ΠΟΛΙΤΙΚΗ ΚΟΥΖΙΝΑ - Α TOUCH OF SPICE 2003 (FULL MOVIE)
-
0:33 - 0:38Granpa often said that the Greek word for
"dream" conceals within the word "belch". -
0:39 - 0:42Initially, I paid no notice as
I could only do these 2 things. -
0:42 - 0:44Because I actually did nothing.
-
0:45 - 0:49Only later I understood that he meant
the food and stories. -
0:49 - 0:51This makes them even better,
-
0:51 - 0:55it comes the presentation.
-
3:34 - 3:36Either I see something that does not exist
, -
3:36 - 3:38or if it existed, would
you can not see it. -
3:39 - 3:41When the toner has been renewed.
This morning? -
3:42 - 3:46The maximum resolution is.
The colors are the problem.. -
3:47 - 3:51Well, either
we are contenders for the Nobel Prize -
3:51 - 3:53or we need a new printer.
-
4:15 - 4:18So, that's it for this year.
-
4:21 - 4:25Tomorrow I leave.
-
4:25 - 4:27Until next year, that is.
-
4:29 - 4:30See ya!
-
4:31 - 4:33I am waiting for your dissertation..
-
4:42 - 4:45Fani, my boy, how are you?
-
4:45 - 4:47Doctor!
-
4:49 - 4:53How did you find me.
All Faliro speaks of you? -
4:53 - 4:55Sit.
-
4:59 - 5:00What happened?
-
5:01 - 5:06Fani, I tell you something,
I should not say, -
5:06 - 5:08- but now...
- What, Doctor? -
5:09 - 5:11Your grandpa is coming.
-
5:13 - 5:13When?
-
5:14 - 5:15Thursday.
-
5:15 - 5:17But I'm leaving on Thursday.
-
5:18 - 5:20He wanted to surprise you,
-
5:20 - 5:24but
I heard you're leaving so I rushed. -
5:24 - 5:28Fani, I think you should
surprise him. -
5:29 - 5:33I'll get him up from the airport,
and you wait for him at home. -
5:33 - 5:35We'll call his old friends and
-
5:35 - 5:41make a few appetizers, we can have a drink
to welcome him. -
5:42 - 5:43Do you remember
-
5:43 - 5:47as a boy how you
used to cook all night? -
6:08 - 6:12So grandpa will sit here
and his friends there... -
6:14 - 6:16No, grandpa will sit there.
-
6:18 - 6:20Almost like the Last Supper...
-
6:21 - 6:22Grandpa sitting here.
-
6:28 - 6:29Nice.
-
6:30 - 6:32And now grandpas friends.
-
6:33 - 6:36Grandpas friends are a little odd.
-
6:36 - 6:38Because they're from Istanbul.
-
6:38 - 6:41Their origin sets them apart both
-
6:41 - 6:45historically and biologically.
-
6:45 - 6:46Can you direct me
to Halcyone Street? -
6:47 - 6:50First and foremost,
they are "magnetized." -
6:50 - 6:54It's like a compass that with
-
6:54 - 6:58every geographical question
re-orients their identity. -
6:58 - 7:00Who are they,
-
7:00 - 7:03where they come from and where they go.
-
7:03 - 7:05That way - Thank you.
-
7:05 - 7:10Some see it as a bad. Other
believe it comes from the diet. -
7:10 - 7:14For most, food involves the
sense of smell and taste. -
7:14 - 7:20For grandpa's friends it also
involves sound and sight. -
7:22 - 7:26Hello to you all! You all arrived
at the same time. Come in! -
7:26 - 7:27Come on in.
-
7:40 - 7:42Did you find it easily?
-
7:43 - 7:46From Thysseas Street
we landed right here. -
7:46 - 7:48But Thysseas Street isn't
that way, it's that way. -
7:55 - 7:59He's right, that's how we came.
Should we havea toast to grandpa? -
8:02 - 8:04Where is he?
-
8:04 - 8:06A bit late, I'd say.
-
8:06 - 8:09The plane landed about an hour
ago He'll be right there.. -
8:10 - 8:15- It'll be a great surprise.
- He hasn't seen you in so long. -
8:20 - 8:23I fear certain sounds when
they occur just before a meal. -
8:23 - 8:25Before every important event in my life.
-
8:26 - 8:30It rings either on the
door or the phone rings. -
8:40 - 8:41Yes please?
-
8:41 - 8:42Yes, Doctor?
-
8:44 - 8:46He has not come?
-
8:46 - 8:48What does that mean?
-
8:49 - 8:51Did you miss?
-
8:53 - 8:55What?
-
8:59 - 9:01Where did it happen?
-
11:42 - 11:45Will you talk about the kitchen
Constantinople -
11:45 - 11:47you have to start with the Appetizers.
-
11:47 - 11:52My first lessons I learned about spices
the grocery store my grandfather -
11:53 - 11:55on the eastern shore of the Vosporos.
-
11:56 - 11:57Goodbye.
-
11:57 - 11:59Good day, Mr Vassilis.
Good day. -
12:00 - 12:01What you get, Dorothea?
-
12:01 - 12:03Cumin, dried mackerel
and vine leaves. -
12:04 - 12:06How much cumin - A pound.
-
12:06 - 12:10What for so much.
Sunday I make meatballs? -
12:10 - 12:13Pantelis comes to visit.
With family.? -
12:13 - 12:15With family.
-
12:15 - 12:20No better then cumin.
What should I take.? -
12:23 - 12:25Tu cinnamon to it.
-
12:25 - 12:28We do not season the
meatballs with cinnamon! -
12:33 - 12:36Dorothea, I tell you what.
-
12:36 - 12:39To tell you what you want to say,
-
12:39 - 12:41sometimes you have to take a wrong spice.
-
12:42 - 12:44One that does not belong in food.
-
12:44 - 12:49Cumin is too strong. It causes
that close to people. -
12:49 - 12:54Cinnamon brings them together,
he can see each other in the eye. -
12:54 - 12:58If you say "yes" will, you have to give
cinnamon to food. -
12:58 - 13:00Thank Church Vassili.
Good luck! -
13:02 - 13:04Sultana!
-
13:05 - 13:06Sultana!
-
13:08 - 13:10Where is my pajamas?
-
13:11 - 13:13Is not the top?
-
13:14 - 13:17I do not think they.
But I got it together laid.. -
13:18 - 13:20I'm coming, wait.
-
13:27 - 13:31The biggest wars in history
were triggered by spices. -
13:31 - 13:36And a conjured I,
directly to our home. -
13:46 - 13:49Is there already cinnamon turn.
Of course not! -
13:49 - 13:53Who should I believe you or
my nose? The smell of cinnamon. -
13:55 - 13:56Reigns!
-
13:57 - 13:59Liebermann when I tell you so!
-
13:59 - 14:02Sultana, as place I told you,
there is one off no cinnamon? -
14:03 - 14:05Just like your mother.
-
14:06 - 14:08My mother was the best cook of
Cihanger. -
14:08 - 14:11All wanted
that she cooks for her. -
14:11 - 14:15Used to flavor meat only with
cinnamon, if it tastes strictly. -
14:15 - 14:19Your then you had no refrigerator,
so it had cinnamon to the meat. -
14:20 - 14:22The first refrigerator
in Constantinople we had! -
14:22 - 14:24From the American consul.
-
14:24 - 14:27So many Americans
, and then you marry me? -
14:27 - 14:30Tell me the times.
I was not asked.. -
14:33 - 14:36Your dispute began
always with unimportant details, -
14:36 - 14:40ended but always
in world history topics. -
14:40 - 14:42Palaiologos?
-
14:42 - 14:45And how do you know.
It's in all the books? -
14:46 - 14:50The name I do not want
again hear from you! -
14:50 - 14:53Weis can not handle me, I was
on the "Great School of the Nation". -
14:54 - 14:57There was never any question of
that the emperor ate meat with cinnamon. -
15:21 - 15:26Grandpa always said the word "restaurateur"
contains the word "astronomer". -
15:27 - 15:31So I got my first lessons in astronomy
with spices. -
15:45 - 15:49I tell you what, and you draw
or tell me what you think. -
15:51 - 15:52Well, let's go.
-
15:53 - 15:56Pepper
...He is fiery and sharp. -
16:00 - 16:01Sun.
-
16:01 - 16:05The sun is in the middle.
And what does she see? -
16:05 - 16:07She sees everything - everything..
-
16:07 - 16:10And that comes
pepper to any dish. -
16:11 - 16:15Then comes the Mercury,
who is also hot. -
16:16 - 16:17And beyond...
-
16:18 - 16:19Venus.
-
16:23 - 16:24Cinnamon.
-
16:25 - 16:29Venus was the most beautiful of women.
-
16:29 - 16:34Why cinnamon is also
bitter and sweet, just like the women. -
16:37 - 16:40Then the earth, as we live.
-
16:41 - 16:42And what's up here?
-
16:43 - 16:44There Kyria Zoe.
-
16:45 - 16:47On earth there is "zoe" life.
-
16:47 - 16:51This has nothing to do with Kyria
Zoe, the mother of Tassoula. -
16:51 - 16:52The is dead.
-
16:53 - 16:55And what you need to live?
-
16:55 - 16:57Food.
-
16:57 - 17:00And what is the food taste?
-
17:00 - 17:01Salt.
-
17:05 - 17:09Our lives need salt,
so it's not bland. -
17:09 - 17:14The food and life need salt.
-
17:23 - 17:27Every Sunday the family gathered with us
-
17:27 - 17:29it was always the purest joys of cooking.
-
17:29 - 17:35All helped to even aunt Elpiniki
who had Parkinson's. -
17:39 - 17:42The main rival Aunt Elertheria,
-
17:42 - 17:46knew all the mysterious herbs,
give the food flavor. -
17:46 - 17:48Delicious.
-
17:48 - 17:50So no, they surpassed
-
17:51 - 17:56she revealed her recipes,
somewhat modified. -
17:56 - 17:58I'm telling you,
but will not tell the other's. -
18:01 - 18:03Dorothea, the dumplings!
-
18:05 - 18:08First you dünstest
the onion in oil, add the rice and give. -
18:08 - 18:10I know - Wait..
-
18:10 - 18:13The music you are evading an overnight.
So I'll do it too.. -
18:13 - 18:17When the broth is ready,
-
18:17 - 18:21You stir a few times to
and rub into something germander. -
18:22 - 18:26That's bitter.
If one's eating raw.. -
18:26 - 18:29The vine leaves
there's a sweet note. -
18:58 - 19:00Do you want to poison us?
-
19:00 - 19:02The recipe I got from Elertheria,
sweetheart. -
19:02 - 19:05But you have to do ginger. No.!
-
19:05 - 19:07This is germander - germander.?
-
19:08 - 19:11This gave us my mother for pimples.
-
19:11 - 19:13Why then she gave me the recipe?
-
19:13 - 19:16Because you always do
everything that you're told. -
19:17 - 19:21What I always waited eagerly,
was Verkupplung. -
19:21 - 19:25Prerequisite for a wedding
was that the bride- -
19:25 - 19:28inaugurated into the secrets of cooking
Constantinople. -
19:32 - 19:34Do not worry, it is not alive.
-
19:35 - 19:39It is so delicious,
that all the finger licking it. -
19:41 - 19:42And now the spices.
-
19:43 - 19:45Lamb larded with garlic you
and onion. -
19:45 - 19:47Lih, no!
-
19:47 - 19:51Emilio said that lard in Morocco
women the meat with garlic. -
19:51 - 19:54Please, aunt! Do not start.
You have no lard. -
19:54 - 19:57Stray just a little oregano
over it and let it move. -
19:57 - 20:00And then something nutmeg...
-
20:00 - 20:02Sunday there's a feast!
-
20:19 - 20:21Osman!
-
20:24 - 20:26Come on in.
-
20:29 - 20:30How are you?
-
20:31 - 20:34Good, and you?
-
20:34 - 20:35Good.
-
20:36 - 20:38You've grown very pretty, Mustafa.
-
20:38 - 20:40When are you coming to play with Fani?
-
20:41 - 20:43After circumcision
I bring him here to play. -
20:44 - 20:47What are you going to be times,
when you grow up? -
20:47 - 20:48Doctor - He's in the Army..
-
20:50 - 20:52These are both beautiful professions.
-
20:52 - 20:56But I think Mustafa
once military doctor. -
20:57 - 20:58Agreed?
-
21:01 - 21:03What would you like, Osman Bey?
-
21:04 - 21:05Mussels.
-
21:06 - 21:08We expect
diplomatic visit from Ankara. -
21:08 - 21:10Do not worry.
-
21:10 - 21:14Get me the best mussels in town.
-
21:14 - 21:18To you I
greater confidence as to my fishmonger. -
21:19 - 21:22This diplomats meeting is
very important to me. -
21:26 - 21:28Do the bad things, Osman Bey?
-
21:30 - 21:32In Athens are already riots.
-
21:35 - 21:37We wait and see what results the meeting.
-
21:47 - 21:52Relationships without frictions are
like a wedding without ceremony. -
21:55 - 21:57We praise God
when we eat, but her? -
21:57 - 21:58Come here!
-
22:00 - 22:02You can not be up there at the top.
-
22:07 - 22:11Your says it

22:13 - 22:14What?
-
22:15 - 22:18So it was and so it will remain.
-
23:17 - 23:22Time passed. The faces of the adults
be darkened, -
23:22 - 23:26But brightened mine up,
because I fell in love Saime, -
23:26 - 23:30the daughter of Kira-Ayse,
the best friend of my mother. -
23:39 - 23:40Come what we cook.
-
24:14 - 24:17What's to eat today.
I make meatballs? -
24:19 - 24:21How do you do it?
-
24:21 - 24:24With bread, onions, salt and pepper.
-
24:24 - 24:27But they are not really good.
-
24:28 - 24:29Why?
-
24:29 - 24:32Thus, they are delicious,
dazutun must be something else. -
24:32 - 24:33So what?
-
24:34 - 24:36Is a mystery.
-
24:37 - 24:38Tell me.
-
24:39 - 24:42And what will you give me?
-
24:42 - 24:45I cook for you.
I can also cook.. -
24:47 - 24:48What then?
-
24:50 - 24:51Dance for me.
-
24:53 - 24:54Now tell me.
-
24:55 - 24:59For delicious meatballs need...
-
25:02 - 25:03Really?
-
25:49 - 25:52In Mycenae grow cloves.
-
25:52 - 25:54In Delphi roses.
-
26:00 - 26:02On the Acropolis thyme.
-
26:02 - 26:05Geography is a magic box.
-
26:05 - 26:09And the best place to learn it,
is at the lighthouses. -
26:10 - 26:14For
at the lighthouses, compasses haywire, -
26:14 - 26:19and the wind blows the mind and the eyes
under its spell. -
26:54 - 26:59A good teacher in the field of love
was my uncle Emilio. -
26:59 - 27:00He was captain
-
27:00 - 27:04and always brought the latest stuff,
were available abroad. -
27:05 - 27:10It was he who gave my mother
the first pressure cooker. -
27:10 - 27:12Come on, Dorothy!
-
27:18 - 27:22This card I sent you
from the Parthenon. Look at the math. -
27:22 - 27:26This one is from Sao Paulo, and from here
Antwerp. -
27:26 - 27:29In Athens
cut the onions women so... -
27:29 - 27:31And in Antwerp Sun.
-
27:31 - 27:36If you woman mussels prepared
she loves you more than anything. -
27:38 - 27:39Last time I know a learned...
-
27:40 - 27:41What's her name - Zozo?
-
27:42 - 27:46This was the best mussels

27:49 - 27:52Only could cook the mussels.
-
27:52 - 27:54And so a married - No?
-
27:54 - 27:57Savas, come
The pot is something. -
28:18 - 28:22The beautiful new shirt.
To hell with this pot! -
28:22 - 28:24Nice still.
-
28:26 - 28:29Aunt Elpiniki
had become so frightened -
28:29 - 28:31disappeared that her Parkison.
-
28:33 - 28:35I can not believe!
-
28:36 - 28:39Shells remind me of the hammam.
-
28:39 - 28:41Whenever Uncle Emilio
returning from a trip, -
28:42 - 28:43we went to the hammam.
-
28:44 - 28:48I listened to the adults,
as they opened their hearts, -
28:48 - 28:50just as open clams steamed.
-
28:55 - 28:57As you can see the whole thing, Emilio?
-
28:58 - 29:00In Cyprus are again riots.
-
29:00 - 29:03It is, start in Athens
boil it to be. -
29:03 - 29:07It always does, but nothing comes out
here. -
29:07 - 29:09Here I understood for the first time,
-
29:09 - 29:12that other things are cooked,
not just food. -
29:12 - 29:14Last Osman came to the store.
-
29:15 - 29:16He smelled of garlic...
-
29:17 - 29:21If a diplomat smells of garlic,
's is not the best. -
29:22 - 29:24Yesterday I met Aydin Bey.
-
29:24 - 29:26He said something that I did not like.
-
29:26 - 29:30He said, "Michalis
, things are not the best." -
29:31 - 29:33Be on guard.
-
29:33 - 29:38"Your brother is but Greek, or.."
-
29:39 - 29:40Not! The Little...
-
29:44 - 29:49Well just look at me. Since I can remember
, they always say the same thing. -
29:49 - 29:53"The Turks expel you,"
"Turks" this, "Turks" in... -
29:54 - 29:56Talk, nothing more.
-
29:56 - 29:59Us but it's good, or - Emilio?
-
29:59 - 30:02You were on tour in September 1955.
-
30:03 - 30:06When my shop burned
you were not here. -
30:06 - 30:09I am selling everything
-
30:09 - 30:13and go to Greece,
then I find peace. -
30:20 - 30:24When I think of leaving,
I feel this pain every time here. -
30:28 - 30:32I've seen Dr. Thrassyvoulos
Thou shalt send radiographs.. -
30:33 - 30:36We were talking one evening.
What.? -
30:37 - 30:40About Constantinople, old times...
Not heat's better -
30:40 - 30:45here instead of there, they were
talking about Constantinople? -
30:46 - 30:48My late wife used to say:
-
30:48 - 30:53"When you leave a place talk about
the place that lies in front of you, -
30:54 - 30:56not behind you."
-
31:00 - 31:03And I think also.
-
31:05 - 31:08"Fevgo" go away,
means, go elsewhere. -
31:08 - 31:12And for most, this "elsewhere" Greece.
-
31:13 - 31:16Initially I thought
Greece would be in America. -

A Touch of Spice (or Politiki kouzina) is a 2003 Greek film directed by Tassos Boulmetis and starring Georges Corraface as the character of the adult Fanis Iakovides. The character of Fanis Iakovides as a child is played by Markos Osse and the supporting role of Fanis's grandfather, Vassilis, is played by Tassos Bandis.
The original Greek title is Πολίτικη Κουζίνα (Politiki Kouzina) which means Cuisine of the City and refers to the Cuisine of Constantinople. However, in the film's promotional material, the word Politiki of the title is depicted in capital letters, therefore allowing an alternative reading of the title, as Πολιτική Κουζίνα (Politiki Kouzina) which means Political Cuisine signifying the important role that politics played in the lives of the main characters.
Fanis Iakovides, professor of astronomy and astrophysics, recalls his childhood memories from growing up in Istanbul. When Fanis was 7 years old, his grandfather Vassilis was an owner of a general store with a specialty in spices. He was also a culinary philosopher and his mentor. Fanis grew very attached to his grandfather who would assist with his homework using imaginative techniques. For instance, Vassilis would teach his grandson the planets of the Solar System by showing an illustration of it and replacing the planets with spices. Cinnamon took the place of Venus since according to Vassilis, "like all women, cinnamon is both bitter and sweet". Fanis also fell in love for the first time in his grandfather store's upper floor with a young Turkish girl, Saime.
However, beginning with the Istanbul Pogrom in 1955, through 1978, the ethnic Greek community of Istanbul was reduced from 135,000 to 7,000 by a series of government orchestrated riots, pogroms and deportations. Most of Fanis' family is deported in 1964 with the Ankara government decision to renege on the 1930 Greco-Turkish Ankara Convention, affirming the right of Greek etablis (Greeks who were born and lived in Istanbul but held Greek citizenship) to live and work in Turkey, and most Greek citizens who lived in Istanbul were deported to Greece, despite most never having previously resided there. Since Vassilis was not a dual citizen, he was able to stay behind while his grandson Fanis and his parents were deported to Athens.
Fanis had trouble initially adapting in Greece, constantly trying to spend his time in the kitchen cooking, as it was the only link between him and his homeland. However, this would upset his mother who was afraid that the boy was either severely depressed or a homosexual. Fanis grew from childhood to adulthood, preserving his culinary talents and often offering his secrets of the Politiki Cuisine to those that ask for his help.
As the years passed by, and the tension between Turkey and Greece resolved, grandfather Vassilis made several promises to visit his grandson in Athens but failed to keep them. The reason for the final incompletion of this engagement was his rapidly declining health. Consequently, Fanis returns to Istanbul after three decades to visit his near-death grandfather and also runs into his old love, Saime, who is now married. Together, they reflect on their lives and the way politics managed to change everything.
Fanis will eventually realize that contrary to what his grandfather had taught him, he forgot to put a little bit of spice in his own life.
The main characters easily fit into a parallel metaphor - Saime, the old love of Fanis, a beautiful Turkish girl and multi-lingual tour guide, represents Istanbul (a cosmopolitan city called a "she" in Greek), Fanis is modern Greece, one that is still deeply in love with Istanbul and nostalgic for the past, while Saime's husband is a Turkish military doctor who represents a modern, pragmatic Turkey.http://en.wikipedia.org/wiki/A_Touch_of_Spice
