0:42 - 0:47(Sonia) The reason why I love peppers
is that... it's like chocolate, you know, -
0:47 - 0:51it's very sensual,
but it's very dangerous. -
0:51 - 0:54And these peppers are really dangerous.

0:55 - 0:58When I told my aunt that
I was gonna be making pepper sauce, -
0:58 - 1:02she was like, "Make sure you cover
your face and your hands", -
1:02 - 1:05and it's so true.

1:06 - 1:09You need to be really prepared for this.

1:09 - 1:13Hi, my name is Sonya and
I'm the owner of Bacchanal Sauce LLC, -
1:13 - 1:16and the maker of Bacchanal Pepper Sauce
here in Brooklyn, New York. -
1:16 - 1:19♪ (music) ♪

1:19 - 1:22I'm preparing to get down
and dirty with the peppers. -
1:22 - 1:26First of all, people just get excited
when you say you make pepper sauce. -
1:26 - 1:27(Laughter)

1:27 - 1:30People get excited
when you talk about peppers, -
1:30 - 1:31when you talk about heat,
-
1:31 - 1:34I always love pepper sauce.
-
1:34 - 1:38You know, in the Caribbean
everyone makes their own pepper sauce, -
1:38 - 1:42and so, it was me
taking something that I knew -
1:42 - 1:45and kind of taking it to the next level.

1:45 - 1:46So, we're in the kitchen
-
1:46 - 1:51and I'm going to show you a little bit
how we make the bacchanal pepper sauce. -
1:51 - 1:55First of all, we have
a lot of amazing fruits -
1:55 - 1:59and that's what really give it
a lot of flavors. -
1:59 - 2:03The pepper sauce is called bacchanal
because a bacchanal is like a party, -
2:03 - 2:08it's like, you know, you have revelers,
you have people enjoying themselves, -
2:08 - 2:12and when you have the pepper sauce
that's what it feels like you're doing, -
2:12 - 2:16not only you have all these flavors
coming together and it's like a party, -
2:16 - 2:19but also, you know,
when you put it on something -
2:19 - 2:21it really enhances your food,
-
2:21 - 2:23and that's what the word
really means to me. -
2:23 - 2:26You're having a party,
you're relaxing, you're chilling out, -
2:26 - 2:28and you're having your pepper sauce!

2:28 - 2:30♪ (music) ♪

2:30 - 2:32Now, we're at the fun part,
-
2:32 - 2:34we get to blend everything together,
-
2:34 - 2:38and it's like a real bacchanal,
it's a party so... -
2:39 - 2:43Everyone gets to go into the blender
and get all mixed up together. -
2:44 - 2:48♪ (music) ♪

2:48 - 2:52I love to use Scotch Bonnet peppers
and also Habanero peppers, -
2:52 - 2:56and that's because... of course
they are from the same family, -
2:56 - 3:01and they also meld well with
all of these like, very unique fruits. -
3:01 - 3:03(Liza) You grew up on this.
-
3:03 - 3:05(Sonia) Yeah, I mean, well,
I grew up on pepper. (Laughter) -
3:05 - 3:10I grew up on pepper, I grew up on heat,
that's something I'm very familiar with, -
3:10 - 3:14it's so funny, because when I started
making my pepper sauce, -
3:14 - 3:16I went out and got a lot of hot sauces.

3:16 - 3:20And I just tried a lot, and...
-
3:20 - 3:23I was like, absolutely amazed
because I really felt like, -
3:23 - 3:26maybe there would have been
something a little bit like it out there, -
3:26 - 3:29or something at least,
you know, very flavorful, -
3:29 - 3:35and I find that so many hot sauces
that I tried were either full of mustard -
3:35 - 3:38or they just weren't even hot!
(Laughter) -
3:38 - 3:41♪ (music) ♪

3:42 - 3:45So, when it comes to the spices,
-
3:45 - 3:48I made the sauce, you know, several times,
-
3:48 - 3:49but I thought it needed
a different type of heat -
3:49 - 3:52so I decided to add the cayenne,
-
3:52 - 3:56and then, the all spices, cinnamon,
very traditional Caribbean spices, -
3:56 - 4:00and so they all
really blend well together... -
4:00 - 4:04nothing sort of stands out, you know,
it's just a a very nice blend. -
4:04 - 4:06(Liza) You're not out to kill people.

4:06 - 4:08(Sonia) No, I'm not out to kill people...
-
4:08 - 4:12I'm not out to kill people with heat,
however, it is hot. -
4:12 - 4:16It's fun, it's lots of fun!
(Laughter) -
4:16 - 4:17I'm being a little careful here
-
4:17 - 4:21because you can already feel
the fumes coming out from the peppers. -
4:21 - 4:24♪ (music) ♪

4:24 - 4:25(Sonia) Yeah, baby!

4:25 - 4:29♪ (music) ♪

4:29 - 4:30(Sonia) Yeah, baby!

4:30 - 4:33(Sonia) The type of food that people
can put this on... -
4:33 - 4:35You can really put it on anything,
I'd say be creative, -
4:35 - 4:37I'm about being creative in the kitchen
-
4:37 - 4:40and I think that when you have
any type of condiment, -
4:40 - 4:42be creative with it!
-
4:42 - 4:47Because you can really excite yourself,
and excite your friends and families -
4:47 - 4:51when you start to really be
creative with your food. -
4:51 - 4:53But I think that it is amazing
on chicken wings; -
4:53 - 4:55I think it's amazing on corn,
-
4:55 - 4:58I love it on sandwiches...
-
4:58 - 5:01you can put it on
just grilled vegetables... -
5:01 - 5:04I just think it pairs well
with a lot of different things, -
5:04 - 5:06so I'd say, go for it!

5:06 - 5:09♪ (music) ♪

5:09 - 5:13(Sonia) I'm just looking to be able
to taste all of the flavors... -
5:13 - 5:18I'm looking to be able to taste
a little bit of tartness, of sweetness, -
5:18 - 5:19and then, the heat.

5:21 - 5:22Here it goes!

5:25 - 5:26Yeah, baby!
-
5:26 - 5:28Oh my God...
-
5:28 - 5:31You get that heat at the back,
the heat at the front, -
5:31 - 5:33and you get the sweetness.
-
5:33 - 5:34So good.

5:34 - 5:37- (Liza) Does it hit you right away?
- (Sonia) Hits you right away. -
5:37 - 5:39(Liza) You almost couldn't take that!

5:39 - 5:42(Sonia) I couldn't, yeah!
(Laughter) -
5:42 - 5:45(Sonia) When people eat it, I just imagine
they're enjoying themselves, -
5:45 - 5:48I imagine... I love food!
(Laughter) -
5:48 - 5:53And I love eating something
and feeling like I'm trying to pour it, -
5:53 - 5:57and that's what I really want for people
when they have the pepper sauce. -

6:40 - 6:46(Sonia) My favorite reaction
is when people love pepper -
6:46 - 6:47and they eat it and they are,

6:47 - 6:50"Hmmm... yeah, this is good!"

6:50 - 6:53and you know, those are the people
that are the real pepper heads, -
6:53 - 6:57the people that, you know, love pepper,
it can even be hotter for them, -
6:57 - 6:58I love those people!

6:58 - 7:03When those people come up to me
when they taste the pepper sauce, -
7:03 - 7:08I'm like, yeah, you're man,
you're woman to my own heart, you know, -
7:08 - 7:13because they get so excited about it
and I love... I love those people! -
7:13 - 7:15But I also love the timid people too,

7:15 - 7:18I also love the people, who are like,
"Just give me a little drop". -

Meet Sonya Samuel, the founder and owner behind Bacchanal Pepper Sauce, a Brooklyn made, Caribbean-hot, soul-satisfying pepper sauce that recently launched in New York City. Like her hot sauce, Sonya too is a party. She throws around "hey babys" like I throw around smiles, engaging people with a lust-for-life attitude that you're always glad to bump up into, when you do. Now, Sonya LOVES food. And I'm not saying it just to say it. I'm saying it because it's something she'll tell you often - and often with a very vocal opinion. She knows what she likes and doesn't like, and isn't shy about picking dishes apart. I appreciate that about her. She knows and trusts her palate, and I think that's why her hot sauce is SO GOOD. She has standards...very high standards. Sonya wants her pepper sauce to represent what she believes in food: that good food should create memories and moments. It should "transport" you. And, you know what, I'll give it to her. This pepper sauce is like a nice, spicy vacation.
