0:28 - 0:30made by you or by your mom,

0:30 - 0:32or some cake from
the nearest pastry shop - -
0:32 - 0:35just ordinary favorite cake.

0:35 - 0:40Of course, I have my ideas
about how a perfect cake looks like, -
0:40 - 0:42and you have your ideas.
-
0:43 - 0:45So let's compare our ideas.
-
0:46 - 0:48My cake can look like this -

0:51 - 0:53and it has some fillings inside -

0:53 - 0:55or like this

0:55 - 0:57or like this.

0:58 - 1:00That's why I'm here today,
-
1:00 - 1:05and I would like to talk about my concept
and about my creations. -
1:05 - 1:09So, people have been consuming
sweets for ages, -
1:09 - 1:14and if you try to find some information
about the first sweets - -
1:14 - 1:18for example, ice cream was invented
more than 4,000 years ago, -
1:18 - 1:22and people just mixed ice
with fruit and berries -
1:22 - 1:24and ate it like ice cream.
-
1:24 - 1:28But for many years in the past,
sugar was a true luxury item -
1:28 - 1:33and only rich people
could buy sweet things. -
1:33 - 1:36But in the 19th century,
everything changed, -
1:36 - 1:39and sugar became accessible
almost to everyone -
1:39 - 1:41because sugar production increased.

1:41 - 1:44At the same time, in Europe,
-
1:44 - 1:48the tradition to finish a meal
with some sweet dessert was born, -
1:48 - 1:51and this tradition still exists nowadays.
-
1:51 - 1:56So me, my family and I,
we are not an exception, -
1:56 - 2:01and we also usually eat some sweets,
some cakes after a meal. -
2:02 - 2:05Of course, there are some people
who don't want to eat any sweets, -
2:05 - 2:06but I'm not among them.
-
2:06 - 2:10I really want to eat cakes
and croissants, ice cream - -
2:10 - 2:11I like it -
-
2:11 - 2:14and this is one of the reasons
why I became a pastry chef. -
2:14 - 2:17Because I wanted to cook it
and I wanted to eat it. -
2:17 - 2:20So when I was 15,
I decided to be an architect. -
2:20 - 2:23I decided I want to be an architect.
-
2:23 - 2:27Of course, I had no idea
that objects of my design would be cake. -
2:28 - 2:32I graduated from the University
of Architecture and Design, -
2:32 - 2:35and I worked as an interior
designer for a few years, -
2:35 - 2:39but then something happened,
and I starting baking and cooking. -
2:39 - 2:43Of course, I cook
for me and for my family. -
2:43 - 2:45For me, it was very important
-
2:45 - 2:47when a dish, when a meal
-
2:47 - 2:50was beautifully presented
and beautifully served. -
2:50 - 2:53And what can be
more beautiful than a cake? -
2:53 - 2:56So, I don't know - for me, it's a cake.
-
2:57 - 2:59So I started baking,
-
2:59 - 3:01and in general,
-
3:01 - 3:06I saw, for the first time in my life,
I saw a mousse-glazed cake, -
3:06 - 3:08maybe six years ago.
-
3:08 - 3:11And I was totally shocked,
and for me it was like a miracle. -
3:11 - 3:15Oh my God, it was so shiny,
so bright, so unusual for me. -
3:15 - 3:18And it was something very new.
-
3:18 - 3:22And modern cake for me and for people,
-
3:22 - 3:27it's not just sponge cake
with cream and sugar and berries. -
3:27 - 3:29It's something bigger,
-
3:29 - 3:33and it's a real art,
and it's real science. -
3:33 - 3:34Modern pastry chefs
-
3:34 - 3:38are not just ordinary people
who make the same things day by day. -
3:39 - 3:40They compete with each other,
-
3:40 - 3:43they need to make some creative things,
-
3:43 - 3:46they need to make pieces of art.
-
3:46 - 3:51I would like to show you
a modern pastry world from that side -
3:51 - 3:53to show that it can be real art.
-
3:55 - 3:58I started baking, and, of course,
I had my social networks, -
3:58 - 4:01and I wanted to share
my passion, my hobby, -
4:01 - 4:03with my followers, with my friends,
-
4:03 - 4:08and I started posting pictures
on my Instagram. -
4:08 - 4:11Then I noted that some creative objects
-
4:11 - 4:15usually attracted much more attention
-
4:15 - 4:17and got more likes, for example.
-
4:18 - 4:22And I started to think about
my own moulds, own designs. -
4:22 - 4:23But unfortunately,
-
4:23 - 4:27it was almost impossible
to make some special objects -
4:27 - 4:30using just ordinary moulds
from mass production, -
4:30 - 4:35because everybody had the same moulds,
so I could make only the same things. -
4:35 - 4:41So I started to think about my own moulds,
and I started to think about a 3D printer. -
4:42 - 4:46And to be honest, at that time,
I knew nothing about 3D printing - -
4:46 - 4:48okay, so there is some 3D printer -
-
4:48 - 4:51but now I work with it a lot,
-
4:51 - 4:55and for me, it's just an ordinary tool,
like a standard mixer on my kitchen. -
4:55 - 4:58So I work with it almost every day.
-
4:59 - 5:033D printing was invented
maybe 30 or 40 years ago, -
5:03 - 5:06and with a 3D printer,
-
5:06 - 5:10we can print very tiny,
small objects, like for jewelry, -
5:10 - 5:12or big objects, like a house.
-
5:12 - 5:14And it's possible.
-
5:14 - 5:17Can you imagine a big printed house,
-
5:17 - 5:21400 square meters?
-
5:21 - 5:23It's possible.
-
5:23 - 5:26However, I work
with [more] modest objects, -
5:26 - 5:27just my moulds,
-
5:27 - 5:29and I work with plastic.
-
5:31 - 5:35My first mould, I printed
a couple of years ago, -
5:35 - 5:38and it was the cake from this mould.
-
5:40 - 5:43I wanted to make some special cake,
-
5:43 - 5:48and this cake has
a very aggressive design, -
5:48 - 5:50with sharp edges and strict lines
-
5:50 - 5:52and with provocative colors,
-
5:52 - 5:57and for me, it was important to make
something different to surprise people. -
5:57 - 6:00So we made this cake,
-
6:00 - 6:04and then this experiment was successful,
-
6:04 - 6:08and I realized that, okay,
now I can do anything I want. -
6:08 - 6:10Almost everything.
-
6:11 - 6:16I would like to talk
about the 3D printing process. -
6:17 - 6:20What you have to do, it's a small lesson.
-
6:20 - 6:22You need to make a 3D model.
-
6:22 - 6:24You can use any software.
-
6:24 - 6:31For example, I work with 3ds Max,
Grasshopper, ArchiCAD, AutoCAD, -
6:31 - 6:33Houdini, and different software.
-
6:33 - 6:38Then you have to print this mould,
and you have a printed mould. -
6:38 - 6:40I call it prototype.
-
6:44 - 6:45Then you have a printed mould,
-
6:45 - 6:50and you have to pour silicone on the top
and wait a few hours, -
6:50 - 6:53and you will have just some silicon mould.
-
6:53 - 6:57And inside, you have to put
some ingredients, some recipe. -
7:01 - 7:04It's a very important part for me
to create a very good recipe. -
7:04 - 7:08Because the recipe is very important.
-
7:08 - 7:13We need to have very good textures inside
and very good flavors inside. -
7:13 - 7:16Otherwise, people
won't buy it a second time. -
7:18 - 7:21You see, they were different layers,
and it was a cake. -
7:22 - 7:24(Laughter)
-
7:25 - 7:30So, when you have your recipe,
you put inside some ingredients, -
7:30 - 7:31and you need to freeze it,
-
7:31 - 7:36and after, you just need to finish it
with glazing or spraying, -
7:36 - 7:37and you have your cake.
-
7:37 - 7:40It's not the end.
-
7:40 - 7:43My last step is making photos and videos,
-
7:43 - 7:46and it's a big, separate part for me,
-
7:46 - 7:51and usually I try to make
very good visual content -
7:51 - 7:54because it's very important for me.
-
7:55 - 7:57Just a few people can eat my cakes.
-
7:57 - 8:01I don't have any mass production;
I don't have any shop now. -
8:01 - 8:03But everybody can see
my cakes, my creations. -
8:03 - 8:08So I want to share good pictures,
and I want to surprise people. -
8:08 - 8:11And this is my next step and my next goal.
-
8:11 - 8:14I want to surprise and inspire people.
-
8:14 - 8:17Because when you see my cake,
if you see it for the first time, -
8:17 - 8:20you can't understand what it is,
-
8:20 - 8:23whether it is, I don't know,
some piece of furniture, -
8:23 - 8:26some tray or weighs
or something, plastic toy. -
8:26 - 8:29But if you cut it, you have inside
a lot of different layers. -
8:29 - 8:34They can be crunchy or fluffy, gentle,
-
8:34 - 8:37with chocolate, with different fruits.
-
8:37 - 8:38It's a real cake.
-
8:39 - 8:40I want to inspire people,
-
8:40 - 8:43and some people write me,
-
8:43 - 8:46like "You are my inspiration,
and I started to bake. -
8:46 - 8:49I want to be a pastry chef;
I changed my career," -
8:49 - 8:52and I'm very happy about it
-
8:52 - 8:54because I want to share my passion also.
-
8:54 - 8:56And once,
-
8:57 - 9:02Malevich worked with his students
on some manufacturing, -
9:02 - 9:06and they were making
some design for a teapot. -
9:06 - 9:11And when the director of this [factory],
he came and saw this teapot, -
9:11 - 9:13and he said, "It's a good idea,
-
9:13 - 9:16but it's not very convenient,
-
9:16 - 9:17this teapot."
-
9:17 - 9:21And sometimes, my cake,
it's not just a cake. -
9:21 - 9:24It's the idea of a cake.
-
9:24 - 9:26And Malevich answered him,
-
9:26 - 9:29"It's not a teapot;
it's an idea of a teapot." -
9:29 - 9:33So I try to just make some ideas
and to share them. -
9:35 - 9:41For example, here, a lot of people
think that it's glass, but it's sugar. -
9:41 - 9:43This is a sugar box.

9:44 - 9:48And my next step -

9:48 - 9:53I wanted to explain
my project a little bit. -
9:53 - 9:56So it's a cherry cake.
-
9:57 - 10:00We used 3ds Max to make this mould,
-
10:00 - 10:04and we just made a 3D-modeled cherry,
-
10:04 - 10:08and we put inside,
inside an invisible box, -
10:08 - 10:09a lot of cherries,
-
10:09 - 10:11and then we hide this box.
-
10:11 - 10:16And at the end, we had
just a lot of cherries stuck together. -
10:17 - 10:18You see this process?
-
10:18 - 10:20Just a lot of cherries.
-
10:20 - 10:23Then, of course,
I finished it with my hand, -
10:23 - 10:28and, also, I can show dismould.
-
10:28 - 10:30It was demoulded.
-
10:31 - 10:34Then we made a silicon mould,
and, of course, we made a cake, -
10:34 - 10:37and after you cover it with glaze,
-
10:38 - 10:41it looks like real cherries
just stuck together. -
10:41 - 10:46Of course, if you cut it,
you have different layers inside. -
10:46 - 10:49This is the cherry cake,
of course with cherry taste, -
10:49 - 10:51and with dark chocolate and cherry.

10:51 - 10:55And by the way, this video
got more than nine million views, -
10:55 - 10:59and for me, it was
a very big surprise also. -
10:59 - 11:01(Music)

11:02 - 11:05Yeah, so it's eatable.
-
11:06 - 11:07Yeah.
-
11:10 - 11:15So my next cake, I call it cluster cake.
-
11:15 - 11:19Using a Voronoi diagram,
we split this shape. -
11:19 - 11:23We tried to make a stone effect,
so, like, we have a lot of stones. -
11:23 - 11:27Then, we just broke off some of them,
-
11:27 - 11:31and we have this stone cake mould.
-
11:31 - 11:33It looks very nice.
-
11:34 - 11:40This is work of a Venezuelan artist,
and his name is Jose Margulis, -
11:40 - 11:44and he works with 3D sculptures
and compositions. -
11:45 - 11:49He works usually with plastic,
metal, and acrylic sheets, -
11:49 - 11:52but he sent me his drawings,
and I made this. -
11:52 - 11:55But I made it of chocolate,
-
11:55 - 11:59so they were just chocolate sheets.
-
12:00 - 12:02And of course, we made a video.
-
12:02 - 12:05Every time, we try to make
photos and videos. -
12:06 - 12:10Here, we're using also a milling machine.
-
12:12 - 12:16This was a yogurt cake,
by the way, with berry. -
12:17 - 12:22We use a milling machine
to cut these chocolate sheets. -
12:22 - 12:26I just prepared a lot of sheets
with colorful chocolate, -
12:27 - 12:31and we made it in my city
in some laboratory. -
12:31 - 12:35This guy created, also,
this milling machine by himself. -
12:35 - 12:38Here we tried to show
how we can collaborate. -
12:38 - 12:41How different people
from different professions -
12:41 - 12:44can make some
interesting project together. -
12:44 - 12:48We were three people -
artist, engineer, and pastry chef - -
12:48 - 12:52and we created such a collection.
-
12:53 - 12:55We called it Kinetic Tarts,
-
12:55 - 12:58and [in total], we made
four different tarts. -
13:02 - 13:05Here is a picture of ferrofluid.
-
13:06 - 13:09Ferrofluid is some liquid
that can be strongly magnetized -
13:09 - 13:12in presence of magnetic fields.
-
13:12 - 13:15It was a big inspiration for me.
-
13:15 - 13:21I dreamed about this shape,
and finally I made it like a cake. -
13:21 - 13:23We made it just two months ago.
-
13:23 - 13:27Specially, this shape I made
for a collaboration -
13:27 - 13:29with a Spanish pastry chef.
-
13:30 - 13:33His name is Jordi Bordas,
and he's the world champion. -
13:34 - 13:37And here, my second main goal,
-
13:37 - 13:40I want to explain to you
-
13:40 - 13:45that modern cakes, they can be healthy.
-
13:45 - 13:48So here, for example,
is a totally vegan cake. -
13:49 - 13:53There is no cream,
no butter, no flour, and no eggs. -
13:53 - 13:56But it's still a mousse cake
with airy textures inside. -
13:56 - 14:01Instead of this, we have inside
mango, lychee, passion fruit, strawberry, -
14:01 - 14:03and even cactus flower.

14:04 - 14:06This cake was very tasty,
-
14:06 - 14:12and it was quite complex to create
this recipe without these ingredients, -
14:12 - 14:14even without gelatin or cream,
-
14:14 - 14:15it's not easy.
-
14:16 - 14:18You have to be smart,
-
14:18 - 14:19you have to know a lot
-
14:19 - 14:23about chemical processes,
physical processes -
14:23 - 14:25to create such a recipe.
-
14:25 - 14:29I would like to [say] that modern cakes,
-
14:29 - 14:33it's not just sugar with berries,
with butter, mixed together. -
14:33 - 14:35They can be healthy.
-
14:35 - 14:37We can keep all vitamins inside.
-
14:37 - 14:43We can have strong flavor
without any special attention. -
14:44 - 14:46It's also very important for me
-
14:46 - 14:50to share that we can make
very good and tasty cakes -
14:52 - 14:54low in sugar and low in fat.

15:00 - 15:02So my main message -

15:03 - 15:09if we eat this cake
just a few times during a year, -
15:09 - 15:14maybe for some celebration,
for a birthday, for some holiday, -
15:15 - 15:20try to find your perfect,
tasty, beautiful cake, like I did. -
