    Olive oil is 100% fat;

    Pancake mix, on the other hand,

    is only about 11% fat.

    And, yet, olive oil is good for you,

    and pancake mix is not.

    Why is that?

    As it turns out,

    the amount of fat we eat
  • 0:30 - 0:31
    doesn't impact our weight
  • 0:31 - 0:32
    or our cholesterol
  • 0:32 - 0:33
    or our risk of heart disease
  • 0:33 - 0:36
    nearly as much as what kind of fat we eat.
  • 0:36 - 0:37
    But let's back up:

    What is fat?
  • 0:39 - 0:41
    If we were to zoom in on a salmon,
  • 0:41 - 0:42
    which is a fatty fish,
  • 0:42 - 0:43
    past the organs,
  • 0:43 - 0:44
    past the tissues,
  • 0:44 - 0:45
    into the cells,
  • 0:45 - 0:47
    we would see that the stuff we call fat
  • 0:47 - 0:51
    is actually made up of molecules called triglycerides,
  • 0:51 - 0:53
    and they are not all alike.
  • 0:53 - 0:54
    Here's one example.

    Those three carbons on the left, that's glycerol.
  • 0:56 - 0:57
    Now, you can think of that as the backbone
  • 0:57 - 1:00
    that holds the rest of the molecule together.

    The three long chains on the right
  • 1:01 - 1:02
    are called fatty acids,
  • 1:02 - 1:05
    and it's subtle differences in the structures of these chains
  • 1:05 - 1:07
    that determine whether a fat is,
  • 1:07 - 1:09
    let's say, solid or liquid;
  • 1:09 - 1:11
    whether or not it goes rancid quickly;
  • 1:11 - 1:15
    and, most importantly, how good or how bad it is for you.

    Let's take a look at some of these differences.

    One is length.
  • 1:18 - 1:20
    Fatty acids can be short or long.
  • 1:20 - 1:21
    Another, more important difference
  • 1:21 - 1:24
    is the type of bond between the carbon atoms.
  • 1:24 - 1:27
    Some fatty acids have only single bonds.
  • 1:27 - 1:30
    Others have both single and double bonds.

    Fatty acids with only single bonds
  • 1:31 - 1:33
    are called saturated,
  • 1:33 - 1:35
    and those with one or more double bonds
  • 1:35 - 1:37
    are called unsaturated.
  • 1:37 - 1:39
    Now, most unsaturated fats are good for you,
  • 1:39 - 1:42
    while saturated fats are bad for you in excess.
  • 1:42 - 1:45
    For saturated fats, the story pretty much ends there
  • 1:45 - 1:47
    but not for unsaturated fats.
  • 1:47 - 1:49
    The double bonds in these molecules
  • 1:49 - 1:51
    have a kind of weird property;
  • 1:51 - 1:52
    they're rigid.
  • 1:52 - 1:54
    So, that means there are two ways
  • 1:54 - 1:56
    to arrange every double bond.
  • 1:56 - 1:57
    The first is like this,
  • 1:57 - 1:59
    where both hydrogens are on same side
  • 1:59 - 2:01
    and both carbons are on the same side.

    The second way is like this.

    Now the hydrogens and carbons
  • 2:04 - 2:07
    are on opposite sides of the double bond.

    Now, even though both of these molecules
  • 2:08 - 2:11
    are made up of exactly the same building blocks,
  • 2:11 - 2:13
    they are two completely different substances,
  • 2:13 - 2:16
    and they behave completely differently inside of us.

    The configuration on the left is called CIS,
  • 2:19 - 2:20
    which you've probably never heard of.
  • 2:20 - 2:22
    The one of the right is called TRANS,
  • 2:22 - 2:25
    and you probably have heard of trans fats before.

    They don't go rancid,
  • 2:26 - 2:28
    they're more stable during deep frying,
  • 2:28 - 2:30
    and they can change the texture of foods
  • 2:30 - 2:32
    in ways that other fats just can't.
  • 2:32 - 2:34
    They're also terrible for your health,
  • 2:34 - 2:36
    by far worse than saturated fat,
  • 2:36 - 2:38
    even though technically they're a type
  • 2:38 - 2:40
    of unsaturated fat.
  • 2:40 - 2:41
    Now, I know that seems crazy,
  • 2:41 - 2:43
    but your body doesn't care
  • 2:43 - 2:45
    what a molecule looks like on paper.
  • 2:45 - 2:47
    All that matters is the 3-D shape
  • 2:47 - 2:48
    where the molecule fits,
  • 2:48 - 2:48
    where it doesn't,
  • 2:48 - 2:51
    and what pathways it interferes with.
  • 2:51 - 2:52
    So, how do you know if a food
  • 2:52 - 2:54
    has trans fat in it?
  • 2:54 - 2:55
    Well, the only sure way to know
  • 2:55 - 2:56
    is if you see the words,
  • 2:56 - 2:59
    "partially hydrogenated" in the ingredients list.
  • 2:59 - 3:02
    Don't let nutrition labels or advertising fool you.
  • 3:02 - 3:04
    The FDA allows manufacturers to claim
  • 3:04 - 3:06
    that their products contain
  • 3:06 - 3:08
    "0" grams of trans fat
  • 3:08 - 3:13
    even if they actually have up to half a gram per serving.
  • 3:13 - 3:14
    But there are no hard and fast rules
  • 3:14 - 3:16
    about how small a serving can be,
  • 3:16 - 3:19
    and, that means, you'll have to rely on seeing those key words,
  • 3:19 - 3:20
    partially hydrogenated,
  • 3:20 - 3:23
    because that's how trans fats are made,
  • 3:23 - 3:26
    by partially hydrogenating unsaturated fats.
  • 3:26 - 3:29
    So, let's go back to our olive oil and pancake mix from before.
  • 3:29 - 3:32
    Olive oil is 100% fat.
  • 3:32 - 3:34
    Pancake mix is only 11% fat.
  • 3:34 - 3:37
    But olive oil is mostly unsaturated fat,
  • 3:37 - 3:40
    and it has no trans fat at all.
  • 3:40 - 3:42
    On the other hand, more than half the fat
  • 3:42 - 3:45
    in pancake mix is either saturated or trans fat.
  • 3:45 - 3:47
    And, so, even though olive oil has 10 times
  • 3:47 - 3:49
    as much fat as pancake mix,
  • 3:49 - 3:51
    it's healthy for you,
  • 3:51 - 3:52
    whereas pancake mix is not.
  • 3:52 - 3:54
    Now, I'm not trying to pick on pancake mix.
  • 3:54 - 3:55
    There are lots of foods
  • 3:55 - 3:57
    with this type of fat profile.
  • 3:57 - 3:58
    The point is this:
  • 3:58 - 4:00
    It's not how much fat you eat,
  • 4:00 - 4:02
    it's what kind of fat.
  • 4:02 - 4:05
    And what makes a particular fat healthy or unhealthy
  • 4:05 - 4:07
    is its shape.
