Food as healing | Aliki Panopoulou | TedxAcademy
-
0:14 - 0:15Good evening.
-
0:15 - 0:17My name is Aliki Panopoulou,
-
0:17 - 0:21and today I will talk to you
about weight loss. -
0:21 - 0:25I wish I could use three sentences
-
0:25 - 0:27so that you understand everything,
-
0:27 - 0:28to have said it all.
-
0:29 - 0:30But this is impossible,
-
0:30 - 0:34just as it is impossible to lose weight
-
0:34 - 0:36without regaining it back.
-
0:37 - 0:41I am in need of my extra weight -
that is the reason I gain weight. -
0:41 - 0:43I am lucky that I gain weight.
-
0:43 - 0:48If I didn't gain weight, I could get
seriously sick or I could suffocate. -
0:49 - 0:54My weight is an essential,
necessary protection. -
0:54 - 0:57That is the reason why,
even if I lose weight, -
0:57 - 1:00I want to protect myself again,
and I regain weight. -
1:00 - 1:03All this sounds too weird,
-
1:03 - 1:05paranoid, irrational.
-
1:05 - 1:07It's irrational.
-
1:07 - 1:11Weight loss is not a rational treatment,
-
1:11 - 1:13it is strictly emotional.
-
1:13 - 1:18Obesity is a psychosomatic disease,
-
1:18 - 1:20meaning that an obese person,
-
1:20 - 1:23a person who has weight disorder,
-
1:23 - 1:26cannot recognise
what they really feel, their emotions. -
1:26 - 1:28And it's not their fault.
-
1:29 - 1:33They cannot express
and verbalise their feelings, -
1:33 - 1:36so they express themselves
through physical symptoms. -
1:36 - 1:37I have been active professionally
-
1:37 - 1:40in the weight loss industry for 30 years
-
1:40 - 1:45and, sadly, I see the same story
happening over and over again. -
1:45 - 1:51The truth is that during
the first 10 years of my career, -
1:51 - 1:53it was exactly the same story.
-
1:53 - 1:57What is this story
that I will narrate shortly? -
1:57 - 1:59Because it's a short one.
-
1:59 - 2:02Weight loss usually lasts
for three months. -
2:02 - 2:05If someone wants to lose weight,
they visit a nutritionist, -
2:05 - 2:08and they ask to lose weight
in a short period of time. -
2:08 - 2:11The nutritionist takes body measurements,
-
2:11 - 2:14advises them about the standard levels
of the body mass index, -
2:14 - 2:17suggests that they have
to start working out -
2:17 - 2:20because diet together with workout
have great results, -
2:20 - 2:23advises that they are not
supposed to eat after 8 pm, -
2:23 - 2:26that they are not supposed
to eat sugar and saturated fat, -
2:26 - 2:31they have to have at least
three to five meals a day. -
2:31 - 2:36They're given a list
of healthy and unhealthy foods, -
2:36 - 2:40what the effects are of vitamin A,
vitamin B complex, vitamin D, -
2:40 - 2:44and they're recommended a diet,
usually in the following form. -
2:44 - 2:47I will outline it for you.
-
2:47 - 2:51Morning: 30 grams of cornflakes,
a cup of milk and a piece of fruit, -
2:51 - 2:55or toast consisting of
two slices of toasted bread, -
2:55 - 2:5930 grams each,
and 30 grams of turkey ham, -
2:59 - 3:0230 grams of low-fat cheese
and a glass of orange juice. -
3:02 - 3:0710 am: a low-fat yoghurt or a cereal bar.
-
3:07 - 3:12Noon: 90 grams or 120 grams of fish,
-
3:12 - 3:14or chicken without the skin,
-
3:14 - 3:18and two cups of vegetables
with two teaspoons of olive oil. -
3:18 - 3:22Afternoon: 4–6 medium-sized strawberries,
-
3:22 - 3:25a peach of this size,
-
3:25 - 3:28of this diameter and thickness.
-
3:28 - 3:34Evening: 60 grams of low-fat white cheese
or two spoons of cottage cheese -
3:34 - 3:38with two rye Melba toasts
or 30 grams of rye bread -
3:38 - 3:41and two cups of vegetables
with two teaspoons of olive oil. -
3:42 - 3:46So, the obese person takes the diet,
-
3:46 - 3:49the list with all the information
about the vitamins, -
3:49 - 3:51the healthy and unhealthy foods,
-
3:51 - 3:56and they go home, determined
to receive their punishment. -
3:57 - 4:01They try, struggle, count the grams,
-
4:01 - 4:04they're not supposed to be hungry,
they're not supposed to crave, -
4:04 - 4:08they must count calories,
must not eat after 8 pm, -
4:08 - 4:14and then comes that very moment
when they behave like a maniac -
4:14 - 4:19with that uncontrollable urge
to send the cauliflower to hell, -
4:19 - 4:22along with the broccoli,
the green vegetables, -
4:22 - 4:25the working out, and the diet,
-
4:25 - 4:27and they eat Nutella with a spoon...
-
4:27 - 4:29(Laughter)
-
4:29 - 4:31...and then pizza...
-
4:31 - 4:32(Applause)
-
4:32 - 4:33...and then...
-
4:33 - 4:35(Applause)
-
4:35 - 4:37...bread and cheese.
-
4:37 - 4:38And the pralines,
-
4:38 - 4:40and then olives,
-
4:40 - 4:41and then?
-
4:41 - 4:44Then, they go back
to the nutritionist, terrified, -
4:44 - 4:46full of guilt and qualms
-
4:46 - 4:48and self-accusation.
-
4:48 - 4:52"I am incapable, once again
I failed, I did nothing, -
4:52 - 4:55I don't show self-discipline,
will and restraint." -
4:55 - 4:56And then?
-
4:56 - 4:58Then, detox.
-
4:59 - 5:01Just three yoghurts for the whole day.
-
5:01 - 5:05Or only fruit juices.
-
5:05 - 5:11Or even less food, 80 grams,
because it's all a balance of calories. -
5:13 - 5:14And then?
-
5:14 - 5:16Then, a life full of diets.
-
5:16 - 5:18I lose weight, I regain it.
-
5:18 - 5:24bulimia, diet, weight loss,
weight gain, bulimia, disappointment. -
5:25 - 5:32This was exactly what was happening
in my office for the first 10–12 years. -
5:32 - 5:36The scene was more or less like this:
on the one side the obese person, -
5:36 - 5:39a maniac on food, polyphagia and diets.
-
5:40 - 5:43On the other side was me,
and I had also become a maniac. -
5:44 - 5:49I was obsessively searching for the reason
why people don't lose weight -
5:49 - 5:51and don't keep their weight stable.
-
5:51 - 5:54I could perceive why they gained weight.
-
5:54 - 6:01On the one hand, the obese person
had low self-esteem on their competency -
6:01 - 6:05to keep their weight stable,
and the diet, since they messed it up. -
6:05 - 6:07On the other hand, there was me,
-
6:07 - 6:11and I also had professional
low self-esteem, -
6:11 - 6:14since I always felt inefficient.
-
6:15 - 6:20No matter what we were doing,
no matter the diet I was giving them, -
6:20 - 6:23we always reached the very same result.
-
6:23 - 6:25It was like beating the air.
-
6:27 - 6:32Finally, watching this situation,
-
6:32 - 6:38I decided that since we were
always facing a barrier, -
6:38 - 6:42and this barrier was called bulimia -
-
6:42 - 6:45which made them gain weight,
mess up with their diet, -
6:45 - 6:51and emphasise their difficulty
to stick to their diet - -
6:51 - 6:54that I'd focus on bulimia.
-
6:54 - 6:58Luckily, I was passionate about this job,
-
6:58 - 7:01and I had many books to study from.
-
7:01 - 7:04There was a lot of knowledge to acquire.
-
7:05 - 7:09So, I dared to reverse the rules.
-
7:09 - 7:11I reversed everything.
-
7:11 - 7:14I worked with completely opposite rules.
-
7:14 - 7:19The first reversal I made
was to allow bulimia. -
7:19 - 7:22I didn't just allow and legalise it,
-
7:22 - 7:24but I even encouraged them
-
7:24 - 7:28to continue their bulimia
during the weight-loss period. -
7:28 - 7:30They were saying, "I must not eat."
-
7:30 - 7:32I was responding, "Eat."
-
7:32 - 7:35(Laughter)
-
7:35 - 7:40I understood that bulimia
was the only truth -
7:40 - 7:45which could help a person
who had a weight disorder. -
7:45 - 7:48It was their first emotion.
-
7:48 - 7:49And here is why:
-
7:49 - 7:54When a baby is born,
it comes into the world frightened; -
7:55 - 7:56it is afraid, it cries.
-
7:56 - 7:58It is hungry, and it cries,
-
7:58 - 8:01and its mother cradles it
-
8:01 - 8:03to feed it.
-
8:03 - 8:05And then, the milk flows.
-
8:05 - 8:11At that point, the first connection
between food and emotion is created. -
8:11 - 8:14Because the baby doesn't take merely milk.
-
8:14 - 8:19At that point, the mother's love,
affection and tenderness also flow, -
8:19 - 8:21as well as security
and eye-to-eye contact. -
8:22 - 8:28So, the baby is full, calm,
satisfied, relaxed, -
8:29 - 8:32and falls asleep in that ultimate embrace.
-
8:32 - 8:36It's a time of ultimate bliss.
-
8:36 - 8:42While we are growing up, that connection
with food and emotion continues. -
8:42 - 8:45Birthday: birthday cakes.
-
8:45 - 8:49Celebrations, promotions,
entering university. -
8:49 - 8:54Feasts on fine dining tables,
delicious food, drinks and sweets. -
8:54 - 9:00On TV, chocolate is advertised
in connection with love or heartbreak. -
9:00 - 9:05Even after death, after the funeral,
there is a dinner. -
9:06 - 9:09So, such a link between food
and our emotions -
9:09 - 9:12exists throughout our lives.
-
9:12 - 9:14During our adulthood,
-
9:14 - 9:17for a person who has a weight disorder,
-
9:17 - 9:20when they face stressful factors,
-
9:20 - 9:22high-pressure situations,
-
9:22 - 9:24the emotions which are created,
-
9:24 - 9:27and since they’re not in a position
to recognise them -
9:27 - 9:30by reflex, subconsciously,
-
9:30 - 9:31what is their memory?
-
9:31 - 9:33The result is polyphagia.
-
9:33 - 9:35What is polyphagia?
-
9:35 - 9:41In simple terms, it is a vehicle
that someone may ride, -
9:41 - 9:42and it takes them back,
-
9:42 - 9:46retraces them to that very period
of ultimate bliss. -
9:47 - 9:50It is no coincidence
that after a big meal, -
9:50 - 9:53we become lethargic.
-
9:54 - 9:59Therefore, I forbade ceasing bulimia
-
9:59 - 10:05since it was the only anaesthetic,
opiate, relaxer -
10:05 - 10:08that a person with weight disorder has.
-
10:09 - 10:11The second reversal I did
-
10:11 - 10:15was I forbade food deprivation,
-
10:15 - 10:17both in terms of quantity -
-
10:17 - 10:20I work with portions,
restaurant portions, supposedly - -
10:20 - 10:22and flavours.
-
10:23 - 10:24Why?
-
10:24 - 10:28Food plays a dual role.
-
10:28 - 10:33On the one hand, it gives you
nutrition, energy and health, -
10:33 - 10:35therefore, you live because of food.
-
10:35 - 10:37On the other hand,
-
10:37 - 10:39it gives you appealing flavours.
-
10:39 - 10:44It's normal when you are hungry,
when you feel your stomach empty, -
10:44 - 10:47to think of something to eat
that you will enjoy. -
10:48 - 10:53It's normal to desire
French fries or chocolate. -
10:53 - 10:57It's not normal
not to desire French fries. -
10:57 - 11:00So, people must not starve.
-
11:00 - 11:02They eat portions
-
11:02 - 11:05because it is a fact
-
11:05 - 11:10that it is not normal to follow a diet,
specifically, a low-calorie diet. -
11:10 - 11:13So when someone succeeds,
they are more like a hero. -
11:14 - 11:17We should not presume
that it's normal to be on a diet, -
11:17 - 11:20and when you fail,
you are incapable and inadequate. -
11:20 - 11:23The third reversal I made
-
11:23 - 11:28is that I realised that weight loss
has more than the two stages - -
11:28 - 11:30weight loss and maintenance.
-
11:30 - 11:33Usually, nobody actually gets
to the maintenance stage - -
11:33 - 11:34they quit earlier.
-
11:34 - 11:36Weight loss has four stages.
-
11:36 - 11:41There are four consecutive stages,
-
11:41 - 11:46and a person with weight disorder
needs a lot of help -
11:46 - 11:50to take as much time as they need
in each of the stages. -
11:50 - 11:52During the first stage,
-
11:52 - 11:57they observe, watch, perceive and feel.
-
11:57 - 12:02They experience their bulimia.
They face and confront it. -
12:02 - 12:08During the second stage,
having already understood -
12:08 - 12:11that eating is not a crime,
-
12:11 - 12:13they are able to form an opinion.
-
12:14 - 12:18They have set their new boundaries
and explored new borders. -
12:18 - 12:23At the second stage, you'll usually see
that they don't follow their diet, -
12:23 - 12:27or they skip a meal
or are late for an appointment. -
12:27 - 12:30When a person reaches the third stage,
-
12:30 - 12:33at this point they are able
to focus on the organic part. -
12:34 - 12:39At this point, they want to learn
about the benefits of vitamins -
12:39 - 12:41because at this stage they can act.
-
12:41 - 12:43They lose weight at this stage
-
12:43 - 12:46In order to pass to the fourth stage,
-
12:46 - 12:50they continue wanting
to take care of the self -
12:50 - 12:52they have discovered,
-
12:52 - 12:55by setting a different frame
to their own image. -
12:57 - 13:04An obese person seeks the image
that they have to acquire. -
13:04 - 13:08They either hide the image
that they have behind their volume, -
13:08 - 13:12or with their volume
they highlight another image. -
13:13 - 13:18No one should starve,
especially not an obese person. -
13:18 - 13:20They shouldn't suffer,
-
13:20 - 13:23shouldn't torture themselves
while following a diet. -
13:23 - 13:27An obese person
shouldn't have prohibitions, -
13:27 - 13:30sermons, instigations, promptings.
-
13:31 - 13:35You simply have to join hands with them
-
13:35 - 13:39to make it possible for them
to join hands with their own self -
13:39 - 13:42which is hidden behind their volume.
-
13:42 - 13:47We live in an era when it is not enough
-
13:47 - 13:50to focus merely on whether
you lose or gain weight. -
13:51 - 13:54My priority nowadays
-
13:54 - 14:00is for people to remain
detoxified and alkalised, -
14:00 - 14:02to preserve their health.
-
14:02 - 14:05Besides, obesity is a form of oxidation,
-
14:05 - 14:08which means that when someone
changes the PH of their body -
14:08 - 14:12and turns it to alkaline,
they lose weight easily. -
14:12 - 14:14There are four diseases of our era:
-
14:15 - 14:20cancer, depression, leaky gut
syndrome and metabolic syndrome. -
14:20 - 14:24Food plays a crucial role
in all these diseases, -
14:24 - 14:27either to prevent the disease
-
14:27 - 14:33or to regain health
by following a healthy diet. -
14:34 - 14:38I personally suggest
the Mediterranean diet -
14:38 - 14:41in combination with a macrobiotic diet.
-
14:41 - 14:45The macrobiotic diet taught me
the use of cereals, -
14:45 - 14:48and indeed, I was lucky
to learn of their importance -
14:48 - 14:50since they're very precious foods.
-
14:51 - 14:53Cereals, these complex carbohydrates,
-
14:53 - 14:58such as brown rice, quinoa,
millet, oat, spelt -
14:59 - 15:04are very precious foods since,
first of all, they provide us with fibres -
15:05 - 15:08which are necessary for the proper
functioning of the intestine, -
15:08 - 15:11which is the basic organ
of our immune system. -
15:11 - 15:15They provide us
with nutrients and antioxidants, -
15:15 - 15:20which are a body armour against cancer.
-
15:20 - 15:24But the most important
assistance they provide -
15:24 - 15:27to a person who is on a weight loss diet,
-
15:27 - 15:31since they are complex carbohydrates,
is that they are slow-burning. -
15:31 - 15:35They control insulin, in other words,
the level of glucose in blood, -
15:35 - 15:37and so reduce hunger.
-
15:37 - 15:40And when hunger is reduced,
a person can focus more -
15:40 - 15:45on the psychological part
of the weight loss. -
15:45 - 15:49We are living in a time of crisis
-
15:50 - 15:55in which people experience pressure,
both economic and psychological, -
15:55 - 15:58and are full of agony and fear
about the future. -
15:59 - 16:01So, in this era,
-
16:01 - 16:06people have the obligation
-
16:06 - 16:11to find a way to take care
of their psychological and physical health -
16:11 - 16:16in order to remain healthy
and deal with the crisis. -
16:17 - 16:23In the future, I believe
that human beings need - -
16:23 - 16:25because now, in this era,
-
16:25 - 16:30the tendency is to return
to a more natural diet - -
16:30 - 16:33to find more natural means
-
16:33 - 16:38to deal with their health better,
to maintain their health. -
16:38 - 16:42In the future, human beings
need to be educated at school -
16:42 - 16:46about how to remain
detoxified and healthy, -
16:46 - 16:51to feel hunger, to have the insight
and the knowledge -
16:51 - 16:55to choose food that provides
both joy and nourishment, -
16:55 - 16:59and not to depend on nutritionists
-
16:59 - 17:02and the industry of processed foods
-
17:02 - 17:04to dictate to them what to eat,
-
17:05 - 17:09and often to dictate
the image of themselves. -
17:09 - 17:14Nobody achieves their dream
of weighing 50-52 kg -
17:14 - 17:19by consuming low-fat products.
-
17:19 - 17:22People must eat food that is "alive."
-
17:22 - 17:27If you soak barley or lentils,
they will give you sprouts. -
17:27 - 17:33If you soak corn flakes,
I don't know what they will give you. -
17:34 - 17:38Finally, I believe that
the basic food for people is love. -
17:39 - 17:43And if a person seeks it through food,
-
17:43 - 17:45either by eating in small portions
-
17:45 - 17:48or by filling their body
and getting fatter, -
17:48 - 17:51I wonder, is this bad
-
17:51 - 17:53or just complicated?
-
17:53 - 17:54Thank you.
-
17:54 - 17:56(Applause)

- Food as healing | Aliki Panopoulou | TedxAcademy
- Description:
-
Nutritionist-diet advisor, Aliki Panopoulou, deals with weight disorders through a psychological point of view. She describes the link between obesity and emotions, and she stresses that obesity is a psychosomatic disease. She criticizes the traditional model of diets and weight loss methods, and she contests the low-calorie diets. How should bulimia be faced? Which is the role of a suitable diet in dealing with modern diseases? How does the food industry dictate certain models ? What should a contemporary person do to face weight disorders? Watch a talk that presents a modern approach to the problem of obesity.
