Blackberry Jam and Caramelized Nuts Recipe - I Could Kill For Dessert - S01E03
-
0:20 - 0:24Hi guys! Let's start with another I Could Kill For Dessert!
-
0:24 - 0:28Today I'm going to prepare to you guys a Blackberry Jam with Porto Wine...
-
0:28 - 0:31Love, this thing is looking too crystallized...
-
0:31 - 0:33...that we can use on a salad...
-
0:33 - 0:35It's not gathering leaves to eat!
-
0:35 - 0:37And I'm just going to drink some red wine, ok?
-
0:37 - 0:39Let's start with the blackberry and Porto wine jam.
-
0:39 - 0:43You will need these ingredients that are right here on the side, which are:
-
0:43 - 0:45The zestes of an orange,
-
0:45 - 0:48150 grams of sugar,
-
0:48 - 0:53500 grams of frozen blackberries.
-
0:53 - 0:57Guys, you don't need to buy fresh blackberries, cause they are expensive.
-
0:57 - 0:59Frozen blackberries are cheaper and it will look really pretty.
-
0:59 - 1:04200ml of Porto wine, if Paulo didn't drink all the wine.
-
1:04 - 1:04So let's see...
-
1:04 - 1:06One small pan.
-
1:06 - 1:07The blackberries and Porto wine.
-
1:08 - 1:10The sugar.
-
1:11 - 1:12And the orange zestes.
-
1:12 - 1:14Turn on the stove.
-
1:14 - 1:15Mix it a little bit.
-
1:15 - 1:22There will form a little foam here, so we will take a ladle and take all this foam out.
-
1:22 - 1:26Now we'll turn down the stove, but don't stir too much or it will crystallize...
-
1:26 - 1:33And it will reduce for more or less 2 hours, at least one hour, but 2 hours would be ideal.
-
1:33 - 1:35For the salad we will need...
-
1:36 - 1:38One pack of arugula,
-
1:38 - 1:40one pack of oak leaf lettuce,
-
1:40 - 1:414 fresh figs,
-
1:41 - 1:44one pack of goat cheese,
-
1:44 - 1:45pink pepper to taste,
-
1:45 - 1:47salt to taste,
-
1:47 - 1:50and caramelized nuts, that I will teach you how to prepare.
-
1:50 - 1:50So let's go!
-
1:50 - 1:52Let's chop the arugulas...
-
1:52 - 1:55Salad is: gather the leaves and eat!
-
1:55 - 1:57But no, let's "make" the salad...
-
1:57 - 1:59It's not "gather the leafs" and eat!
-
1:59 - 2:00Ah right, it's not...
-
2:02 - 2:04So, the lettuce is done...
-
2:04 - 2:06Take the edges of the figs out...
-
2:08 - 2:10Pink peper...
-
2:11 - 2:15Those who don't like goat cheese, can use other white cheese...
-
2:15 - 2:16Macro Lens 50mm F 2.8
-
2:17 - 2:22Now I'm going to caramelize the nuts, for us to use it on the salad.
-
2:22 - 2:25I'm going to chop the walnuts.
-
2:25 - 2:28Don't walnuts look like a brain?
-
2:28 - 2:32The Brain, The Brain... The Brain and Pinky...
-
2:35 - 2:37One cup of coarse sugar.
-
2:37 - 2:39"It goes straight to the pan"
-
2:39 - 2:42The jam here is already creating foam.
-
2:42 - 2:45I'm taking some of it out...
-
2:45 - 2:49The caramel is almost ready, don't let it over cook!
-
2:50 - 2:53There's a very good technique to know if the caramel is good or not.
-
2:53 - 2:57You place your face above the pan.
-
2:58 - 3:02When the vapor comes up, and your eyes start to water,
-
3:02 - 3:09it's because it's at 170C, and the caramel is perfect, with the ideal taste, for you to use on the salad.
-
3:09 - 3:11So, the caramel is done.
-
3:12 - 3:13Now the nuts...
-
3:13 - 3:15Turn off the stove.
-
3:15 - 3:20Mix it quickly so the nuts can caramelize together.
-
3:21 - 3:23It's important that is gets cold.
-
3:23 - 3:24Leave it here for a while.
-
3:24 - 3:27Guys, I'm going to take some of foam out again.
-
3:27 - 3:30It's the entire time taking it out.
-
3:30 - 3:32Whenever you get the foam out, you'll have a more shiny jam.
-
3:34 - 3:36So guys, the jam is ready!
-
3:36 - 3:39Now you mash the blackberries a little bit.
-
3:39 - 3:41Store them in little containers,
-
3:41 - 3:44But hum, love... Why are you putting them inside the containers?
-
3:44 - 3:47Aren't you going to use it in the chicken, or the salad...
-
3:47 - 3:50I'm putting it inside the cups cause I'm going to take them to the fridge now.
-
3:50 - 3:53So it can get cold, and we can use it, ok?
-
3:53 - 3:58Instead of putting the entire pan... The double of work, right?
-
3:58 - 3:59"A little flourish is always welcome!"
-
4:00 - 4:02Doesn't it look cute?
-
4:02 - 4:05So, let's finish our salad now.
-
4:07 - 4:09This is a little hard anyway...
-
4:09 - 4:11"You let it get too cold!"
-
4:13 - 4:15"Chop the walnuts while they are still a little warm"
-
4:18 - 4:20I made it!
-
4:20 - 4:22So, here's done!
-
4:23 - 4:25I'm going to put some on top of the salad.
-
4:25 - 4:26"And...mix it all"
-
4:26 - 4:28"Put the jam when you are about to serve"
-
4:28 - 4:29It turned out a light lunch, right?
-
4:29 - 4:32I think so... Super tasty!
-
4:32 - 4:33You can serve it as dinner.
-
4:33 - 4:35Anything, it's perfect!
-
4:35 - 4:38Honestly, for me, it was a "I Could Kill" show!

@icouldkillfordessertOn this episode I made sugar look light! I prepared a Blackberry Jam with Porto Wine that goes pretty well with your morning bread, on pies, but also I like to use it on a very refreshing green salad. However, I forgot I supposed to mix some jam with balsamic vinegar. At home when you prepare the salad sauce, mix one tbsp of blackberry jam with one tbsp of balsamic vinegar. It will be delicious! And on top of the salad you can put the caramelized nuts, that you can keep up to 7 days in the fridge, wraped on a plastic bag and or top some ice cream or any dessert you like!
