Food as healing | Aliki Panopoulou | TedxAcademy

  • 0:14 - 0:15
    Good evening.
  • 0:15 - 0:17
    My name is Aliki Panopoulou,
  • 0:17 - 0:21
and today I will talk to you
    about weight loss.
  • 0:21 - 0:25
I wish I could use three sentences
  • 0:25 - 0:27
    so that you understand everything,
  • 0:27 - 0:28
    to have said it all.
  • 0:29 - 0:30
    But this is impossible,
  • 0:30 - 0:34
just as it is impossible to lose weight
  • 0:34 - 0:36
    without regaining it back.
  • 0:37 - 0:41
I am in need of my extra weight -
that is the reason I gain weight.
  • 0:41 - 0:43
I am lucky that I gain weight.
  • 0:43 - 0:48
If I didn't gain weight, I could get
seriously sick or I could suffocate.
  • 0:49 - 0:54
    My weight is an essential,
    necessary protection.
  • 0:54 - 0:57
    That is the reason why,
    even if I lose weight,
  • 0:57 - 1:00
I want to protect myself again,
    and I regain weight.
  • 1:00 - 1:03
    All this sounds too weird,
  • 1:03 - 1:05
    paranoid, irrational.
  • 1:05 - 1:07
    It's irrational.
  • 1:07 - 1:11
Weight loss is not a rational treatment,
  • 1:11 - 1:13
    it is strictly emotional.
  • 1:13 - 1:18
    Obesity is a psychosomatic disease,
  • 1:18 - 1:20
    meaning that an obese person,
  • 1:20 - 1:23
a person who has weight disorder,
  • 1:23 - 1:26
    cannot recognise
what they really feel, their emotions.
  • 1:26 - 1:28
    And it's not their fault.
  • 1:29 - 1:33
    They cannot express
    and verbalise their feelings,
  • 1:33 - 1:36
    so they express themselves
    through physical symptoms.
  • 1:36 - 1:37
    I have been active professionally
  • 1:37 - 1:40
in the weight loss industry for 30 years
  • 1:40 - 1:45
and, sadly, I see the same story
    happening over and over again.
  • 1:45 - 1:51
    The truth is that during
the first 10 years of my career,
  • 1:51 - 1:53
it was exactly the same story.
  • 1:53 - 1:57
    What is this story
    that I will narrate shortly?
  • 1:57 - 1:59
    Because it's a short one.
  • 1:59 - 2:02
    Weight loss usually lasts
    for three months.
  • 2:02 - 2:05
If someone wants to lose weight,
    they visit a nutritionist,
  • 2:05 - 2:08
and they ask to lose weight
in a short period of time.
  • 2:08 - 2:11
    The nutritionist takes body measurements,
  • 2:11 - 2:14
advises them about the standard levels
    of the body mass index,
  • 2:14 - 2:17
    suggests that they have
    to start working out
  • 2:17 - 2:20
    because diet together with workout
    have great results,
  • 2:20 - 2:23
    advises that they are not
supposed to eat after 8 pm,
  • 2:23 - 2:26
    that they are not supposed
to eat sugar and saturated fat,
  • 2:26 - 2:31
they have to have at least
three to five meals a day.
  • 2:31 - 2:36
    They're given a list
    of healthy and unhealthy foods,
  • 2:36 - 2:40
what the effects are of vitamin A,
    vitamin B complex, vitamin D,
  • 2:40 - 2:44
    and they're recommended a diet,
    usually in the following form.
  • 2:44 - 2:47
I will outline it for you.
  • 2:47 - 2:51
    Morning: 30 grams of cornflakes,
a cup of milk and a piece of fruit,
  • 2:51 - 2:55
    or toast consisting of
    two slices of toasted bread,
  • 2:55 - 2:59
    30 grams each,
and 30 grams of turkey ham,
  • 2:59 - 3:02
    30 grams of low-fat cheese
and a glass of orange juice.
  • 3:02 - 3:07
    10 am: a low-fat yoghurt or a cereal bar.
  • 3:07 - 3:12
Noon: 90 grams or 120 grams of fish,
  • 3:12 - 3:14
    or chicken without the skin,
  • 3:14 - 3:18
    and two cups of vegetables
with two teaspoons of olive oil.
  • 3:18 - 3:22
    Afternoon: 4–6 medium-sized strawberries,
  • 3:22 - 3:25
    a peach of this size,
  • 3:25 - 3:28
    of this diameter and thickness.
  • 3:28 - 3:34
Evening: 60 grams of low-fat white cheese
or two spoons of cottage cheese
  • 3:34 - 3:38
    with two rye Melba toasts
or 30 grams of rye bread
  • 3:38 - 3:41
    and two cups of vegetables
with two teaspoons of olive oil.
  • 3:42 - 3:46
So, the obese person takes the diet,
  • 3:46 - 3:49
the list with all the information
    about the vitamins,
  • 3:49 - 3:51
    the healthy and unhealthy foods,
  • 3:51 - 3:56
    and they go home, determined
    to receive their punishment.
  • 3:57 - 4:01
They try, struggle, count the grams,
  • 4:01 - 4:04
they're not supposed to be hungry,
    they're not supposed to crave,
  • 4:04 - 4:08
    they must count calories,
must not eat after 8 pm,
  • 4:08 - 4:14
and then comes that very moment
when they behave like a maniac
  • 4:14 - 4:19
    with that uncontrollable urge
to send the cauliflower to hell,
  • 4:19 - 4:22
    along with the broccoli,
    the green vegetables,
  • 4:22 - 4:25
the working out, and the diet,
  • 4:25 - 4:27
and they eat Nutella with a spoon...
  • 4:27 - 4:29
    (Laughter)
  • 4:29 - 4:31
    ...and then pizza...
  • 4:31 - 4:32
    (Applause)
  • 4:32 - 4:33
    ...and then...
  • 4:33 - 4:35
    (Applause)
  • 4:35 - 4:37
    ...bread and cheese.
  • 4:37 - 4:38
    And the pralines,
  • 4:38 - 4:40
    and then olives,
  • 4:40 - 4:41
    and then?
  • 4:41 - 4:44
    Then, they go back
    to the nutritionist, terrified,
  • 4:44 - 4:46
    full of guilt and qualms
  • 4:46 - 4:48
    and self-accusation.
  • 4:48 - 4:52
    "I am incapable, once again
    I failed, I did nothing,
  • 4:52 - 4:55
    I don't show self-discipline,
    will and restraint."
  • 4:55 - 4:56
    And then?
  • 4:56 - 4:58
    Then, detox.
  • 4:59 - 5:01
Just three yoghurts for the whole day.
  • 5:01 - 5:05
    Or only fruit juices.
  • 5:05 - 5:11
Or even less food, 80 grams,
because it's all a balance of calories.
  • 5:13 - 5:14
    And then?
  • 5:14 - 5:16
Then, a life full of diets.
  • 5:16 - 5:18
I lose weight, I regain it.
  • 5:18 - 5:24
    bulimia, diet, weight loss,
    weight gain, bulimia, disappointment.
  • 5:25 - 5:32
This was exactly what was happening
in my office for the first 10–12 years.
  • 5:32 - 5:36
The scene was more or less like this:
on the one side the obese person,
  • 5:36 - 5:39
a maniac on food, polyphagia and diets.
  • 5:40 - 5:43
On the other side was me,
and I had also become a maniac.
  • 5:44 - 5:49
I was obsessively searching for the reason
    why people don't lose weight
  • 5:49 - 5:51
and don't keep their weight stable.
  • 5:51 - 5:54
I could perceive why they gained weight.
  • 5:54 - 6:01
On the one hand, the obese person
had low self-esteem on their competency
  • 6:01 - 6:05
    to keep their weight stable,
and the diet, since they messed it up.
  • 6:05 - 6:07
On the other hand, there was me,
  • 6:07 - 6:11
    and I also had professional
    low self-esteem,
  • 6:11 - 6:14
    since I always felt inefficient.
  • 6:15 - 6:20
No matter what we were doing,
no matter the diet I was giving them,
  • 6:20 - 6:23
we always reached the very same result.
  • 6:23 - 6:25
It was like beating the air.
  • 6:27 - 6:32
    Finally, watching this situation,
  • 6:32 - 6:38
I decided that since we were
    always facing a barrier,
  • 6:38 - 6:42
and this barrier was called bulimia -
  • 6:42 - 6:45
    which made them gain weight,
    mess up with their diet,
  • 6:45 - 6:51
    and emphasise their difficulty
to stick to their diet -
  • 6:51 - 6:54
    that I'd focus on bulimia.
  • 6:54 - 6:58
Luckily, I was passionate about this job,
  • 6:58 - 7:01
and I had many books to study from.
  • 7:01 - 7:04
There was a lot of knowledge to acquire.
  • 7:05 - 7:09
So, I dared to reverse the rules.
  • 7:09 - 7:11
    I reversed everything.
  • 7:11 - 7:14
I worked with completely opposite rules.
  • 7:14 - 7:19
    The first reversal I made
    was to allow bulimia.
  • 7:19 - 7:22
I didn't just allow and legalise it,
  • 7:22 - 7:24
    but I even encouraged them
  • 7:24 - 7:28
    to continue their bulimia
    during the weight-loss period.
  • 7:28 - 7:30
They were saying, "I must not eat."
  • 7:30 - 7:32
    I was responding, "Eat."
  • 7:32 - 7:35
    (Laughter)
  • 7:35 - 7:40
    I understood that bulimia
    was the only truth
  • 7:40 - 7:45
    which could help a person
    who had a weight disorder.
  • 7:45 - 7:48
    It was their first emotion.
  • 7:48 - 7:49
    And here is why:
  • 7:49 - 7:54
    When a baby is born,
    it comes into the world frightened;
  • 7:55 - 7:56
    it is afraid, it cries.
  • 7:56 - 7:58
It is hungry, and it cries,
  • 7:58 - 8:01
    and its mother cradles it
  • 8:01 - 8:03
    to feed it.
  • 8:03 - 8:05
    And then, the milk flows.
  • 8:05 - 8:11
At that point, the first connection
between food and emotion is created.
  • 8:11 - 8:14
Because the baby doesn't take merely milk.
  • 8:14 - 8:19
At that point, the mother's love,
    affection and tenderness also flow,
  • 8:19 - 8:21
    as well as security
    and eye-to-eye contact.
  • 8:22 - 8:28
So, the baby is full, calm,
    satisfied, relaxed,
  • 8:29 - 8:32
and falls asleep in that ultimate embrace.
  • 8:32 - 8:36
It's a time of ultimate bliss.
  • 8:36 - 8:42
While we are growing up, that connection
    with food and emotion continues.
  • 8:42 - 8:45
    Birthday: birthday cakes.
  • 8:45 - 8:49
    Celebrations, promotions,
    entering university.
  • 8:49 - 8:54
    Feasts on fine dining tables,
    delicious food, drinks and sweets.
  • 8:54 - 9:00
    On TV, chocolate is advertised
in connection with love or heartbreak.
  • 9:00 - 9:05
Even after death, after the funeral,
    there is a dinner.
  • 9:06 - 9:09
So, such a link between food
    and our emotions
  • 9:09 - 9:12
    exists throughout our lives.
  • 9:12 - 9:14
    During our adulthood,
  • 9:14 - 9:17
for a person who has a weight disorder,
  • 9:17 - 9:20
    when they face stressful factors,
  • 9:20 - 9:22
    high-pressure situations,
  • 9:22 - 9:24
    the emotions which are created,
  • 9:24 - 9:27
and since they’re not in a position
    to recognise them
  • 9:27 - 9:30
    by reflex, subconsciously,
  • 9:30 - 9:31
    what is their memory?
  • 9:31 - 9:33
    The result is polyphagia.
  • 9:33 - 9:35
    What is polyphagia?
  • 9:35 - 9:41
In simple terms, it is a vehicle
    that someone may ride,
  • 9:41 - 9:42
    and it takes them back,
  • 9:42 - 9:46
retraces them to that very period
    of ultimate bliss.
  • 9:47 - 9:50
    It is no coincidence
    that after a big meal,
  • 9:50 - 9:53
    we become lethargic.
  • 9:54 - 9:59
    Therefore, I forbade ceasing bulimia
  • 9:59 - 10:05
since it was the only anaesthetic,
    opiate, relaxer
  • 10:05 - 10:08
that a person with weight disorder has.
  • 10:09 - 10:11
    The second reversal I did
  • 10:11 - 10:15
    was I forbade food deprivation,
  • 10:15 - 10:17
both in terms of quantity -
  • 10:17 - 10:20
    I work with portions,
    restaurant portions, supposedly -
  • 10:20 - 10:22
    and flavours.
  • 10:23 - 10:24
    Why?
  • 10:24 - 10:28
    Food plays a dual role.
  • 10:28 - 10:33
On the one hand, it gives you
    nutrition, energy and health,
  • 10:33 - 10:35
therefore, you live because of food.
  • 10:35 - 10:37
    On the other hand,
  • 10:37 - 10:39
    it gives you appealing flavours.
  • 10:39 - 10:44
It's normal when you are hungry,
when you feel your stomach empty,
  • 10:44 - 10:47
to think of something to eat
    that you will enjoy.
  • 10:48 - 10:53
    It's normal to desire
    French fries or chocolate.
  • 10:53 - 10:57
    It's not normal
    not to desire French fries.
  • 10:57 - 11:00
    So, people must not starve.
  • 11:00 - 11:02
    They eat portions
  • 11:02 - 11:05
    because it is a fact
  • 11:05 - 11:10
that it is not normal to follow a diet,
    specifically, a low-calorie diet.
  • 11:10 - 11:13
    So when someone succeeds,
they are more like a hero.
  • 11:14 - 11:17
    We should not presume
that it's normal to be on a diet,
  • 11:17 - 11:20
    and when you fail,
    you are incapable and inadequate.
  • 11:20 - 11:23
    The third reversal I made
  • 11:23 - 11:28
is that I realised that weight loss
has more than the two stages -
  • 11:28 - 11:30
    weight loss and maintenance.
  • 11:30 - 11:33
    Usually, nobody actually gets
    to the maintenance stage -
  • 11:33 - 11:34
    they quit earlier.
  • 11:34 - 11:36
    Weight loss has four stages.
  • 11:36 - 11:41
    There are four consecutive stages,
  • 11:41 - 11:46
and a person with weight disorder
    needs a lot of help
  • 11:46 - 11:50
to take as much time as they need
    in each of the stages.
  • 11:50 - 11:52
    During the first stage,
  • 11:52 - 11:57
they observe, watch, perceive and feel.
  • 11:57 - 12:02
    They experience their bulimia.
    They face and confront it.
  • 12:02 - 12:08
    During the second stage,
    having already understood
  • 12:08 - 12:11
that eating is not a crime,
  • 12:11 - 12:13
they are able to form an opinion.
  • 12:14 - 12:18
They have set their new boundaries
    and explored new borders.
  • 12:18 - 12:23
At the second stage, you'll usually see
that they don't follow their diet,
  • 12:23 - 12:27
    or they skip a meal
or are late for an appointment.
  • 12:27 - 12:30
When a person reaches the third stage,
  • 12:30 - 12:33
at this point they are able
to focus on the organic part.
  • 12:34 - 12:39
At this point, they want to learn
    about the benefits of vitamins
  • 12:39 - 12:41
because at this stage they can act.
  • 12:41 - 12:43
They lose weight at this stage
  • 12:43 - 12:46
In order to pass to the fourth stage,
  • 12:46 - 12:50
    they continue wanting
to take care of the self
  • 12:50 - 12:52
    they have discovered,
  • 12:52 - 12:55
    by setting a different frame
    to their own image.
  • 12:57 - 13:04
An obese person seeks the image
    that they have to acquire.
  • 13:04 - 13:08
    They either hide the image
that they have behind their volume,
  • 13:08 - 13:12
    or with their volume
    they highlight another image.
  • 13:13 - 13:18
    No one should starve,
    especially not an obese person.
  • 13:18 - 13:20
    They shouldn't suffer,
  • 13:20 - 13:23
    shouldn't torture themselves
    while following a diet.
  • 13:23 - 13:27
    An obese person
    shouldn't have prohibitions,
  • 13:27 - 13:30
    sermons, instigations, promptings.
  • 13:31 - 13:35
You simply have to join hands with them
  • 13:35 - 13:39
to make it possible for them
to join hands with their own self
  • 13:39 - 13:42
which is hidden behind their volume.
  • 13:42 - 13:47
We live in an era when it is not enough
  • 13:47 - 13:50
    to focus merely on whether
    you lose or gain weight.
  • 13:51 - 13:54
    My priority nowadays
  • 13:54 - 14:00
    is for people to remain
    detoxified and alkalised,
  • 14:00 - 14:02
    to preserve their health.
  • 14:02 - 14:05
Besides, obesity is a form of oxidation,
  • 14:05 - 14:08
    which means that when someone
changes the PH of their body
  • 14:08 - 14:12
    and turns it to alkaline,
    they lose weight easily.
  • 14:12 - 14:14
There are four diseases of our era:
  • 14:15 - 14:20
    cancer, depression, leaky gut
    syndrome and metabolic syndrome.
  • 14:20 - 14:24
    Food plays a crucial role
    in all these diseases,
  • 14:24 - 14:27
    either to prevent the disease
  • 14:27 - 14:33
    or to regain health
    by following a healthy diet.
  • 14:34 - 14:38
    I personally suggest
    the Mediterranean diet
  • 14:38 - 14:41
in combination with a macrobiotic diet.
  • 14:41 - 14:45
    The macrobiotic diet taught me
    the use of cereals,
  • 14:45 - 14:48
    and indeed, I was lucky
    to learn of their importance
  • 14:48 - 14:50
    since they're very precious foods.
  • 14:51 - 14:53
    Cereals, these complex carbohydrates,
  • 14:53 - 14:58
    such as brown rice, quinoa,
    millet, oat, spelt
  • 14:59 - 15:04
    are very precious foods since,
first of all, they provide us with fibres
  • 15:05 - 15:08
which are necessary for the proper
    functioning of the intestine,
  • 15:08 - 15:11
    which is the basic organ
    of our immune system.
  • 15:11 - 15:15
    They provide us
    with nutrients and antioxidants,
  • 15:15 - 15:20
which are a body armour against cancer.
  • 15:20 - 15:24
    But the most important
    assistance they provide
  • 15:24 - 15:27
to a person who is on a weight loss diet,
  • 15:27 - 15:31
    since they are complex carbohydrates,
    is that they are slow-burning.
  • 15:31 - 15:35
They control insulin, in other words,
the level of glucose in blood,
  • 15:35 - 15:37
    and so reduce hunger.
  • 15:37 - 15:40
    And when hunger is reduced,
    a person can focus more
  • 15:40 - 15:45
    on the psychological part
    of the weight loss.
  • 15:45 - 15:49
We are living in a time of crisis
  • 15:50 - 15:55
    in which people experience pressure,
    both economic and psychological,
  • 15:55 - 15:58
and are full of agony and fear
    about the future.
  • 15:59 - 16:01
    So, in this era,
  • 16:01 - 16:06
    people have the obligation
  • 16:06 - 16:11
to find a way to take care
of their psychological and physical health
  • 16:11 - 16:16
    in order to remain healthy
    and deal with the crisis.
  • 16:17 - 16:23
    In the future, I believe
    that human beings need -
  • 16:23 - 16:25
    because now, in this era,
  • 16:25 - 16:30
    the tendency is to return
to a more natural diet -
  • 16:30 - 16:33
    to find more natural means
  • 16:33 - 16:38
to deal with their health better,
    to maintain their health.
  • 16:38 - 16:42
    In the future, human beings
need to be educated at school
  • 16:42 - 16:46
    about how to remain
    detoxified and healthy,
  • 16:46 - 16:51
to feel hunger, to have the insight
    and the knowledge
  • 16:51 - 16:55
    to choose food that provides
    both joy and nourishment,
  • 16:55 - 16:59
and not to depend on nutritionists
  • 16:59 - 17:02
and the industry of processed foods
  • 17:02 - 17:04
to dictate to them what to eat,
  • 17:05 - 17:09
    and often to dictate
    the image of themselves.
  • 17:09 - 17:14
    Nobody achieves their dream
    of weighing 50-52 kg
  • 17:14 - 17:19
    by consuming low-fat products.
  • 17:19 - 17:22
People must eat food that is "alive."
  • 17:22 - 17:27
If you soak barley or lentils,
    they will give you sprouts.
  • 17:27 - 17:33
    If you soak corn flakes,
I don't know what they will give you.
  • 17:34 - 17:38
    Finally, I believe that
the basic food for people is love.
  • 17:39 - 17:43
And if a person seeks it through food,
  • 17:43 - 17:45
either by eating in small portions
  • 17:45 - 17:48
    or by filling their body
    and getting fatter,
  • 17:48 - 17:51
    I wonder, is this bad
  • 17:51 - 17:53
    or just complicated?
  • 17:53 - 17:54
    Thank you.
  • 17:54 - 17:56
    (Applause)
