How climate change could make our food less nutritious

    Accumulating scientific knowledge
    is giving us greater insights,
  • Not Synced
    greater clarity into what our future
    might look like in a changing climate
  • Not Synced
    and what that could mean for our health.
  • Not Synced
    I'm here to talk about a related aspect
  • Not Synced
    on how our emissions of greenhouse gases
    from burning of fossil fuels
  • Not Synced
    is reducing the nutritional
    quality of our food.
  • Not Synced
    We'll start with the food pyramid.
  • Not Synced
    You all know the food pyramid.
  • Not Synced
    We all need to eat a balanced diet.
  • Not Synced
    We need to get proteins.
  • Not Synced
    We need to get micronutrients.
    We need to get vitamins.
  • Not Synced
    And so this is way for us
    to think about how to make sure
  • Not Synced
    we get what we need every day
  • Not Synced
    so we can grow and thrive.
  • Not Synced
    So we eat not just because we need to,
  • Not Synced
    we also eat for enjoyment.
  • Not Synced
    Bread, pasta, pizza,
  • Not Synced
    there's a whole range of foods
  • Not Synced
    that are culturally important.
  • Not Synced
    We enjoy eating these.
  • Not Synced
    And so they're important for our diet,
  • Not Synced
    but they're also important
    for our cultures.
  • Not Synced
    Carbon dioxide has been increasing since
    the start of the Industrial Revolution,
  • Not Synced
    increasing from about
    280 parts per million to over 410 today,
  • Not Synced
    and it continues to increase.
  • Not Synced
    The carbon that plants need to grow
    comes from this carbon dioxide.
  • Not Synced
    They bring it into the plant,
    they break it apart
  • Not Synced
    into the carbon itself,
  • Not Synced
    and they use that to grow.
  • Not Synced
    They also need nutrients from the soil.
  • Not Synced
    And so yes, carbon dioxide is plant food.
  • Not Synced
    And this should be good news,
    of rising carbon dioxide concentrations,
  • Not Synced
    for food security around the world,
  • Not Synced
    making sure that people
    get enough to eat every day.
  • Not Synced
    About 820 million people in the world
    don't get enough to eat every day.
  • Not Synced
    So there's a fair amount written
    about how higher CO2
  • Not Synced
    is going to help with
    our food security problem.
  • Not Synced
    We need to accelerate our progress
    in agricultural productivity,
  • Not Synced
    to feed the nine to 10 billion people
    who will be alive in 2050
  • Not Synced
    and to achieve the Sustainable
    Development Goals,
  • Not Synced
    particularly the Goal Number 2,
  • Not Synced
    that is on reducing food insecurity,
  • Not Synced
    increasing nutrition,
  • Not Synced
    increasing access to the foods
    that we need for everyone.
  • Not Synced
    We know that climate change
    is affecting agricultural productivity.
  • Not Synced
    The Earth has warmed
    about one degree Centigrade
  • Not Synced
    since pre-industrial times.
  • Not Synced
    That is changing local temperature
    and precipitation patterns,
  • Not Synced
    and that has consequences
    for the agricultural productivity
  • Not Synced
    in many parts of the world.
  • Not Synced
    And it's not just local changes
    in temperature and precipitation,
  • Not Synced
    it's the extremes,
  • Not Synced
    Extremes in terms of heat waves,
    floods and droughts
  • Not Synced
    are significantly affecting productivity.
  • Not Synced
    And that carbon dioxide,
  • Not Synced
    besides making plants grow,
  • Not Synced
    has other consequences as well,
  • Not Synced
    that plants when they have
    higher carbon dioxide,
  • Not Synced
    increase the synthesis of carbohydrates,
    sugars and starches,
  • Not Synced
    and they decrease the concentrations
    of protein and critical nutrients,
  • Not Synced
    and this is very important for how we
    think about food security going forward.
  • Not Synced
    A couple of nights ago
    in the table talks on climate change,
  • Not Synced
    someone said that they're
    a five-seventh optimist,
  • Not Synced
    that they're an optimist
    five days of the week,
  • Not Synced
    and this is a topic for other two days.
  • Not Synced
    When we think about micronutrients,
  • Not Synced
    almost all of them are affected
    by higher CO2 concentrations.
  • Not Synced
    Two in particular are iron and zinc.
  • Not Synced
    When you don't have enough iron,
    you can develop iron deficiency anemia.
  • Not Synced
    It's associated with fatigue,
    shortness of breath,
  • Not Synced
    and some fairly serious
    consequences as well.
  • Not Synced
    When you don't have enough zinc,
  • Not Synced
    you can have a loss of appetite.
  • Not Synced
    It is a significant
    problem around the world.
  • Not Synced
    There's about one billion people
    who are zinc-deficient.
  • Not Synced
    It's very important
    for maternal and child health.
  • Not Synced
    It affects development.
  • Not Synced
    The B-vitamins are critical
    for a whole range of reasons.
  • Not Synced
    They help convert our food into energy.
  • Not Synced
    They're important for the functions
  • Not Synced
    of many of the physiologic
    activities in our bodies,
  • Not Synced
    and when you have
    higher carbon in a plant,
  • Not Synced
    you have less nitrogen,
  • Not Synced
    and you have less B-vitamins.
  • Not Synced
    And it's not just us.
  • Not Synced
    Cattle are already being affected,
  • Not Synced
    because the quality
    of their forage is declining.
  • Not Synced
    In fact, this affects
    every consumer of plants.
  • Not Synced
    And give a thought to, for example,
    our pet cats and dogs.
  • Not Synced
    If you look on the label
    of most of the pet and dog food,
  • Not Synced
    there's a significant amount
    of grain in those foods.
  • Not Synced
    So this affects everyone.
  • Not Synced
    How do we know that this is a problem?
  • Not Synced
    We know from field studies,
  • Not Synced
    and we know from experimental
    studies in laboratories.
  • Not Synced
    In the field studies --
  • Not Synced
    and I'll focus primarily
    on wheat and on rice --
  • Not Synced
    there's fields, for example, of rice
  • Not Synced
    that are divided into different plots,
  • Not Synced
    and the plots are all the same.
  • Not Synced
    The soil's the same,
  • Not Synced
    the precipitation is the same,
    everything's the same
  • Not Synced
    except carbon dioxide
    is blown over some of the plots.
  • Not Synced
    And so you can compare
  • Not Synced
    what it looks like
    under today's conditions
  • Not Synced
    and under carbon dioxide conditions
    later in the century.
  • Not Synced
    I was part of one of the few
    studies that have done this.
  • Not Synced
    We looked at 18 rice lines
    in China and in Japan,
  • Not Synced
    and grew them under conditions
    that you would expect
  • Not Synced
    later in the century.
  • Not Synced
    And when you look at the results,
  • Not Synced
    the white bar is today's conditions,
  • Not Synced
    the red bar is conditions
    later in the century.
  • Not Synced
    So protein declines about 10 percent,
  • Not Synced
    iron about eight percent,
    zinc about five percent.
  • Not Synced
    These don't sound like really big changes,
  • Not Synced
    but when you start thinking
    about the poor in every country
  • Not Synced
    who primarily eat starch,
  • Not Synced
    that this will put people
    who are on the edge
  • Not Synced
    over the edge into frank deficiencies,
  • Not Synced
    creating all kinds of health problems.
  • Not Synced
    The situation is more significant
    for the B-vitamins.
  • Not Synced
    When you look at
    vitamin B1 and vitamin B2,
  • Not Synced
    there's about a 17 percent decline.
  • Not Synced
    Pantothenic acid, vitamin B5
    is about a 13 percent decline,
  • Not Synced
    and folate is about a 30 percent decline,
  • Not Synced
    and these are averages over
    the various experiments that were done.
  • Not Synced
    Folate is critical for child development.
  • Not Synced
    Pregnant women who don't get enough folate
  • Not Synced
    are at much higher risk
    of having babies with birth defects.
  • Not Synced
    So these are very serious
    potential consequences for our health
  • Not Synced
    as CO2 continues to rise.
  • Not Synced
    In another example,
  • Not Synced
    this is modeling work that was done
    by [?] and his colleagues
  • Not Synced
    taking a look at this chain
    from higher CO2 to lower iron and zinc,
  • Not Synced
    and they only looked at iron and zinc,
  • Not Synced
    to various health outcomes,
  • Not Synced
    and they looked at malaria,
    diarrheal disease, pneumonia,
  • Not Synced
    iron deficiency anemia,
  • Not Synced
    and looked at what
    the consequences could be in 2050,
  • Not Synced
    and the darker the color in this,
  • Not Synced
    the larger the consequences.
  • Not Synced
    So you can see the major impacts
  • Not Synced
    in Asia and in Africa,
  • Not Synced
    but also note that in countries
    such as the United States
  • Not Synced
    and countries in Europe,
  • Not Synced
    the populations also could be affected.
  • Not Synced
    They estimated about
    125 million people could be affected.
  • Not Synced
    They also modeled what would be
    the most effective interventions,
  • Not Synced
    and their conclusion was
    reducing our greenhouse gases,
  • Not Synced
    getting our greenhouse gas emissions
    down by midcentury
  • Not Synced
    so that we don't have to worry so much
    about these consequences
  • Not Synced
    later in the century.
  • Not Synced
    These experiments, these modeling studies
  • Not Synced
    did not take climate change
    itself into account.
  • Not Synced
    They just focused on
    the carbon dioxide component.
  • Not Synced
    So when you put the two together,
  • Not Synced
    it's expected the impact is much larger
    than the one I've told you.
  • Not Synced
    I'd love to be able to tell you right now
  • Not Synced
    how much the food you had for breakfast,
    the food you're going to have for lunch,
  • Not Synced
    has shifted from what
    your grandparents ate
  • Not Synced
    in terms of its nutritional quality,
  • Not Synced
    but I can't.
  • Not Synced
    We don't have the research on that.
  • Not Synced
    I'd love to tell you how much
    current food insecurity
  • Not Synced
    is affected by these changes,
  • Not Synced
    but I can't.
  • Not Synced
    We don't have the research on that either.
  • Not Synced
    There's a lot that needs
    to be known in this area,
  • Not Synced
    including what the possible
    solutions could be.
  • Not Synced
    We don't know exactly
    what those solutions are,
  • Not Synced
    but we've got a range of options.
  • Not Synced
    We've got advancements in technologies.
  • Not Synced
    We've got plant breeding.
    We've got bio-fortification.
  • Not Synced
    Soils could make a difference.
  • Not Synced
    And, of course, it would be very helpful
    to know how these changes could affect
  • Not Synced
    our future health
  • Not Synced
    and the health of our children
    and the health of our grandchildren.
  • Not Synced
    And these investments take time.
  • Not Synced
    It will take time to sort
    all of these issues out.
  • Not Synced
    There is no national entity
    or business group
  • Not Synced
    that is funding this research.
  • Not Synced
    We need these investments critically
    so that we do know where we're going.
  • Not Synced
    In the meantime, what we can do
  • Not Synced
    is ensure that all people
    have access to a complete diet,
  • Not Synced
    not just those in the wealthy parts
    of the world but everywhere in the world.
  • Not Synced
    We also individually and collectively need
    to reduce our greenhouse gas emissions
  • Not Synced
    to reduce the challenges
    that will come later in the century.
  • Not Synced
    It's been said that if you think
    education is expensive, try ignorance.
  • Not Synced
    Let's not.
  • Not Synced
    Let's invest in ourselves,
  • Not Synced
    in our children, and in our planet.
  • Not Synced
