is in your opinion natural wine particularly since you are not affiliated with any organization... but

you... I find in your wines everything I think should be in a natural wine..."

at the estuary but at its origin its spring... the spring of wine is the grape... the vineyard...

there the story begins...how has been planted... there is the spring ...how you planted a vineyard... we start talking about natural

wines respecting the earth and its soil... I by respecting my soil understand that the vineyard respects

me too and can give me what I hope... well not always actually because hail can come and despite the

soil wants to give me something I cannot get it... so natural wine in my opinion is not using pesticides

that destroy vines systemic treatments that end up in the bunches... and then in the wine... without doubts and that

is a form of respect for the person that is going to drink your wine... and since to me wine is art is

like a painting and I am somehow the painter... the first one who is going to enjoy that paint it is

me... so like it or not I will make the wine with the colors I like to use... and I want to use the colors

of nature without any artificial additives... it is like the use of yeast... adding yeast is snubbing

the wine... everyone talks about these "selected yeasts"... it is an artificial insemination... it would

be like I want a child from my wife... and I will force her to make love with another man in order to get a child as I believe he has different traits than mine...

that child is not going to be my son... and on the same way if you use those yeast you cannot talk about

terroir from wines made that way... as they are not anymore the natural children of that soil of that place

natural wine then you can discuss if or not to use sulfites.. we do use 2 grams (every 2000 liters) ...

my dream is to be able to make it without sulfites even though some people say it is impossible... maybe

with time and dedication I will... I respect a lot the ones who bear the flag (of natural wines) and

they believe in this... sometimes even smashing their face into it... Myself so far the 2 grams of sulfites

I must add them... I am not able yet... didn't grow yet to that culture that allows me to work without

sulfites... but I am getting there... to me is also a dream and I want that dream becoming reality..."

confusing more often than not the consumer who doesn't understand what is going on... on the other hand

you teach me that it is easier to fish in dark waters... and maybe what is happening is intentional so

to make unclear the few things that are supposed to be clear about making wines. Let's understand that

wine has its own time in order to be made...it manages on its own its own limits and satisfactions it

is like our life it evolves bringing to us joy and sorrow, with wine I always repeat you will always find some roses

between the thorns... this is what I think... don't believe in all of those associations they should do one not many... all these distinctions are just

obstacles to the people that like me believe in natural winemaking and result the son of the soil and terroir

that I will end up in huge fights there as they are one against the other trying to ascertain the sex of the angels... and...

... what they do is just impossible, it's stupid and without significance... unless, it makes sense to them if they do it just to scrap some more

money out ...there are people that from these events related to natural wines they make great profits

in their pockets... claiming that they are themselves natural producers and using these events in order

to launch some wines that they are bad or more or less defective! The consumer should not ever associate the

idea of a natural wine as a defective wine. The wine first must be a good one... then also natural...

the basis behind is that is not defective please do not accept when they tell you ... it is fine that

slight defect is because is natural... no... not true... the fact is natural does not justify defects...

so sometimes they use the natural card to hide justify defects and another confusing element is here...

some association are actually telling us that the good wine is the defective one... this is not a good tale to say...

and telling tales is not in my ethic nor is my intention and I wouldn't be able to watch myself in the mirror in the morning

if I were starting to tell those stories, that wouldn't be good when I go to the bathroom and I need to shave myself which does not happen often. That's all...
