How to Cook Spaghetti Al Limone | Searching for Amalfi Lemons in Naples, Italy

  • Not Synced
    (Nicole) So, you've ridden
    a gondola in Venice,
  • Not Synced
    eaten gelato in Florence,
  • Not Synced
    you think you've seen Italy;
  • Not Synced
    you haven't.
  • Not Synced
    No one earns that badge
    till they've been to Naples.
  • Not Synced
Naples is not for the faint of hearts,
  • Not Synced
    it's crowded,
  • Not Synced
    chaotic,
  • Not Synced
    and tatted up.
  • Not Synced
But man, does this place has soul!
  • Not Synced
    It's full of characters
  • Not Synced
    and around every corner
  • Not Synced
it's a diamond in the rough.
  • Not Synced
That's what kept me coming back here
  • Not Synced
    for two decades.
  • Not Synced
    And just when I think
I've gotten a hand along her,
  • Not Synced
    she surprises me.
  • Not Synced
So, this time, I've come with backup.
  • Not Synced
    - (Nicole) Buongiorno.
    - (Francesca) Buongiorno, Nicole.
  • Not Synced
    (Nicole) I'm heading
    the historic quarter with Francesca,
  • Not Synced
    my woman on the inside.
  • Not Synced
She's a local expert with context,
  • Not Synced
    guiding urban explorers
    who want to go deeper.
  • Not Synced
    In this area is where
I first fell in love with Naples
  • Not Synced
    - because it is full of life, right?
    - (Francesca) Yeah, scooters!
  • Not Synced
    (Laughter)
  • Not Synced
    - (Nicole) it's never boring!
    - (Francesca) That's true!
  • Not Synced
    (Nicole) Never boring!
  • Not Synced
    (Music)
(Nicole) I'm here on a mission.
  • Not Synced
    In our last episode,
I spent a day in Amalfi
  • Not Synced
    where I discovered how lemons
  • Not Synced
    are literally saving
    the town from disaster.
  • Not Synced
Now, I'm in the big city,
  • Not Synced
to learn how lemons have inspired
    Italian cooking and culture.
  • Not Synced
    (Music)
  • Not Synced
    After the requisite coffee --
  • Not Synced
    (speaking Italian)
  • Not Synced
    we start at the beginning.
  • Not Synced
    (Nicole) Naples was first settled
    by the ancient Greeks,
  • Not Synced
this was the site of the Agora,
  • Not Synced
    and later the Roman forum.
  • Not Synced
    Francesca shows me
    two Corinthians columns,
  • Not Synced
lone survivors of a first century temple,
  • Not Synced
    incorporated into de facade
    of a XVII century church.
  • Not Synced
This is what exciting about Naples,
  • Not Synced
    it's a haphazard layered cake of stories;
  • Not Synced
    stories you can
walk right up to and touch,
  • Not Synced
if you know what you're looking at.
  • Not Synced
To outsiders, Naples can seem incrustable,
  • Not Synced
    it's hard to know where
    history ends and myth begins,
  • Not Synced
    where faith fuses with superstition.
  • Not Synced
    Just look at these
    hand-made nativity scenes,
  • Not Synced
    a quintessential Neapolitan fixation.
  • Not Synced
    You got modern day figures
    witnessing the virgin birth,
  • Not Synced
and there, under the terracota produce
  • Not Synced
    I spot them --
  • Not Synced
    This was very typical,
  • Not Synced
there were people selling in the streets
  • Not Synced
    fresh lemon juice.
  • Not Synced
    And those lemons would have
    come up from the coast.
  • Not Synced
    The lemons are form Amalfi
    and from Sorrento.
  • Not Synced
    (Nicole) All these fake lemons
make me crave the real thing,
  • Not Synced
so we head over to Cafeteria Hipolito
    where they have --
  • Not Synced
Delizie al limone -- the lemon delight.
  • Not Synced
We use a lot of lemons.
  • Not Synced
    Actually, we have
a lot of lemons in our gardens -
  • Not Synced
    - (Nicole) Yes!
    - (Francesca) and our balconies.
  • Not Synced
There were a lot of monastery cloisters
    that had these plants,
  • Not Synced
    also because they were considered
    like healing plants.
  • Not Synced
    - (Nicole) Yes, medicinal, right?
    - (Francesca) Medicinal.
  • Not Synced
(Nicole) I think we should have
a little bit of medicine, then, shall we?
  • Not Synced
    I think we should.
  • Not Synced
    (Music)
  • Not Synced
    (Nicole) Thank you!
  • Not Synced
This looks like... a sugar bomb!
    (Laughter)
  • Not Synced
    Layers of sponge cake
    filled with lemon cream,
  • Not Synced
    covered with chantilly cream.
  • Not Synced
    (Music)
  • Not Synced
    Okay, so delizie al limone,
    not really my thing,
  • Not Synced
    a little bit too sugary,
    a little bit too creamy,
  • Not Synced
but it was fun, it's lemons,
that's what we're doing here, right?
  • Not Synced
    Luckily, it's nearly lunch time.
  • Not Synced
    We're headed to a friend's apartment,
  • Not Synced
    where Francesca has arranged
for me to learn from a local chef
  • Not Synced
    a perfect Neapolitan summer dish,
  • Not Synced
but of course, we can't arrive
    empty-handed.
  • Not Synced
This is a salumeria from 1864,
    let's check it out!
  • Not Synced
    - (woman) Oops!
    - (Nicole) Excuse me.
  • Not Synced
    (Music)
  • Not Synced
    (speaking in Italian)
  • Not Synced
    (Nicole) Thank you!
  • Not Synced
    We got our cheese,
  • Not Synced
    our bread,
  • Not Synced
    and lemons.
  • Not Synced
And this being Naples, we bought them all
    from specialty purveyors,
  • Not Synced
    who's been doing this forever.
  • Not Synced
    It's time for spaghetti
    al limone! Andiamo!
  • Not Synced
    (Music)
  • Not Synced
    We arrived at a friend's
    fabulous apartment
  • Not Synced
    to cook with Antonio,
  • Not Synced
    who's whipped up dishes
and top kitchens in Italy and England.
  • Not Synced
    (Antonio) Ciao!
    (Laughter)
  • Not Synced
    (Music)
  • Not Synced
    This is spaghetti al limone!
  • Not Synced
    A dish that Neapolitans crave
    when summer hits
  • Not Synced
and lemons are at their peak.
  • Not Synced
    To make it you'll need:
  • Not Synced
    (Antonio) Double cream,
  • Not Synced
    parmesan,
  • Not Synced
    dry red chilies,
  • Not Synced
    garlic,
  • Not Synced
    butter,
  • Not Synced
    lemons from Sorrento,
  • Not Synced
    parsley,
  • Not Synced
and obviously the linguine. Let's go!
  • Not Synced
    (Nicole) Okay, half zest,
    half juice of the lemon.
  • Not Synced
    (Music)
  • Not Synced
    (Antonio) All right.
    (Nicole) More?
  • Not Synced
    (Antonio) Go, go, go --
    (Nicole) Okay, okay --
  • Not Synced
You can't have too much lemon!
  • Not Synced
(Antonio) Yeah, specially if they are
    from the Amalfi coast.
  • Not Synced
    (Nicole) Oh, yeah --
  • Not Synced
And everything right into the cream?
  • Not Synced
    - (Antonio) Yeah.
    - (Nicole) Okay.
  • Not Synced
(Antonio) And the reason to do that
is because we don't want to cook the zest,
  • Not Synced
    because it's already bitter,
  • Not Synced
if you cook it, it'll be even more bitter.
  • Not Synced
    Perfect.
