Chemistry.
Not exactly what you bargained for, is it?
Because to so many people out there,
it's kind of a dirty word.
Indeed, at the prospect
of chemicals invading your life,
I think sometimes you just want to scream.
And the fact is that we have
an image problem in chemistry, to be sure.
How so?
It's actually a multi-image problem.
There are those people who think
that we're just nerds.
And there are those who think
that chemists are those mad scientists
locked away in a lab somewhere,
just thinking about
what new cancer-causing additive
to unleash on the unsuspecting public.
To many, chemistry
is the work of the devil:
what we do is mix up chemicals,
and those chemicals
are synonymous with toxins.
So people strive to get products
that are "free of chemicals,"
(Laughter)
the most absurd of all expressions.
Indeed, if you buy something
that is claimed to be chemical free,
you're not getting a very good deal,
(Laughter)
because what you're buying is a vacuum.
Not a vacuum cleaner, a vacuum.
That's the only thing -
if you can call it a thing -
that is chemical free.
But people strive
for a chemical-free existence.
They want to bring up their kids
in a chemical-free world.
They want them to play with chemistry sets
that require no chemicals.
(Laughter)
Truly amazing.
You know, it turns out
that a 4% solution of acetic acid
is thought of as a chemical.
But you take that same solution
and you put it into a bottle of vinegar,
all of a sudden, it becomes
a "green" cleaning agent.
Indeed, chemical names turn people off.
Beta-D-fructofuranosyl-
alpha-D-glucopyranoside
I'm sure strikes terror
into the hearts of many people.
It causes panic.
And yet, what you just saw
is the chemical term for sugar.
You cannot tell anything about the safety
or the danger of a substance
by the number of syllables in the name.
The only way that you can tell
is by studying it, testing it.
That's how we accumulate
scientific knowledge.
And that's what we try to do
through my office at McGill,
the Office for Science and Society.
We try to cast a beam of light
into the darkness
to try to demystify science
because, indeed, it is complex
and so many people are bewildered by it.
My specific interest
is the area of chemistry,
which I think should be in the limelight.
Now, I'm fully cognizant
of the fact, of course,
that there are skeletons
in the chemical closet.
Certainly, historically,
we have not always
dealt properly with chemicals.
Indeed, chemicals in the wrong place,
at the wrong time, with the wrong dose
can be a huge problem.
We have not always disposed
of chemicals in a proper way.
But the fact is that
this science of ours, chemistry,
is the thread that ties
all of the other sciences together.
If you know something about molecules
and how they interact,
what they can and cannot do,
you get a pretty good idea
of what can and cannot
happen in the world.
Indeed, chemistry
is the fabric of our life,
both figuratively and realistically.
It is the stuff that puts
colour into our life.
It is useful.
You look under your sink,
you will find all kinds
of cleaning agents.
Well, what are they?
It's just a collage of chemicals.
Open your medicine cabinet.
That mix of chemicals, we call drugs.
You look down at your dinner table,
and the food is nothing other
than a very, very complex mix
of hundreds and hundreds and hundreds
of different compounds.
In fact, there are some
60 million known chemicals
that are listed in chemical abstracts.
Most of them, of course, occur in nature.
Some are synthetic.
But whether something
is synthetic or natural
does not determine its impact
on our health or what happens
in the human body.
The body does not distinguish by ancestry.
So we have about 60 million
known compounds.
If you sniff your cup of coffee,
what you're smelling, believe it or not,
is roughly 1,000 different compounds.
It's amazing that we've been able
to determine this.
Many of them, in fact,
have been categorized.
Some of them are known carcinogens,
and yet we know that coffee
does not cause cancer.
If it did, we would know.
There's enough epidemiological evidence.
There are enough people
in the world drinking this stuff
to know what it can and cannot do.
So how is it that there are
carcinogens in there,
but the whole mixture is not carcinogenic?
Well, obviously, because the carcinogens
are found in very small amounts,
and furthermore,
some of the other antioxidants
that are present in the coffee
mitigate the effects
of the more problematic compounds.
So, indeed, we live in a very,
very complex chemical world.
And we put those complex chemicals
into the most complex machine
that exists on the face of the earth,
which is the human body.
It's a huge chemical container.
I know that people think
that chemicals are only to be found
in test tubes or in Erlenmeyer flasks.
But we are nothing more
than a large bag of chemicals.
Hundreds of thousands
of different compounds.
And the fact is that chemicals
are not to be feared or worshiped.
They are to be understood.
They are just things.
They are inanimate.
They don't make any decisions.
We do.
Let me give you an example.
Ammonia - a pretty simple molecule
but one of the most
interesting molecules that exists.
It has changed our history.
Ammonia can be used as fertilizer,
first developed by Fritz Haber,
a German chemist.
It gives amazing improvements
in yields on agricultural fields.
It allows us to feed millions of people.
The world would not be the same
without ammonia.
But let me open up a can of worms here.
Or, in fact, let me defer to Jamie Oliver,
who does that all by himself very well -
opens up numerous cans of worms.
For those of you not familiar with Jamie,
he's a celebrated British chef
who has come over to America
to change the eating habits
of North Americans.
To tell you the truth, I like Jamie.
He pushes fruits; he pushes vegetables.
I like his theory.
His approach is a little bit questionable.
Not long ago,
on his celebrated TV program,
he introduced us to pink slime,
which is neither pink nor slimy.
What it is
is meat that is taken off the bone
after everything else has been cut off
through a mechanical process.
In fact, it is mostly muscle meat,
but then it is treated with ammonia gas
to make sure that there are
no bacteria cruising around.
Well, he introduced this idea,
and he wanted to demonstrate
the nefarious nature of ammonia
as it is being used in this process.
So he opens up a cupboard, the back,
and he takes out a bottle of ammonia
festooned with a skull and crossbones.
Now, I've spent my life in chemistry,
in many laboratories around the world.
Never have I seen a bottle of ammonia
that had the skull and crossbones on it.
In fact, you can go looking
in supermarkets and hardware stores,
or you can cruise the web.
You will not find a bottle of ammonia
that has a skull and crossbones.
So that, of course, was made
specifically for the show
for the dramatic effect.
And then Jamie goes
and takes that bottle of ammonia
and sloshes it all over the meat.
This is not the way that it is done.
Ammonia vapour is used in the process
of producing that so-called pink slime.
Well first of all, there's nothing
dangerous about ammonia vapour.
Ammonia is used in our food supply.
It's used to make cookies -
causes them to rise.
In fact, ammonia can even be used
in cough problems.
So it's not inherently dangerous.
Of course, all chemicals can,
in some way, be a problem.
It depends on how you use them,
what the conditions are
and, of course, how much
of the chemical is used.
But the way that Jamie portrayed this,
it was certainly enough
to frighten people,
to have people demonstrate in the streets
to stop pink slime.
Now, I don't want you to get the idea
that I'm a pusher of pink slime.
I'm not.
But it is not a toxic substance,
the way that it was portrayed.
And in fact, it is probably leaner
than the rest of the meat
that is in the hamburger.
It also allows the meat industry
to use the cow more efficiently.
Now, you would think
that cows would be happy
at the prospect of having this pink slime
be taken off the market
as many fast-food producers have done
in response to this.
Well, no, that isn't exactly true:
the cows are not
all that happy about this,
because about 1.5 million more cows
are going to sacrifice
their life, annually,
to compensate for the meat
that is not being taken off the bone.
So you have to look
at the whole situation.
It is so easy to make people paranoid
by nitpicking and by,
essentially, misleading them
by taking segments of information
which aren't the totality,
which are not completely correct.
Now, I'm not a pusher of pink slime,
and not even of meat.
I think in North America
we eat too much meat.
I think we should cut down
on the amount of meat we eat.
We don't need the gigantic hamburgers.
I've always pushed fruits and vegetables.
We have plenty of epidemiological evidence
that people who eat lots of fruits
and vegetables are healthier.
So that's not why
I pick a bone with Jamie.
It is because
he misrepresents the science.
There is nothing toxic
about this business of pink slime.
It is possible to portray almost anything
as if it were dangerous,
even our fruits and vegetables.
Take an apple, for example.
Or better yet, take a bite
out of that apple.
You know what you're tasting?
You're tasting
over 300 different compounds.
Those are not additives;
they're not pesticide residues.
Those are the building blocks
of that apple.
That's what it's made up of.
Some delightful things.
Acetone.
Well, the last time you encountered it
was probably on the label
of your nail polish remover,
right above where it says, "Do Not Drink."
(Laughter)
There's also some
formaldehyde in that apple.
That's embalming fluid.
That's the stuff that is used
to preserve dead bodies -
it's not what people want
in their live bodies!
Well, here we have
an apple that has acetone.
Acetone is highly toxic.
In fact you could put
a skull and crossbones on it.
So what happens if you eat an apple?
Are you going to be poisoned
by the acetone?
Well, it's okay, because there's also
formaldehyde in there.
So if you go,
it's an economical way to go
because you'll be pre-embalmed.
(Laughter and applause)
Well, of course,
it's absurd to suggest this
because as we understand,
the amount of acetone and the amount
of formaldehyde in the apple is trivial
in comparison to valuable vitamins
and polyphenols that we have in there.
Numbers matter.
There are no safe substances,
only safe ways to use substances.
Five hundred years ago,
Paracelsus, the great alchemist,
philosopher, physician,
told us, "Sola dosis facit venenum."
For those of you who have
forgotten your Latin, let's translate:
"Only the dose makes the poison."
Amounts matter.
You know that aspirin
makes a headache go away.
How much?
Take an aspirin tablet, lick it;
your headache will not go away.
Take two tablets, swallow them;
your headache will go away.
Take the whole bottle, swallow them;
you will go away.
(Laughter)
Only the dose makes the poison.
However, it is also important to realize
that sometimes that dose
can be very small.
We have to look at numbers.
For example, the chemical
that you have heard a great deal about
called bisphenol A -
it's been in the news extensively.
This is the stuff that can leach
out of canned foods
from the epoxy resin that lines the food,
protecting the can
from interacting with the food
and vice versa.
Well, bits of bisphenol A,
very small doses, do leach out.
And they do end up in our body.
In fact, we can detect them in our urine.
The problem is that this chemical,
bisphenol A,
is referred to as an endocrine disruptor.
It can interfere with hormones.
Anything that interferes with hormones
should raise the flag of alarm.
So this has been extensively investigated.
We don't have a final answer.
Science rarely gives us a final answer.
It's a bizarre compound because it seems
that the dose response curve is strange.
Usually you expect toxicity
to increase linearly with dose.
It seems that in the case
of hormonal compounds,
that's not what happens.
So that even at very small concentrations,
you can have significant effects.
In fact, you can have a beneficial effect.
Then you decrease the dose,
you get a detrimental effect.
I mean, this is a most unusual thing.
So bisphenol A has to be
further investigated
because this concept,
which we know as hormesis,
is relatively new in science.
Toxicology is a very complex business.
But there are many, many
other things in life to worry about
than the trace amounts of bisphenol A
that end up in our body.
People drive without seat belts,
they smoke,
they lie out in the midday sun.
Those are far, far more worrisome things
than the trace amounts of bisphenol A.
Life is full of risks.
We can't get away from it.
You can be out for a casual walk,
and horrific things can happen.
(Laughter)
Oh, don't worry, we're nice people.
We faked it. They're fine.
But they're not the innocent,
little creatures that you think they are.
(Laughter)
So there is risk everywhere.
We live with the presence of risk,
especially with chemicals.
But the presence of a chemical
does not equal the presence of risk:
it depends on amounts.
Today, with our modern,
analytical techniques -
our gas chromatograms,
our mass spectrometers -
we can detect substances
down to levels of parts per trillion.
That's one second in 32,000 years.
That's not finding a needle in a haystack;
that's finding a needle
in a world full of haystacks.
And while you're rummaging around
in that haystack,
you might encounter some mold.
That will produce
some really toxic substances,
even though it's natural,
because natural does not equate to safe,
and synthetic does not equal dangerous.
That is one of
the biggest myths out there.
You cannot tell anything about
the potential toxicity of a substance
by its ancestry.
The only way we know if something
is dangerous or not is by studying it,
by looking at its molecular structure,
by analyzing it,
by carrying out chemical reactions,
by studying it in animals.
But high-dose studies in animals
do not necessarily reflect on humans.
The human is not a giant rat,
with some exceptions obviously.
(Laughter)
So one has to be very careful
because even in closely related species,
there are tremendous differences.
Dioxin - widely talked about
as the most toxic substance
known to mankind, which it may be.
It's never produced on purpose.
It's always a by-product
of some industrial process,
but it is in our environment.
It is indeed the most toxic substance -
if you're a guinea pig.
But if you're a hamster,
you can practically frolic in it.
So here we have
two very closely related species,
and yet the toxicity profile
is dramatically different.
And then we come to people.
We can't even really relate
between animals in terms of toxicity.
How can we use animals
to predict what will happen in humans?
We can't really, but it's the best guess,
because we can't do human studies.
But where we really run into problems
is predicting what
will happen in children.
Why? Because a child is not a small adult.
Their body chemistry is very different.
So we have to be especially careful
when we expose children
to chemicals like endocrine disruptors
because they may not be
at all harmful in adults,
but they may play a role in children.
Unfortunately,
we are surrounded by risk, as we said.
You cannot get away from it.
You may replace one with the other,
but if you're not careful,
the replacement may turn out to be
more dangerous than what you're replacing.
So when we think about replacing
bisphenol A with some novel entity,
we had better make sure
that what we're introducing
into the marketplace
is better and safer
than what we are replacing.
Of course, there will be
diverse opinions on all these things.
That's the way science works.
People read the literature,
they do experiments,
they come to various conclusions.
Not always the same conclusion.
No matter what you look at,
there are always varied opinions.
However, they rarely have equal weight.
When you look at global warming,
you look at endocrine disruptors,
you will have the majority
of the scientific community on one side
with some outliers on the other side,
but very often the outliers
are far more vocal
and make for a very seductive case.
But in the science world, of course,
we go by peer-reviewed literature;
we go by experiments.
We don't cherry-pick data.
But unfortunately,
pseudoscientists very often do.
And these days, there's so much published
that you can, basically, find some proof
for any idea that you may have.
However, when you practise
scientific methodology,
you don't cherry-pick;
you shake the whole cherry tree
until all the cherries come down,
and then you mix them together
and mash them up,
and then you taste the evidence.
And hopefully, then,
you don't get into a jam.
(Laughter)
That's what the scientific method
is all about:
weighing the risks versus the benefits.
But in order to do that,
we need some foundation.
We need some basic
understanding of science.
So that's why I'm a big promoter
of education early on.
We need to improve scientific education
in elementary schools.
It is as important
to be scientifically literate
as to be literate in any other area.
And we have to pursue
this scientific literacy,
no matter how hard that may be.
We have to make sure
that we eventually have an educated,
scientifically literate public.
Because all the technological
decisions that we make
are based upon some
sound understanding of chemistry.
It's not that we should be out there
cheerleading for chemistry.
That's not the idea at all.
What we need to do
is come to some rational evaluations,
make sure that people understand
that chemicals are not substances
that should be locked away.
Neither should they be glorified.
They should be understood,
and put to good, intelligent use.
That's what we try to do today
under the umbrella of green chemistry.
We have a large pedestal
of information today on which to build.
We know toxicity profiles of chemicals.
We know what we should choose
as raw materials.
We know how to make reactions
more and more efficient.
Chemistry is evolving all the time.
We're getting better at predicting
what is going to happen
when we engage in this -
what I think is a magical undertaking.
Not everyone shares my view.
There are those who think that chemists
are different from any other species.
But hopefully,
I've been able to demonstrate to you
that that isn't the case,
that we do have some humanity.
We do look at the world
in terms of molecules
and what they can and cannot do.
It doesn't mean that we can
answer all questions.
No, we can't.
We have our limitations.
The world is very complex.
Those 60 million chemicals
engage in all kinds of reactions.
And it is quite possible
that there are questions
to which we will never have the answer.
But we try.
(Laughter)
We try to find the answers,
and that is just what we do
through our office at McGill,
which is a rather unique enterprise.

qu'on est juste coincés.
Et il y a aussi ceux qui pensent
que les chimistes sont ces scientifiques
fous enfermés dans un labo lointain,
en train de penser
au nouvel additif pro-cancer
à relâcher dans le grand public.
Pour de nombreuses personnes,
la chimie est le travail du diable ;
ce que l'on fait c'est de mélanger
les produits chimiques,
et ces produits sont synonymes
de toxines.
Alors les gens recherchent les produits
« sans agent de conservation »,
(Rires)
une des expressions les plus absurdes.
En effet, si vous achetez un produit
étiqueté sans agent chimique,
vous n'en avez pas pour votre argent,
(Rires)
parce que vous achetez du vide.
Pas un aspirateur, mais du vide.
C'est la seule chose -
si on peut l'appeler quelque chose,
qui ne contient pas
de produits chimiques.
Mais les gens aspirent à
une existance sans chimie.
Ils veulent élever leurs enfants
dans un monde sans chimie.
Ils veulent leur donner des jeux
de labos n'exigeant aucune chimie.

Vraiment stupéfiant.
Vous savez, c'est prouvé
qu'une solution à 4% d'acide acétique
est désignée « produit chimique ».
Mais vous prenez cette même solution
pour la mettre dans un vaporisateur
et soudain, ça devient un agent

Vraiment, les noms chimiques,
ça effraie les gens.
Le terme
« D-glucopyranosyl-D-fructofuranose »,
j'en suis sûr, attise la terreur
dans le cœur de bien des gens.
Ça cause la panique.
Eh bien, ce que vous venez de lire
est la structure chimique du sucre.
On ne peut se prononcer sur
l'innocuité ou le danger d'une substance
en comptant le nombre
de syllabe de son nom.
La seule façon de se prononcer
c'est de l'étudier, de le tester.

le savoir scientifique.

Nous essayons de braquer la lumière

afin de démystifier la science
car, en effet, c'est complexe
et ça rend perplexe tant de personnes.
Mon intérêt principal
est celui de la chimie,
qui devraient attirer selon moi
les feux de la rampe.
Bon, je suis pleinement conscient
du fait que, bien sûr,

se produire dans le monde.
En effet, la chimie
est le canevas de notre vie,

C'est ce qui ajoute de la couleur
à nos vies.
C'est utile.
Vous fouillez sous votre lavabo,
vous trouvez plein
de produits nettoyants.
Bon, que sont-ils ?
Que des assemblages de produits chimiques.
Ouvrez votre pharmacie.
Ce mélange chimique,
ce sont des médicaments.
Vous regardez la table à manger,
et la nourriture n'est rien d'autre
qu'un mélange très complexe
de centaines et de centaines
de composés différents.
En fait il existe quelque
60 millions de produits
listés dans les ouvrages

buvant ce liquide
pour connaitre ses causes et effets.
Donc pourquoi malgré ces
substances cancérigènes,
le café n'est-il pas cancérigène ?
Évidemment, parce que ces substances
y sont en petites quantités,
et de plus,
certains antioxidants
présents dans le café
annulent les effets
des éléments plus problématiques.
En fait, on vit dans un monde
très complèxe chimiquement.
Et on met ces produits complexes
dans la machine la plus complexe
qui existe sur la terre,
c'est-à-dire le corps humain.
C'est un contenant chimique énorme.
Les gens pensent
que les produits chimiques se trouvent
dans des tubes, des verres Erlenmeyer.
Mais nous ne sommes qu'un gros sac
de produits chimiques.
Des milliers et des milliers
de composés différents.
En fait, ces produits n'ont pas
à être craints ou encensés.
Il faut les comprendre.
Ce ne sont que des choses.
Ils ne sont qu'inanimés.
Ils ne prennent aucune décision.
Nous les prenons.
Je vous donne un exemple.
L'ammoniaque, une petite molécule simple
mais l'une des plus intéressantes
qui existe.
Elle a changé notre histoire.
L'ammoniaque peut être utilisée
comme fertilisant,
développé d'abord par Fritz Haber,
un chimiste allemand.
Cela a produit des avantages énormes
pour le rendement des champs agricoles.
Nous permettant de nourrir
des millions de personnes.
Le monde ne serait pas le même
sans ammoniaque.
Mais je vais ouvrir un panier de crabe.
Ou plutôt, je m'en remet à Jamie Oliver,
qui le fait de lui-même assez bien -

Il fait la promotion des fruits,
des légumes,
j'aime sa théorie.
Son approche est un peu plus discutable.
Il n'y a pas longtemps,
durant son émission télévisée à succès,
il présenta une gouache rose,
qui n'a rien de rose ni d'une peinture.
C'était plutôt
de la viande détachée de l'os
après que tout ait été découpé
suite à un processus mécanique.
En fait elle provient des muscles
mais est traitée ensuite à l'ammoniaque
pour s'assurer qu'il n'y ait plus
de place pour les bactéries.
Bien, il a présenté cette idée,
et il a voulu démontrer l'abominable
nature de l'ammoniaque
telle qu'utilisée dans ce procédé.
Alors il ouvre une armoire,
vers l'arrière
il prend une bouteille d'ammoniaque
décorée d'une tête de mort.
Bon, j'ai passé ma vie en chimie
dans plusieurs laboratoires du monde.
Je n'ai jamais vu de bouteille
d'ammoniaque arborant une tête de mort.
En fait, vous pouvez aller au supermarché
ou à la quincaillerie,
ou chercher sur le web.
Vous ne trouverez aucune bouteille
d'ammoniaque avec une tête de mort.
Alors ce fut fait spécifiquement
pour le spectacle,
pour l'effet dramatique.
Et puis Jamie poursuit avec
cette bouteille d'ammoniaque
et la renverse partout sur la viande.
Ce n'est pas la façon de procéder.
La vapeur d'ammoniaque est utilisée
pour produire cette espèce de gouache.
Au tout début, il n'y a rien de dangereux
avec les vapeurs d'ammoniaque.
L'ammoniaque est utilisée en
production de nourriture.
On l'utilise pour faire des biscuits,
ça les aide à lever.
En fait l'ammoniaque peut aussi
servir à soigner la toux.
Alors en soi c'est pas dangereux.
Bien sûr tous les produits chimiques
peuvent devenir problématiques.
Cela dépend de la manière
de les utiliser, de leur état,
ça dépend, bien sûr,
de la quantité utilisée aussi.
Mais le portrait brossé par Jamie
était assez gros pour effrayer les gens,
pour les faire descendre dans la rue
et arrêter la production de gouache rose.
Bon, je ne veux pas donner l'impression
que je suis adepte de gouache rose.
Pas du tout.
Mais ce n'est pas une substance toxique
tel que ça a été décrit.
Et en plus, c'est sans doute plus maigre
que toutes les viandes qu'on met
dans un hamburger.
Cela permet à l'industrie de la viande
d'utiliser la vache efficacement.
Bon, vous imaginez que les vaches
seraient contentes
de voir cette gouache rose interdite
dans les marchés
vu que c'est la réponse des producteurs
de malbouffe devant cette crise.
Bien non, ce n'est pas vraiment ça :
les vaches ne sont pas du tout contentes
de ce qui se passe,
parce que 1,5 millions
de vaches supplémentaires
vont devoir sacrifer leur vie
chaque année,
pour compenser la perte de viande
qui n'est plus retirée des os.
Donc vous regardez toute cette situation.
C'est si simple de rendre les gens
paranoïaques
avec des détails sans importance
et essentiellement en les trompant
en prenant des segments d'infos
qui ne sont pas complets,
qui ne sont pas entièrement corrects.
Bon, je n'appuie pas la gouache rose,
et même pas la viande.
Je crois qu'en Amérique du Nord
nous mangeons trop de viande.
Il faut diminuer, je crois, la quantité
de viande qu'on ingère.
On n'a pas besoin
de hamburgers gigantesques.
J'ai toujours prôné la consommation
de fruits et légumes.
On a beaucoup de preuves épidémiologiques
montrant que ceux friands
de fruits et légumes sont bien portants.
Alors ce n'est pas la raison qui fait
que j'ai un compte à régler avec Jamie.
C'est parce que il représente mal
la science.
Il n'y a rien de toxique dans le marché
de la gouache rose.
Il est possible de dépeindre presque tout
comme étant dangereux,
même les fruits et légumes.
Prenez une pomme, par exemple.
Ou encore mieux, croquez dans cette pomme.
Vous savez ce que vous mangez ?
Vous mangez plus de
300 composés différents.
Ce sont ni des additifs,
ni des résidus de pesticides.
Ce sont les blocs
constituant cette pomme.
C'est ce dont elle est faite.
Des trucs délicieux.
L'acétone.
La dernière fois
que vous l'avez lu
c'était sans doute un ingrédient
de votre solvant à vernis,
juste en haut de la mention :
« Ne Pas Boire ».

Il y a auss des formaldéhydes
dans cette pomme.
C'est du liquide d'embaumement.
Le produit utilisé pour préserver
les cadavres,
c'est pas ce que les gens veulent
dans leur corps vivant!
Eh bien, voici une pomme
avec de l'acétone.
L'acétone est hautement toxique.
En fait vous pourriez y mettre
une tête de mort.
Alors que se passe-t-il
quand on mange une pomme ?
L'acétone va-t-elle vous empoisonner ?
Bien, ce n'est pas grave, parce qu'elle
contient aussi du formaldéhyde.
Alors si vous mourrez,
c'est une façon économique
de vous pré-embaumer.

D'accord, c'est absurde de faire
cette suggestion
parce qu'on sait déjà,
que la quantité d'acétone et de
formaldéhyde dans la pomme est triviale
si on regarde toutes les vitamines
et les polyphénols qu'elle contient.
Les chiffres parlent.
Il n'y a pas de substance sûre, mais
des moyens sûrs de les utiliser.
Il y a 500 ans,
Paracelse, le grand alchimiste,
philosophe, médecin,
nous a dit : « Sola dosis facit venenum. »
Pour ceux qui ont oublié leur latin
voici la traduction :
« Seule la dose fait le poison ».
Les quantités importent.
Vous savez que l'aspirine
guérit la migraine.
Quelle quantité ?
Prenez un cachet d'aspirine, lèchez-le ;
votre migraine persiste.
Prenez deux cachets, avalez-les ;
votre migraine s'en va.
Prenez toute une bouteille,
avalez-la ;
vous vous en allez.

Seule la dose fait le poison.
Cependant, il est aussi
important de réaliser
que parfois la dose peut-être très petite.
Il faut regarder les chiffres.
Par exemple, le produit dont
vous avez beaucoup entendu parlé
appelé bisphénol A,
on l'a vu en boucle aux nouvelles.
C'est le produit qui peut contaminer
les aliments en conserve
de par la résine époxyde en contact
avec l'aliment,
empêchant la boite d'endommager
la nourriture
et vice-versa.
Bien, des traces de bisphénol A,
de très petites doses, s'échappent.
Et elles se rendent dans notre corps.
En fait on peut les détecter
dans notre urine.
Le problème c'est que ce composé,
le bisphénol A,
est classé disrupteur endocrinien.
Il peut interférer avec les hormones.
Tout ce qui interfère avec les hormones
devrait sonner l'alarme.
Ceci a été étudié abondamment.
On n'a pas de réponse finale.
La science donne rarement
des réponses finales.
Un composé dont la courbe de réponse
à la dose est étrange.
D'habitude la toxicité augmente
proportionnellement avec la dose.
On dirait que dans le cas
des composés hormonaux
ce n'est pas le cas.
Alors même avec de petites concentrations,
on obtient des effets significatifs.
Vous pouvez avoir
un effet bénéfique d'abord.
Puis en diminuant la dose
vous obtenez un effet néfaste.
Vraiment, c'est inhabituel.
Alors le bisphénol A doit
être l'objet de plus d'études
parce que ce concept, appelé hormèse,
est relativement jeune en science.
La toxicologie est un domaine
très complexe.
Mais il y a beaucoup d'autres choses
dans la vie dont il faut se méfier
à part les traces de biphénol A
qui se rendent dans notre corps.
Les gens conduisent sans
porter la ceinture,
ils fument,
ils s'étendent au soleil de midi.
Ceci est de loin bien plus inquiétant
que des traces de bisphénol A.
La vie est pleine de risques.
On ne peut y échapper.
Vous pouvez marcher tranquille dehors
et des trucs terrifiants peuvent arriver.

Ne vous en faites pas, on est gentils.
On fait semblant, Ils vont bien.
Mais ce ne sont pas les créatures
innocentes que vous croyez.
(Rires)
Alors il y a du risque partout.
On vit en présence de risque,
surtout avec les produits chimiques.
Mais la présence de ces produits
n'équivaut pas à la présence de risques.
Ça dépend des quantités.
Aujourd'hui, avec nos techniques
analytiques modernes,
les chromatogrammes,
les spectromètres de masse,
on peut détecter des substances
à l'échelle d'une partie par billion.
C'est une seconde sur 32 000 ans.
Ce n'est pas trouver une aiguille
dans une botte de foin ;
c'est trouver une aiguille dans un monde
rempli de bottes de foins.
Et pendant que vous cherchez
dans cette botte de foin,
vous pouvez trouver des moisissures.
Ce qui produira
de vraies substances toxiques,
même si c'est naturel,
naturel n'est pas toujours sécuritaire,
et synthétique pas toujours dangereux.
C'est l'un des plus grands mythes connus.
Vous ne pouvez vous prononcer
sur la toxicité d'une substance
par son origine.
La seule manière de savoir si un produit
est dangereux ou pas, c'est en l'étudiant,
en regardant sa structure moléculaire,
en l'analysant,
en reproduisant des réactions chimiques,
en l'étudant sur des animaux.
Des études à grandes doses sur les animaux
ne sont pas applicables chez l'humain.
L'humain n'est pas un rat géant,
bien qu'il y ait quelques
exceptions évidentes.

Alors il faut être très prudent
parce que même devant des espèces
apparentées il y a de grandes différences.
La dioxine - dont on parle beaucoup
comme l'une des substances les plus
toxiques connues, ce qui est plausible,
n'est jamais produite à dessein.
C'est toujours un sous-produit
d'un procédé industriel,
mais elle est dans notre environnement
l'une des substances les plus toxiques.
si vous êtes un cochon d'inde.
Mais si vous êtes un hamster,
vous pouvez vous rouler dedans.
Alors ici on a deux espèces très proches,
et pourtant leurs profils de toxicité
est dramatiquement différent.
Et puis on regarde les personnes,
sans pouvoir faire de parallèle
avec les animaux face à la toxicité.
Comment utiliser les animaux pour
prédire ce qui va arriver chez l'humain ?
C'est limite, une bonne supposition
sans faire d'études sur l'humain.
Mais là où on a de sérieux problèmes
c'est de prédire l'effet chez les enfants.
Pourquoi ? Parce que l'enfant
n'est pas un petit adulte.
Leur chimie corporelle
est très différente.
Alors, il faut être extrêmement prudents
lorsqu'on expose les enfants
aux disrupteurs endocriniens.
parce qu'ils ne sont peut-être pas
nocifs chez l'adulte,
mais peut-être qu'ils le sont
chez l'enfant.
Malheureusement,
nous sommes entourés
de risques, on le sait.
On ne peut y échapper.
On peut remplacer
un risque par un autre,
mais si vous êtes imprudents,
la substitution peut devenir
plus dangereuse que le produit remplacé.
Alors, lorqu'on pense à remplacer
le bisphénol A par un nouveau produit,
il est prudent de s'assurer
que ce que l'on introduit dans le marché
est meilleur et plus sûr
que ce que l'on remplace.
Bien sûr, il y aura des opinions
diverses à ce sujet.
C'est ainsi que la science fonctionne.
Les gens lisent la documentation,
ils font des expériences,
ils en viennent à différentes conclusions.
Pas toujours la même conclusion.
Peu importe ce que vous observez,
il y a toujours des opinions variées.
Cependant elles ont rarement
le même poids.
Avec le réchauffement climatique,
les disrupteurs endocriniens,
on a la majorité de la communauté
scientifique d'un bord
avec quelques opposants de l'autre,
mais souvent les opposants
sont beaucoup plus loquaces
et rendent leur cause
beaucoup plus séduisante.
Mais en science, bien sûr, on s'appuie
sur la révision par les pairs ;
on procède par expériences.
On ne choisit pas les données
les plus complaisantes.
Malheureusement, c'est souvent
ce que font les pseudo-scientifiques.
Et ces jours-ci, il y a tellement
de publications
qu'on peut trouver des preuves
pour toute idée qu'on peut avoir.
Cependant lorsqu'on pratique
la méthodologie scientifique,
on n'est pas complaisants,
on brasse tout le pommier
jusqu'à ce que tous les fruits tombent,
ensuite on les mélange,
on les met en purée,
et ensuite on goûte aux preuves.
Et avec un peu de chance,
on évite la déconfiture.

Voilà ce que représente
la méthode scientifique :
peser les risques face aux bénéfices.
Mais pour ce faire,
on a besoin d'une fondation.
Il nous faut une compréhension
de base de la science.
Voilà pourquoi je fait la promotion
de l'éducation des très jeunes.
Il faut améliorer l'enseignement
des sciences à l'école primaire.
C'est aussi important
d'être lettré scientifiquement
que d'être lettré dans d'autres domaines.
Et il faut poursuivre
cette culture scientifique
peu importe les difficultés.
Il faut s'assurer
de faire face éventuellement
à un public lettré scientifiquement.
Parce que toutes les décisions
technologiques que l'on prend
s'appuient sur une forme
de compréhension de la chimie.
Ce n'est pas qu'il faut parader
notre appui envers la chimie.
Ce n'est pas le but du tout.
Ce qu'il faut faire c'est de trouver
des évaluations rationnelles,
s'assurer que les gens comprennent
que les composés ne sont pas
des substances à mettre sous clé.
Ni à mettre sur un autel.
Elles doivent être comprises, et utilisées
à bon escient, intelligemment.
C'est ce qu'on fait maintenant
sous le chapeau de la chimie verte.
On a un grand piedestal d'information
sur laquelle on peut construire.
On connait le profil
de toxicité des produits.
On sait ce qu'il faut choisir
comme ingrédient de base.
On sait comment rendre les réactions
de plus en plus efficaces.
La chimie évolue tout le temps.
On devient meilleurs dans nos prévisions
face à ce qui va se produire
lorsqu'on s'y intéresse,
pour moi c'est un engagement magique.
Mon point de vue
n'est pas toujours partagé.
Il y a ceux qui croient que les chimistes
sont différents des autres espèces.
Mais j'espère
avoir pu vous démontrer
que ce n'est pas le cas,
qu'on a un peu d'humanité.
On regarde le monde à travers
des molécules
et ce qu'elles peuvent
et ne peuvent pas faire.
On ne peut répondre
à toutes les questions.
Non, c'est sûr.
On a nos limites.
Le monde est très complexe.
Ces 60 millions de composés
se mêlent dans toutes sortes de réactions.
Et il est bien possible
qu'il y ait des questions
pour lesquelles on aura jamais la réponse.
Mais on essaie.

听到的化学物质
叫做双酚A,
新闻里非常常见。
它常见于罐装食品
会从内层涂料的环氧树脂中渗出,
能防止罐身的金属物质渗进食物,
反之亦然。
那么,一点点的双酚A,
剂量再小,也会渗出。
最终进入我们体内。
实际上,在我们的尿液中
可以检测到双酚A。
问题是,这种化学物质,
双酚A,
被视为一种内分泌干扰素。
会干扰我们的荷尔蒙。
而任何干扰荷尔蒙的物质,
都需要警惕。
因此,人们对双酚A进行了广泛的研究。

反而变成了有害的。

因此,对双酚A,还有待进一步探究。
因为这种概念,
我们称之为毒物兴奋效应,
在科学领域还比较新。
毒理学是非常复杂的一门学问。
但生活中,还有很多很多其他的东西
比人体摄入的微量双酚A更令人担心。
开车不系安全带、
吸烟、
中午在太阳下躺着暴晒,
这些远比微量双酚A更令人担忧。
生活处处有风险。
我们无法摆脱。
可能你只是正常散个步,
可怕的事情就发生了。

哦,别担心,我们是好人,
这图是假的,小鸭子们没事。
但这群小生物,
也并不像你以为的那么无辜。
(笑声)
所以,风险无处不在。
我们生活中存在着风险,
尤其当我们和化学物质共处时。
但化学物质的存在,
并不等于存风险的存在。
它取决于数量。
今天,借助现代分析技术,
我们的气象色谱、我们的质谱仪,
我们可以探测到
万亿分之一的水平的物质。
相当于3.2万年中的一秒那么小。
这不是在草垛里捞针,
这是在一个全是草垛的世界里捞针。
而且,当你在草垛里翻来找去时,
你可能还会遇到一些霉菌,
这些霉菌会产生一些剧毒物质,
即使它们是天然的,
因为,天然并不等于安全,
合成也并不等于危险。
这是最大的迷思之一。
从天然还是合成的,你完全看不出
一个物质的潜在毒性。
想知道一个东西是否危险,
唯一的判定方法就是去研究它。
研究它的分子结构,
分析它,

在动物身上做实验,
但在动物身上的高剂量研究,

二噁英,被人们广为讨论
认为是已知的对人类毒性最大的物质,
可能是这样。
二噁英绝非有意制造。

但我们生活的环境里,也存在二噁英。

那么它确实是毒性最大的物质。
但如果你是只仓鼠,
你可以毫发无伤,尽情玩耍。

会通过实验来验证。
我们不能挑数据。
但不幸的是,伪科学家经常这么做。

基本上你可能有的任何想法
都可以找到佐证。

你不能像挑樱桃一样挑选数据。

我们要去理解它们,并善加利用。

试图去做的事情。
如今,我们拥有庞大的信息库,
我们知道化学物质的毒性特征,
我们知道该选择什么样的原材料,
我们知道怎样更有效地进行化学反应,
化学一直在进化,
当我们从事化学这项事业,

我们的预测也做得越来越好。
并不是每个人都同意我的观点。
有人认为化学家是个
完全不一样的物种。
但是,我希望,

我们也有人性。
