TUNA FISH RECIPE - BEST TUNA RECIPE

  • 0:00 - 0:05
    [Upbeat music.]
  • 0:05 - 0:12
    Grams' cream tuna on toast.
  • 0:12 - 0:15
1/4 cup butter, 1/4 cup flour,
    2 cups milk,
  • 0:15 - 0:16
    2 cans drained tuna,
  • 0:16 - 0:18
    salt and pepper,
  • 0:18 - 0:19
    bread to toast.
  • 0:19 - 0:20
    Hey, guys.
  • 0:20 - 0:22
    This is Sal, from
    "You Gotta Eat."
  • 0:22 - 0:24
    I'm going to make
    one of my favorite dishes,
  • 0:24 - 0:26
    that my grandmother,
    Theresa, used to make.
  • 0:26 - 0:27
    Creamed tuna on toast.
  • 0:27 - 0:28
    So, let's start this recipe.
  • 0:28 - 0:30
    We gotta make a roux.
  • 0:30 - 0:32
First thing we're going to do is,
  • 0:32 - 0:34
    quarter stick of butter...
  • 0:34 - 0:38
Actually it's a HALF stick of butter.
  • 0:38 - 0:40
    Drop these in there.
  • 0:40 - 0:42
    Let them melt down.
  • 0:42 - 0:45
A little bit at a time,
    so your roux doesn't clump.
  • 0:45 - 0:47
    Now we're going to
    whisk in the flour.
  • 0:47 - 0:51
    If it ever decides
to come out of the cup.
  • 0:51 - 0:55
    Alright. We're
    whisking that in.
  • 0:55 - 1:00
    [Woman] Whisking a little?
You dumped the whole thing in.
  • 1:00 - 1:02
    [Woman laughs.]
  • 1:02 - 1:04
Alright. You can do that, too.
  • 1:04 - 1:06
    [Music.]
  • 1:06 - 1:09
    [Woman] When you're making
    a roux,
  • 1:09 - 1:11
    and you're incorporating liquid in,
  • 1:11 - 1:13
    you want to make sure
  • 1:13 - 1:16
that the liquid doesn't clump up.
  • 1:16 - 1:18
So, Sal is going to start pouring in
  • 1:18 - 1:20
    the next ingredient.
  • 1:20 - 1:21
    Which is...
  • 1:21 - 1:22
    [Sal] milk!
  • 1:22 - 1:24
    "Does a body good."
  • 1:24 - 1:26
Alright. A little at a time.
  • 1:26 - 1:28
    I remember my grandmother
    making this for me,
  • 1:28 - 1:30
    when I was younger.
  • 1:30 - 1:33
    She actually showed me how
    to make it, one time.
  • 1:33 - 1:36
But, this is one of my
    favorite dishes, that she made.
  • 1:36 - 1:38
    It is also an inexpensive
    dish to make.
  • 1:38 - 1:39
    Alright.
  • 1:39 - 1:42
At this point, you can start
adding salt and pepper to taste.
  • 1:42 - 1:44
    Do it to your liking.
  • 1:44 - 1:47
I am not a big salt guy, but
  • 1:47 - 1:50
we can add it as we go.
  • 1:50 - 1:53
    And a little pepper.
  • 1:53 - 1:54
    [Pepper mill grinds.]
  • 1:54 - 1:57
    Alright. Now, at this point,
  • 1:57 - 2:00
    I already have my toast
    in the toaster,
  • 2:00 - 2:02
    so I'm just going to
    drop it down.
  • 2:02 - 2:04
    Get that going.
  • 2:04 - 2:07
Turn my heat up a little bit.
  • 2:07 - 2:10
    Now I'm adding
    my tuna fish.
  • 2:10 - 2:12
    You can also substitute
  • 2:12 - 2:13
    canned chicken,
  • 2:13 - 2:14
    canned salmon,
  • 2:14 - 2:16
    or fresh lump crab meat.
  • 2:16 - 2:19
    Now, we just
    watch it thicken.
  • 2:19 - 2:21
    [Woman] I'm sure you've got
  • 2:21 - 2:23
    someone there who is interested
  • 2:23 - 2:26
    in any droppings, that might
    come her way.
  • 2:26 - 2:27
    Right, Zee?
  • 2:28 - 2:30
    You can see it
    getting thicker, already.
  • 2:30 - 2:35
    This is something that
is good for a cold winter day,
  • 2:35 - 2:37
    or a rainy day.
  • 2:37 - 2:40
Alright, so. We waited a few minutes.
  • 2:40 - 2:43
    I took a fork, because
i wanted to break up, a little bit,
  • 2:43 - 2:47
    more of the bigger pieces
    of the tuna fish.
  • 2:49 - 2:52
    It's really starting to
    thicken up, now.
  • 2:52 - 2:53
    Toast is done.
  • 2:53 - 2:56
    So, I'm going to
    shut this off, now.
  • 2:56 - 2:57
    Alright?
  • 2:57 - 3:00
    Take it off the heat
    for a second.
  • 3:01 - 3:03
    Grab my toast.
  • 3:04 - 3:10
    [Toast clatters
    against the plate.]
  • 3:12 - 3:14
    Alright.
  • 3:14 - 3:16
    You want to make sure,
  • 3:16 - 3:18
    before you put it
    on your toast,
  • 3:19 - 3:22
    that you put enough
    salt and pepper in it,
  • 3:22 - 3:24
    that it is seasoned good.
  • 3:24 - 3:26
    Alright.
    It's delicious. Alright.
  • 3:26 - 3:27
    Now, I'm going to
  • 3:27 - 3:29
    pour it right over
    the toast.
  • 3:29 - 3:38
    [Music.]
  • 3:38 - 3:40
    Alright? Beautiful.
  • 3:40 - 3:42
    There you have it.
  • 3:42 - 3:44
    [Spoon scrapes pan.]
  • 3:44 - 3:45
    Grandma Theresa's
  • 3:45 - 3:47
    creamed tuna on toast.
  • 3:47 - 3:50
    I almost forgot to wish
  • 3:50 - 3:52
    all the mothers out there
  • 3:52 - 3:54
    a happy Mother's Day,
  • 3:54 - 3:55
    including my own.
  • 3:55 - 3:56
    Judy.
  • 3:56 - 3:57
    Happy Mother's Day.
  • 3:57 - 4:00
    And, to my beautiful
    and loving wife, Kelly.
  • 4:00 - 4:02
