and you have a whole new problem: -

0:24 - 0:28That's changing how we eat and
forcing us to also look at what's local. -
0:28 - 0:31Some countries, like Russia,
have a lot of experience with this. -

0:36 - 0:39(Alec) Jay Klouz has been
a nightclub promoter in Spain, -
0:39 - 0:41a tour boat owner in France,
-
0:41 - 0:43and a celebrity chef in Australia.

0:44 - 0:46Now the American lives in Russia
-
0:46 - 0:48where he's added cheesemaker to the list.

0:49 - 0:52(Klouz) Every person has a different hand,
-
0:52 - 0:54and this hand makes cheese.

0:54 - 0:56You could be more aggressive,
-
0:56 - 0:57and you'll have another cheese.

0:57 - 0:58You could be more careful,
-
0:58 - 1:00and you'll have another cheese.

1:00 - 1:02You can even be half a degree higher,

1:02 - 1:04and you'll have another cheese.

1:04 - 1:07(Alec) Klouz uses local ingredients
to make European favorites -
1:07 - 1:10like feta, Gouda, and ricotta.

1:10 - 1:14Flavors that began to make their way here
after the fall of the Soviet Union. -
1:16 - 1:19(Alec) So, I grew up in Wisconsin,
-
1:19 - 1:24and we've always had cheddar,
pepper jack, all sorts of-- -
1:24 - 1:26you know, real sharp cheeses.

1:26 - 1:27Love this stuff.
-
1:27 - 1:29And then I came to Russia,
-
1:29 - 1:32and it was like, cheese was white
and didn't taste like anything. -
1:32 - 1:34Tastes like plastic.

1:34 - 1:37What made you decide to start
making your own cheese? -
1:37 - 1:40You know, one thing you learn in Russia,
the winters are rough. -
1:40 - 1:42The Russians prepare for winter
-
1:42 - 1:46so, being prepared means,
also eating good stuff. -
1:49 - 1:52(Alec) For years, Russia imported
as much cheese as it produced -
1:52 - 1:54until 2014.

1:56 - 1:58Russia annexed Crimea.
-
1:58 - 2:02The US and the EU
slap sanctions on Russia, -
2:02 - 2:06and President Putin responded by
banning food imports from those countries. -
2:07 - 2:11Cheesemakers like Klouz
saw sales go way up. -
2:11 - 2:14Russian production
increased by at least 50%. -
2:14 - 2:16(Klouz) Please don't forget
to return my spoon. -
2:16 - 2:18(Sofia) Yes, return the spoon. Thanks.

2:19 - 2:25After Russia stopped purchasing
cheeses abroad, -
2:25 - 2:28the cheese market changed a lot.
-
2:29 - 2:30So we started buying here.
-
2:30 - 2:36We are very satisfied
with the price and quality. -
2:37 - 2:40(Alec) And how have the current sanctions
changed the industry? -
2:40 - 2:44(Klouz) With the sanctions there's
more interest in the people making cheese. -
2:44 - 2:46Like, "Oh, we don't need you,
we have Jay." -
2:46 - 2:47I'm like, "Yeah, right."

2:47 - 2:50Fifty kilos a day,
how am I going to feed Russians? -
2:51 - 2:52"Jay will save us!"

2:52 - 2:55I'm like, what?
(laughter) -
2:55 - 2:56People are funny here.

2:59 - 3:03(Alec) But some people are more confident
in local producers' ability -
3:03 - 3:07to fill the giant cheesy hole
left by the counter sanctions. -
3:10 - 3:13Klrill Sharshukov imported Italian cheese
-
3:13 - 3:17until the food embargo forced him
to start making his own. -
3:17 - 3:21(Sharshuko) Here we have
caciocavallo cheese. -
3:21 - 3:23A classic Italian caciocavallo cheese.

3:23 - 3:30It is fermented for about 6 to 12 months
-
3:30 - 3:33and has a specific, light taste.
-
3:34 - 3:38And here we added fenugreek seeds.

3:41 - 3:44Tastes like cheese with with walnut,
-
3:44 - 3:48kind of a sweet dessert-y crunch.

3:51 - 3:53It doesn't have nuts?

3:53 - 3:58No, no. This doesn't have any nuts,
but is has that flavor. -
3:58 - 4:02I don't know if this is allowed on TV,
-
4:02 - 4:05but these seeds are
healthy for men, apparently. -
4:06 - 4:11So this is delicious and healthy for me?
(laughter) -
4:12 - 4:13(Alec) After the embargo,
-
4:13 - 4:16the government started giving
out subsidies and tax breaks -
4:16 - 4:18to boost domestic production.

4:18 - 4:20Something Sharshuko believes
-
4:20 - 4:23is giving Russians a chance to catch up
to the world's cheesemakers. -
4:24 - 4:27(Sharshuko) The longer this goes on,
the more experiences we have. -
4:27 - 4:31We reproduce Italy's cheeses here,
-
4:31 - 4:35replace its classic cheeses,
and produce them. -
4:35 - 4:39So it would be very difficult to return.
-
4:39 - 4:43(Alec) But the Russian cheese revolution
isn't for everybody. -
4:43 - 4:47Imported foods were always
too expensive for most Russians. -
4:47 - 4:51Meaning locally-made burrata will probably
never be on their shopping list. -
4:52 - 4:53And economists are skeptical
-
4:53 - 4:56that the people
who could afford fancy cheese -
4:56 - 4:57are going to see local versions
-
4:57 - 5:00as anything other than
a secondary substitute. -
5:00 - 5:04When we imported cheese, it had quality.

5:04 - 5:08We, the small portion of affluent people,
got used to it. -
5:08 - 5:10When that cheese disappeared,
-
5:10 - 5:17those people stopped buying
Russian copies of cheese -
5:17 - 5:19because they don't trust the quality.

5:20 - 5:24Well, I hear from the cheese producers--

5:24 - 5:26Russian cheese producers--
-
5:26 - 5:28who say sanctions have been a huge help.

5:29 - 5:34Those you spoke to are very few
because, as a matter of fact, -
5:34 - 5:3790% of the Russian cheese market

5:37 - 5:39is mass market cheeses.

5:40 - 5:42I wanted to ask what will happen
-
5:42 - 5:47to Russian cheesemakers
if sanctions are lifted tomorrow? -
5:48 - 5:52There will be
competition again for 15 to 20% -
5:52 - 5:55of wealthy people in Russia.

5:56 - 6:01People who have invested
in cheese production -
6:02 - 6:04will be hit hard.

6:05 - 6:08(Alec) The drive for food Independence
has protected Russia -
6:08 - 6:11from supply disruptions during
the pandemic, the government says. -
6:13 - 6:16It's also helped a fledgling,
farm-to-table movement here. -

their own farm to produce ingredients -

In retaliation, Russia banned all imports from the EU and the US, which had a direct impact on cheese imports into Russia. This forced Russian consumers to seek alternatives locally, boosting domestic cheese production. This trend appears to continue with the ongoing war in Ukraine which contributed to the extension of sanctions. Local Russian cheese producers see the situation as a good opportunity to improve the quality and volume of their production and thus develop a renowned domestic artisanal cheese industry, which would allow them to catch up with other countries famous for their cheeses.
