Hi! Starting one more I Could Kill For Dessert! and on today’s show I am going to make a straw shaped biscuit with stripes that you can put on top of an ice cream, and other... I thought, like, dwarfs did this... And I will prepare an Alexander! You will make today the “Bijou” and the “Alexandre”... So, shall we? Ok, for the biscuits I will start by preheating the oven to 200C and we will cut the biscuit’s mold on an E.V.A. sheet. The most important is that we will have to make the mold which is a square of 7,5cm x 15cm... "Square of 7,5cm x 15cm?” This is not papercraft class, we don’t do origames later “Papercraft class?” but we will have to make these little squares... In other words, besides knowing how to cook... Done! Now we will prepare de cake’s dough! "Cake?" But I’m confused, what is this thing for? To frame pictures? Then we will put it on the silpat then we put the cake’s dough on top of it like this... "Cake???" then we take it off and we will have a perfect little square... Ok guys, to start here’s the deal: we will separate the eggs’ whites from the yolks because I will only use the whites. So there will be 8 egg whites. So let’s go! Why can’t you do this before, like most shows do? Because pâtiserrie is just like this, if things go wrong... Look... How wonderful... Another eight eggs? Eight eggs... So guys, here’s the thing: the egg whites are here, I separated them and now I will add the sugar and mix them until it’s very fufly... 8 minutes more or less in this kind of mixer, if it’s a regular mixer you can mix them for 12 minutes more or less. "8 minutes later" Here it’s ready, I’m going to sift the flour here and a little pinch of salt. Now, I’m going to add the cream, the butter and a tbsp of vanilla. Now I will separate a little bit of the dough so I can color it red. You started using the little bit on this stick, but you didn’t tell everyone it took you the whole colorant's container... No, I didn’t use the whole container but I used a lot of it... Like, 90%... 30%... And it’s still somewhere between orange and pink... But it’s almost red, right? It’s almost red... all you need is faith... So, I’m going to put it inside the piping bag... Here it’s done. I’m going to put a little bit of dough inside of a square and I’m going to spread it. Then I take some the excess... There should be a kitchen GPS, right... “Turn left... congratulations, you have accomplished your recipe...”. Take it off! Now I will take it for 6 minutes in the oven! So, now you have to take it off here and roll. See how it’s very soft, like this? Then after we roll it, it’s will be stiff! So, turn it to the other side and roll it. You have to roll it while it’s still warm cause if it cools down it won’t be soft anymore. So... You just killed my childhood, I thought these things existed alone... these little tubes... Then you put it over here to let it cool... I thought dwarfs did this... The Fantastic Chocolate Factory? Oh, it’s broken... it’s stiff, see, this one is broken cause I was going to roll it and it wasn’t warm anymore, so I couldn’t roll it properly and it broke. It cools down too fast so you have to roll it fast too... So guys, the biscuits are ready! They are delicious! So cute, look at that! Super crunchy! Perfect for you to top an ice cream, fill it with something... Looks like a waffle! It does look like waffles indeed... So now we’ll prepare the Alexander. "Ice" Here’s the deal, it’s very simple! A little bit of ice, then one shot one cup of cognac, one cup of dark cocoa cream then one part heavy cream. My heavy cream isn’t so good so I’m going to use just cream, ok? Is it the same? It’s the same... Let’s shake it? It’s ready! Then I’m going to grate a little nutmeg on top. Do you wanna try it? I do! I love these things with nutmeg, pepper... Wow, this one is really tasty huh?
