height that water can be sucked up a tube. 99:59:59.999 --> 99:59:59.999 It’s ten metres. 99:59:59.999 --> 99:59:59.999 If you suck on a long vertical straw, the water will go no higher than ten metres. 99:59:59.999 --> 99:59:59.999 At this point there will be a perfect vacuum at the top of 99:59:59.999 --> 99:59:59.999 the straw, and the water will start to boil spontaneously. 99:59:59.999 --> 99:59:59.999 For a tree to raise water a hundred metres, it would 99:59:59.999 --> 99:59:59.999 have to create a pressure difference of ten atmospheres. 99:59:59.999 --> 99:59:59.999 How would trees do that? 99:59:59.999 --> 99:59:59.999 When I first posed this conundrum, a lot of 99:59:59.999 --> 99:59:59.999 people said the answer is transpiration, and 99:59:59.999 --> 99:59:59.999 that’s when water evaporates from the leaf, 99:59:59.999 --> 99:59:59.999 pulling up the water molecules behind it. 99:59:59.999 --> 99:59:59.999 And that’s clearly a mechanism at tree can use to create 99:59:59.999 --> 99:59:59.999 suction, but it doesn’t help us overcome this ten metre limit. 99:59:59.999 --> 99:59:59.999 Hank in a bar in the video: The lowest a pressure can go is a pure 99:59:59.999 So how else could trees transport water from the roots to the leaves? 99:59:59.999 --> 99:59:59.999 Hank: They don’t suck, they don’t use a vacuum. 99:59:59.999 --> 99:59:59.999 Narrator: Okaaay, so how do they do it? 99:59:59.999 --> 99:59:59.999 Hank: Squeezing a tube; it’s like you’re squeezing a tube all the way up. 99:59:59.999 --> 99:59:59.999 There’s little tree muscles in trees live in mangroves where the water 99:59:59.999 --> 99:59:59.999 is so salty that osmotic pressure actually 99:59:59.999 --> 99:59:59.999 acts in the other direction, so the tree needs 99:59:59.999 --> 99:59:59.999 additional pressure to suck water into the tree. 99:59:59.999 --> 99:59:59.999 Then it must be capillary action. 99:59:59.999 --> 99:59:59.999 The thinner the tube the higher the water can climb. 99:59:59.999 --> 99:59:59.999 But the tubes in a tree are too wide. 99:59:59.999 --> 99:59:59.999 At twenty to two hundred micrometres in 99:59:59.999 --> 99:59:59.999 diameter, water should rise less than a metre. 99:59:59.999 --> 99:59:59.999 So how do trees do it? 99:59:59.999 --> 99:59:59.999 Well, one of the assumptions we made is wrong: Hank in the video: 99:59:59.999 --> 99:59:59.999 The lowest a pressure can go is a pure vacuum – pure vacuum – pure 99:59:59.999 --> 99:59:59.999 vacuum—Narrator: In a gas, this is true; when you eliminate all of the 99:59:59.999 --> 99:59:59.999 gas molecules the pressure is zero, and you have a perfect vacuum. 99:59:59.999 --> 99:59:59.999 But in a liquid you can go lower than zero 99:59:59.999 --> 99:59:59.999 pressure and actually get negative pressures. 99:59:59.999 --> 99:59:59.999 In a solid we would think of this as ‘tension’. 99:59:59.999 --> 99:59:59.999 This means that the molecules are pulling on each other and their surroundings. 99:59:59.999 --> 99:59:59.999 As the water evaporates from the pores of the cell wall, they create immense 99:59:59.999 --> 99:59:59.999 negative pressures of minus fifteen atmospheres in an average tree. 99:59:59.999 --> 99:59:59.999 Think about the air-water interface at the pore: There is one atmosphere of 99:59:59.999 --> 99:59:59.999 pressure pushing in, and negative fifteen atmospheres of suction on the other side. 99:59:59.999 --> 99:59:59.999 So why doesn’t the meniscus break? 99:59:59.999 --> 99:59:59.999 Because the pores are tiny, only two to five nanometres in diameter. 99:59:59.999 --> 99:59:59.999 At this scale, water’s high surface tension ensures the 99:59:59.999 --> 99:59:59.999 air-water boundary can withstand huge pressures without caving. 99:59:59.999 --> 99:59:59.999 As you move down the tree, the pressure increases up to atmospheric at the roots. 99:59:59.999 --> 99:59:59.999 So you can have a large pressure difference between the top and the 99:59:59.999 --> 99:59:59.999 bottom of the tree because the pressure at the top is so negative. 99:59:59.999 --> 99:59:59.999 Narrator’s trick double: But hang on!
