Sour and Spicy Shrimp Stir Fry
-
Hi foodies, I'm Gerry Girianza.
-
Today I'm gonna make sour
and spicy shrimp stir fry.
-
This recipe is inspired from
Aceh (Special Region of Indonesia).
-
So, do you wanna know what does it taste
like and how to make it?
-
Don't go anywhere!
-
Okay, the first step is,
-
We'll marinate the shrimps.
-
Pour salt over the shrimps,
-
Cut a lime.
-
Make sure they're all marinated.
-
Now we'll make the spices.
-
Just roughly cut, because
we'll blend them afterwards.
-
There are garlics and shallots.
-
Now red chilli, the seeds
are already took out.
-
Roughly cut.
-
Toss into a blender.
-
Turmeric.
-
Last, we toss in cayenne pepper.
-
Sundanese calls it "cengek".
-
Pour oil.
-
Blend until smooth.
-
Okay, it's already smooth.
-
The oil is already heated up.
-
Now it's time to add the spices in.
-
Because I added water in this spices
so you have to be careful when pouring them.
-
It will bounces around the pan.
-
Saute until cooked.
-
Okay, the colour already
turned to be more interesting.
-
And it starting releases its aroma.
-
But it's not already cooked,
-
We have to keep stirring so
it will not burnt.
-
While we stir, toss the
lime leaves in.
-
Okay, it's about to cooked.
-
Now cut the cayenne pepper.
-
Now it's time to add small sour starfruit.
-
It has sour tastes, but it's also fresh.
-
Cut small like this.
-
Add cayenne.
-
Add half of small sour starfruit.
-
Now, add shrimps in.
-
Pour 2 teaspoons of Javanese tamarind.
-
Water.
-
Add sugar.
-
Pinch of pepper.
-
As you can see here,
-
The colour is so sexy.
-
The spices has released
their essential oil.
-
So yummy.
-
Awsome, it has a good spicy
and sour tastes.
