Trim the sinews off the pork and cut the meat into strips. Cut the pork fat into strips. Combine the meats and fat. Season with the brandy, garlic and spices. Put through the mincer twice. Pipe the mixture into sausage shapes into the crape net and envelope. For the rocket salad, wash the rocket, pick the leaves and dry. Dice the apple and mix with the rocket. Prepare basic vinaigrette from the remaining ingredients and add to the rocket mixture. Pan fry or grill the sausages. Dress the plate with the rocket salad and the remaining vinaigrette. Slice the sausages into equal lengths and serve next to the salad.
