    Hill Lemon Pickle.

    Ingredients needed for Hill Lemon Pickle are

    Hill Lemon 500 gm

    Ginger 250 gm

    Sugar 300 gm

    Corriander 1-2 teaspoon

    Fennel seeds 1-2 teaspoon
  • 0:30 - 0:33
    Mustard seeds 1-2 tespoon
  • 0:33 - 0:36
    Black Pepper 1-2 teaspoon
  • 0:36 - 0:39
    Fenugreek seeds 2 teaspoon
  • 0:39 - 0:42
    Nigella Sativa seeds 1 teaspoon
  • 0:42 - 0:45
    Ajwain 2 teaspoon
  • 0:45 - 0:48
    Black Salt 2 teaspoon
  • 0:48 - 0:51
    Red Chilli powder 2 teapsoon
  • 0:51 - 0:54
    Garm Masala half teaspoon
  • 0:54 - 0:57
    Salt as per taste
  • 0:57 - 1:00
    And Asafoetida one fourth teaspoon

    To beginwith, we'll wash and then dry the
    Hill Lemon with a clean cloth
  • 1:05 - 1:10
    and cut it from both ends like it's being shown.

    Now we'll first cut the Hill Lemon in four parts
  • 1:14 - 1:20
    and then cut it into small pieces.
  • 1:20 - 1:24
    Hill Lemon is somewhat bigger than a Lemon.

    Now we'll grind the spices. First of all put in two
    teaspoon of Fennel seed

    Two teapoon Coriander
  • 1:34 - 1:40
    Two teaspoon Fenugreek seeds
  • 1:40 - 1:44
    Two teaspoon Black Pepper
  • 1:44 - 1:47
    Two teaspoon Ajwain
  • 1:47 - 1:50
    Two teaspoon Mustard Seeds
  • 1:50 - 1:54
    You may use rai seed instead of Mustard
    seed if you want.

    Now we'll grind these spices roughly.

    You may even grind them finely.

    Now our spices are grinded.

    Now we'll take it out in a bowl

    and will put these grinded spices in the

    cut Hill Lemon.

    Now we put in two teaspoon of Black Salt

    One teaspoon Nigella Sativa
  • 2:36 - 2:38
    Salt as per taste
  • 2:38 - 2:45
    If you want you may take Black Salt and Salt
    in the same quantity.

    Now we put in Red Chilli Powder as per taste
  • 2:46 - 2:54
    and one teaspoon of roasted Cumin Powder
  • 2:54 - 2:59
    we add Sugar as per taste
  • 2:59 - 3:02
    You may use Jaggery in place of Sugar.

    Now we put in cut Ginger
  • 3:05 - 3:12
    which we've already washed, peeled and cut.

    Now we put in half teaspoon of Garm Masala
  • 3:16 - 3:19
    and one fourth teaspoon of Asafoetida.

    You may use Turmeric Powder as well if you wish too.

    Now we'll mix all the spices with the help of big spoon.

    Now our spices have mixed well.
  • 3:34 - 3:39
    Now we put it in an airtight container
  • 3:39 - 3:44
    and close the container with its cover.
  • 3:45 - 3:50
    And put in sunlight for eight to ten days
  • 3:50 - 3:58
    And will stirr the pickle at regular intervals ( daily )
    so that all spices get mixed well.

    Our pickle will be ready in fiften to twenty days.

    You may serve it with any dish.

    If you don't like Ginger then don't put it in.
