of the time,
  • 4:05 - 4:09
    the first sign
    of a heart disease is what?
  • 4:09 - 4:11
    Instant death!
  • 4:11 - 4:13
    It's true.
  • 4:13 - 4:18
    What is radical
    is that 50 million Americans
  • 4:18 - 4:20
    are taking a statin
    cholesterol lowering drug,
  • 4:20 - 4:24
    and the only subgroup
    that benefits marginally
  • 4:24 - 4:26
    are those people who've had
    a prior heart attack.
  • 4:26 - 4:31
    For everybody else taking a statin,
    the benefits are about 1%.
  • 4:32 - 4:35
    Big pharma has messed
    with the numbers so much
  • 4:35 - 4:39
    that everybody thinks
    they are being helped 30, 40, 50%.
  • 4:39 - 4:40
    The reality is 1%.
  • 4:40 - 4:44
    You're just as well off
    eating a placebo sugar pill.
  • 4:44 - 4:48
    What is radical is that bypass
    surgery, open heart surgery,
  • 4:48 - 4:52
    where we basically cut our sternum,
  • 4:52 - 4:57
    take a vein from our leg
    and craft it around the blockage,
  • 4:57 - 5:00
    or when we put a balloon up in there,
    it's called a angioplasty,
  • 5:00 - 5:02
    and spread it open,
  • 5:02 - 5:04
    or when we put a metal cage
    in there called a stent -
  • 5:04 - 5:07
    which President Clinton just had
    another one - and open that up,
  • 5:07 - 5:10
    the thing about these
    procedures, believe it or not,
  • 5:10 - 5:13
    is they do little
    to nothing to extend life
  • 5:13 - 5:16
    or protect you from another heart attack.
  • 5:16 - 5:21
    That is because these types
    of blockages here are stable.
  • 5:21 - 5:24
    Believe it or not,
    90% of the hearth attacks
  • 5:24 - 5:25
    occur when a little juvenile plaque,
  • 5:25 - 5:28
    almost like a little pimple
    on the inside of the artery,
  • 5:28 - 5:31
    ruptures, a blood clot ensues,
  • 5:31 - 5:34
    and now there is no blood
    getting to the heart.
  • 5:34 - 5:38
    So all these procedures, and all these
    pills that Americans are taking
  • 5:38 - 5:40
    are really doing almost nothing
  • 5:40 - 5:44
    to protect us from the
    number one killer of Americans.
  • 5:44 - 5:49
    However, the research
    is absolutely clear,
  • 5:49 - 5:52
    that if we decide to play big,
  • 5:52 - 5:57
    if we decide to go plant-strong,
    we can absolutely eradicate this disease.

    The number one killer of Americans,
    we can eradicate it.

    And I'm intimately acquainted
    with the 25 years of research
  • 6:04 - 6:07
    at the Cleveland Clinic,
  • 6:07 - 6:11
    were they have shown that you can prevent,
    halt and reverse heart disease,
  • 6:11 - 6:15
    because that researcher
    has been my father.
  • 6:19 - 6:23
    So really, you can die with arteries
    that look as clean as this one.

    They don't have to get all blocked up.
  • 6:26 - 6:30
    What is radical is that cancer
  • 6:30 - 6:35
    is projected to surpass heart disease
    as the number one killer of Americans.

    What is radical to me, is that cancer ...

    ... is that cancer is a war
    that we've been fighting since 1972,
  • 6:53 - 6:56
    when Richard Nixon
    declared war on cancer.
  • 6:56 - 6:58
    And to me, it's almost
    like we've been pile driving
  • 6:58 - 7:02
    all this money, all this research
    into trying to find an answer to cancer.

    We've been walking for the cure,
    running and shopping for the cure,
  • 7:06 - 7:08
    we've been flying for the cure,
  • 7:08 - 7:11
    and the thing is,
    we know what the cure is.
  • 7:11 - 7:13
    It's about eating for the cure.
  • 7:13 - 7:17
    If you eat for prevention,
    you're not going to get
  • 7:17 - 7:20
    the two major cancers
    that are bringing America down:
  • 7:20 - 7:23
    breast cancer and prostate cancer.
  • 7:23 - 7:26
    And the research
    is absolutely clear on this.
  • 7:26 - 7:29
    Dr Dean Ornish at the University
    of California at San Francisco
  • 7:29 - 7:33
    has shown that you can slow down,
  • 7:33 - 7:36
    stop and even reverse
    prostate cancer and breast cancer.
  • 7:36 - 7:40
    And he has also shown that you can
    actually change your gene expression,
  • 7:40 - 7:43
    that you can turn off
    cancer promoting genes,
  • 7:43 - 7:46
    and you can turn on
    cancer preventing ones.

    What is radical is that type 2 diabetes,
  • 7:53 - 7:58
    which used to be called adult-onset
    diabetes, has become a pandemic.

    One in three children
    born after the year 2000
  • 8:00 - 8:03
    will come down with type 2 diabetes,
  • 8:03 - 8:07
    and this is a springboard
    to heart disease, to amputation,
  • 8:07 - 8:11
    to kidney failure,
    and a host of other ailments.

    And once again, this is a disease
    that never has to occur.

    at George Washington University

    has shown that type 2 diabetes
    can be reversed by a plant-strong diet.

    Eat big, go plant-strong.

    And of course, everybody knows about
    the obesity epidemic in America right now.

    Almost 70% of America is overweight,
    almost 34% of America is obese,

    and this is a tragedy because once again,

    this is the springboard to heart disease,
    to Alzheimer's, major cancers.

    I joined the Austin Fire Department
    in 1997, and I was convinced

    that every shift, I'd be making
    a big old burner like this one here.

    The reality is, over 80% of our calls,
    and this isn't just in Austin,
  • 9:05 - 9:08
    this is in San Francisco,
    in Chicago, New York;

    over 80% of our calls,
  • 9:10 - 9:14
    we are responding to
    and fighting Western disease.
  • 9:14 - 9:17
    So we get to see up-close and front
  • 9:17 - 9:20
    the destruction that is being caused
    by the fork and the knife,
  • 9:20 - 9:23
    and it is absolutely disheartening.

    And here's a little fun we got.

    We got chips, oatmeal creme pies.

    We got granola bars, Nutty bars.

    We got Big Texas,
    Skittles, Starburst, M&M's.

    We got Oreos,
  • 10:23 - 10:28
    and this is Butter Lovers popcorn.

    We got Monster Drinks down here,
  • 10:33 - 10:36
    and then, what do we got? Oh yeah!

    And it gets worse for lunch
    and even worse for dinner.

    And it's probably very similar
    in every house in America.

    This is Station 2, it's a hop skip
    and a jump from here.

    This is were I spent the last eight years
    of my career as a firefighter,
  • 10:50 - 10:54
    and we are an island of health
    in a sea of fast food restaurants.
  • 10:54 - 10:59
    We've got McDonald's, Wendy's,
    Papa John's, Domino's and Pizza Hut.
  • 10:59 - 11:01
    Right next door, we used
    to have a Burt's Barbecue,
  • 11:01 - 11:04
    It burned down about three
    years ago, and they are blaming
  • 11:04 - 11:06
    the vegetarian firehouse
    for not putting it out.
  • 11:06 - 11:08
    (Laughter)
  • 11:08 - 11:13
    But we were not
    always an island of health.
  • 11:13 - 11:19
    What happened is - those
    numbers are a little funny -
  • 11:19 - 11:22
    in 2003, we had a bet to see
    who had the lowest cholesterol.
  • 11:22 - 11:29
    The results came back, and J.R.'s
    cholesterol was 344 at the age of 33.
  • 11:29 - 11:33
    and so, in an act of solidarity
    to save J.R.'s life,
  • 11:33 - 11:37
    we as a group, started eating
    plant-strong the very next shift.
  • 11:37 - 11:40
    Within a month, he had
    his cholesterol rechecked,
  • 11:40 - 11:44
    and it had gone from 344 to 196.
  • 11:44 - 11:47
    We got a flood of media attention.
  • 11:47 - 11:51
    The word got out about
    what we were doing at Station 2,
  • 11:51 - 11:54
    the charming dissonance
    of a bunch of Texas male firefighters
  • 11:54 - 11:57
    eating this plant-based vegetarian diet.
  • 11:57 - 12:03
    ... New York Times, NPR,
    Austin American Statesman ...
  • 12:04 - 12:07
    So, I got solicited
    by literary agents to write a book,
  • 12:07 - 12:09
    and all of the sudden
    I realized that as a firefighter,
  • 12:09 - 12:12
    not a doctor, not a nutritionist,
    but as a firefighter,
  • 12:12 - 12:15
    I could reach a segment of America
  • 12:15 - 12:19
    that would never otherwise hear
    this message about eating more plants.
  • 12:19 - 12:24
    So I almost felt an obligation
    to go ahead and write this book,
  • 12:24 - 12:30
    and teach people the absolute,
    undeniable connection
  • 12:30 - 12:32
    between what we put in our mouths,
  • 12:32 - 12:36
    and your ability to have
    a perfect weight, ideal health,
  • 12:36 - 12:40
    and be bullet proof
    to chronic Western disease.
  • 12:42 - 12:45
    And really, it's all...
  • 12:50 - 12:53
    Really, it's all about the food.
  • 12:53 - 12:56
    It's all about the food,
    it's all about the food.

    Here for example
  • 13:01 - 13:03
    is red meat.
  • 13:03 - 13:07
    Just about everybody knows red meat
    probably isn't the best thing for them.

    But how many people know that chicken
    has just as much cholesterol as red meat,
  • 13:13 - 13:16
    and it also has acidic
    producing animal protein,
  • 13:16 - 13:19
    which leaches calcium from the bones,
  • 13:19 - 13:23
    is an incredible tumor and cancer
    promoter and inflames the arteries.

    And what about fish?
  • 13:24 - 13:27
    Everybody thinks that fish
    is healthy these days, right?
  • 13:27 - 13:28
    Omega-3 fatty acids!
  • 13:28 - 13:31
    In reality, if you get a piece of fish,
  • 13:31 - 13:34
    that is not tainted with mercury
    and PCPs and dioxins,
  • 13:34 - 13:37
    you still get a piece of flesh
    which has the animal protein,
  • 13:37 - 13:40
    the animal cholesterol,
    and the animal fat.
  • 13:40 - 13:42
    And then eggs, what about eggs?
  • 13:42 - 13:45
    There're only two things wrong with eggs,
    the yolk and the white.
  • 13:45 - 13:46

    The yolk has over 200 mg
    of dietary cholesterol,
  • 13:49 - 13:53
    and the white is a concentrated
    form of what? Animal protein.
  • 13:54 - 14:00
    And dairy is just milk, flesh
    in a liquid, cream or solid form.

    It has the same amounts of animal protein,
    animal cholesterol, and animal fat.
  • 14:05 - 14:09
    Now these foods here, these are the ones
    that are going to give us back our lives.

    The fruits, the vegetables,
    the whole grains,
  • 14:12 - 14:14
    the beans, they have
    all the phytochemicals,
  • 14:14 - 14:19
    all the antioxidants,
    over 100,000 micro-nutrients
  • 14:19 - 14:21
    that are just jonesing
    to go to work for you
  • 14:21 - 14:26
    and protect you from heart disease,
    diabetes, obesity, Alzheimer's,
  • 14:27 - 14:29
    all these diseases.
  • 14:31 - 14:35
    And before I forget, what about olive oil?
  • 14:35 - 14:37
    It's heart healthy, right?
  • 14:38 - 14:39
    No, it's not.
  • 14:39 - 14:43
    Extracted oils are the most concentrated
    source of calories on the planet,
  • 14:43 - 14:46
    at 120 calories per tablespoon,
  • 14:46 - 14:50
    and they have more empty calories
    than either white sugar, or white flour.
  • 14:50 - 14:56
    And as you'll see here,
    it's 15% artery clogging saturated fat,
  • 14:56 - 15:02
    and there's absolutely
    zero nutrients to speak of.
  • 15:02 - 15:04
    And that's olive oil, okay?
  • 15:07 - 15:13
    Now, the results can be revolutionary
    when you eat plant-strong.

    And these are just some of the results
    that can revolutionize your health.

    This individual here as you can see,
    16 pounds in 28 days,

    cholesterol dropped 45%,

    and his LDL which is
    the lethal, dropped 55%.

    This gentlemen here looks like
    he's lost 15 years of his life,

    And the beautiful thing
    is that by eating foods

    that are low in calories
    and high in nutrients,

    you get to eat all you want,
    as opposed to foods

    that are high in calories
    and low in nutrients.

    This is one of my heroes,
    Sir Winston Churchill,

    and he has a quote
    that I love, and it goes,

    "America always gets it right,
  • 16:28 - 16:30
    but only after they have
    tried everything else."

    I think it's fare to say
    that we as a country
  • 16:35 - 16:39
    have tried everything else, and now
    it's time to get it right, alright?

    It's time to play big.

    We all have a skin in this game.

    And the answer to this
    healthcare crisis that we have
  • 16:48 - 16:50
    is not about a pill,
    not about a procedure,
  • 16:50 - 16:54
    not about more legislation,
    not about rejiggering the numbers.
  • 16:54 - 16:58
    It's about everybody stepping up
    and looking in the mirror,
  • 16:58 - 17:00
    and deepening their personal
    commitment to their health.

    And we can turn this ship around,
    we absolutely can.
